TIA'S ROASTED MARINARA SAUCE
Homemade tomato sauce made easy. The robust Italian flavor comes from aromatic herbs and spices like garlic powder, parsley, and basil. If desired, serve over zoodles with Tia's Turkey Meatballs and Non-Dairy 'Parmesan Cheese.'

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- Place tomatoes, onion, olive oil, parsley, basil, salt, garlic powder, and pepper in a 4-quart Dutch oven; stir to combine.
- Bake in the preheated oven, uncovered, stirring occasionally, until sauce is thick and bubbling, about 1 hour. Serve immediately.

- 1. Preheat oven to 250°. 2. Combine first 5 ingredients in a large bowl, tossing gently to coat. Arrange tomato halves, cut sides up, on a jelly-roll pan coated with cooking spray. Bake tomatoes at 250° for 7 hours. Remove pan from oven. Add 1/3 cup water to pan, scraping pan to loosen browned bits. Place a food mill over a large bowl; spoon tomato mixture into food mill. Press mixture through food mill; keep warm. 3. Heat oil in a saucepan over medium-high heat. Add onion and next 3 ingredients (through garlic); sauté 5 minutes or until tender. Add wine; cook 3 minutes or until liquid nearly evaporates. Stir in tomato mixture and 2/3 cup water; bring to a boil. Cover, reduce heat, and simmer 15 minutes, stirring occasionally. Remove from heat; stir in salt and pepper.

- Preheat oven to 425 F.Cut roma tomatoes in half lengthwise (no need to remove the stem bit). Place in a large roasting pan (mine is 11x16-inches and a couple of inches deep.) Scatter garlic over-top. Drizzle with olive oil and balsamic vinegar. Sprinkle with oregano, basil, salt and pepper. Toss with a large spoon to coat.
- Place in preheated oven for 60-70 minutes, stirring well half way through cooking. The mixture shouldn't dry out completely and some of the tomato skins will char slightly. Stirring well half way through ensures that nothing gets too dark. Allow to cool.
- Remove tomatoes from pan (if there is a lot of liquid in the pan, use a slotted spoon to remove, leaving most of the liquid behind). Blend in a food processor or use immersion blender to create a sauce with your desired chunkiness level. If I'm making a large batch, I tend to do a few smooth and leave a few chunkier.

- Preheat the oven to 375 degrees. Wash, core and quarter the tomatoes. Use your thumb to remove the goop from the inside the tomato.
