1 onion (chopped)
3 cloves garlic (minced)
3 cups chunky pasta sauce
1 cup mozzarella cheese (shredded)
12 ounces fettuccine pasta or any other type of pasta, cooked and drained

Steps:

  • Gather the ingredients.
  • Trim any excess fat from pork chops and sprinkle with salt and pepper.
  • Cook chops in olive oil in a heavy skillet over medium heat until browned, about 3 to 4 minutes, turning once during cooking.
  • Place the browned chops in a 3 1/2 to 4-quart slow cooker.
  • Add the onions and garlic to the drippings remaining in the pan; cook for 5 minutes, scraping up brown bits, then add to slow cooker .
  • Top everything with the pasta sauce.
  • Cover the crockpot and cook on low for 7 to 9 hours until pork is tender and thoroughly cooked.
  • Remove the pork from the slow cooker and set aside.
  • Stir the cooked and drained pasta into the sauce in the slow cooker.
  • Place the fettuccine and the sauce on a serving platter; top with the chops, then sprinkle with the cheese just before serving.

6 lean pork chops (1-inch thick)
1 1/2 tablespoons olive oil
1/2 cup all-purpose flour
1 tablespoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup parmesan cheese
3/4 lb button mushroom, sliced
1 medium yellow onion, chopped
4 fresh garlic cloves, minced
2 (8 ounce) cans tomato sauce
1 (20 ounce) can whole tomatoes, drained
1/2 cup dry red wine or 1/2 cup dry sherry
2 tablespoons lemon juice (fresh squeezed preferred)
1/2 teaspoon kosher salt
1 tablespoon dried parsley flakes (rub between fingers to waken flavor)
1 teaspoon dried oregano (rub between fingers to waken flavor)

Steps:

  • Wash chops and pat dry with paper towels. Trim excess fat from meat.
  • In a large skillet, heat the olive oil.
  • Coat the pork chops in a mixture of flour, salt, garlic and onion powders, and Parmesan cheese. Lightly brown on both sides in the heated oil (YOUR PORKCHOPS SHOULD NOT BE COMPLETELY COOKED); drain chops on paper towels.
  • Place the mushrooms, onion, and garlic in the bottom of your crock-pot; add the chops by laying them on top.
  • In a large mixing bowl, combine the tomato sauce, whole tomatoes, wine or sherry, lemon juice, salt and spices (except the bay leaves). Give a good stir.
  • Pour the tomato sauce mixture over the pork chops. Add bay leaves to crock-pot. Cover and cook on LOW for 7 - 9 hours (HIGH: 4 to 5 hours).
  • 30 minutes before the cooking time is up, turn crock-pot to HIGH and arrange the green and yellow pepper rings on top of the pork chops. Cover and continue cooking for the last 30 minutes.
  • Just before serving, top with mozzarella cheese. Serve with your favorite hot cooked pasta and a freshly tossed garden salad. Don't forget the warm and crusty Italian bread to dip into the delicious tomato sauce.

1/2 teaspoon pepper

4 slices bacon, cut into 1/2-inch pieces
1 large yellow onion, cut into 1/2-inch thick slices
2 cloves garlic, finely chopped
1 1/2 cups Progresso™ chicken broth (from 32-oz carton)
2 teaspoons Worcestershire sauce
2 bay leaves
2 tablespoons cornstarch
2 tablespoons water
1 tablespoon cider vinegar

Steps:

  • Spray 4-quart slow cooker with cooking spray. Pat pork chops dry with paper towels; season both sides with pepper and salt.
  • Heat 12-inch nonstick skillet over medium heat. Add bacon; cook and stir 6 to 8 minutes or until browned. Using slotted spoon, transfer bacon to slow cooker. Pour off all but 1 tablespoon of bacon fat; reserving remaining fat for another use, or discard. Increase heat to medium-high; add pork chops to bacon drippings in skillet. Cook 3 to 5 minutes on each side or until browned. Transfer to slow cooker and stand pork chops up against sides of slow cooker, bone side down.

  • In small bowl, beat cornstarch, vinegar and water with whisk. Stir into liquid in slow cooker. Cover; cook 15 to 20 minutes, or until slightly thickened.
  • Ladle sauce over pork chops; serve immediately.
