Grandma's Slow Cooker Swiss Steak image

My mom used to make this for me growing up, and I found out it was passed down to her from her mother. A delicious comfort food especially in the winter months that is quick and easy. Best served over mashed potatoes!

SLOW-COOKER STUFFED PORK ROAST

Slow-Cooker Stuffed Pork Roast image

Delicious pork roast recipe with vegetables - made stress-free for dinner in a slow cooker.

Provided by By Betty Crocker Kitchens

Categories     Entree

Time 6h30m

Yield 6

Number Of Ingredients 8

2- to 2 1/2-pound pork boneless loin roast
2 tablespoons olive or vegetable oil
3 cloves garlic, finely chopped
1 package (6 ounces) fresh baby portabella mushrooms, chopped
1 package (9 ounces) frozen chopped spinach, thawed and squeezed to drain
1/2 cup soft bread crumbs (1 slice bread)
1/3 cup grated Parmesan cheese
1/2 teaspoon salt

Steps:

  • To cut pork roast so that it can be filled and rolled, cut horizontally down length of pork about 1/2 inch from top of pork to within 3/4 inch of opposite side; open flat. Turn pork so you can cut other side. Repeat with other side of pork, cutting from the inside edge to the outer edge; open flat. If pork is thicker than 3/4 inch, cover pork with plastic wrap and pound until about 3/4-inch thickness. Remove plastic wrap.
  • Heat 1 tablespoon of the oil in 12-inch nonstick skillet over medium-high heat. Cook garlic and mushrooms in oil, stirring frequently, until liquid has evaporated. Stir in spinach, bread crumbs and cheese.
  • Spread mushroom mixture on inside surfaces of pork. Roll up pork; tie with kitchen twine. Heat remaining 1 tablespoon oil in 12-inch nonstick skillet over medium-high heat. Cook pork in oil until brown on all sides. Place pork in 3 1/2- to 4-quart slow cooker. Sprinkle with salt.
  • Cover and cook on low heat setting 6 to 7 hours or until pork is tender.

WILD MUSHROOM-STUFFED PORK ROAST

Wild Mushroom-Stuffed Pork Roast image

Just watch your family come running when you pull this juicy pork loin roast, bursting with savory wild mushroom stuffing, from the oven. It slices into pretty medallions, making it impressive for guests too.

Provided by By Betty Crocker Kitchens

Categories     Entree

Time 1h30m

Yield 8

Number Of Ingredients 10

1 package (1 oz) dried porcini mushrooms
1 boneless pork loin roast (3 lb)
1 tablespoon butter or margarine
1 medium onion, finely chopped (1/2 cup)
1 package (8 oz) fresh baby portabella mushrooms, finely chopped
1/2 cup herb-seasoned stuffing crumbs (do not use stuffing cubes)
2 tablespoons olive or vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
Fresh sage leaves, if desired

Steps:

  • Heat oven to 375°F. In small bowl, place dried porcini mushrooms. Cover mushrooms with hot water; let stand 10 minutes.
  • Meanwhile, cut pork roast horizontally to 1/2 inch from one long side without cutting all the way through (pork will open like a book); set aside. In 10-inch skillet, melt butter over medium-high heat. Add onion; cook and stir about 1 minute or until tender.
  • Drain porcini mushrooms well; chop. Add porcini and portabella mushrooms to butter in skillet; cook about 4 minutes, stirring occasionally, until mushrooms are tender. Stir in stuffing crumbs.
  • Spoon mushroom mixture into opening in pork; close pork over stuffing and secure with string. Place stuffed pork in shallow roasting pan. Brush with oil; sprinkle with salt and pepper. Insert ovenproof meat thermometer so tip is in center of thickest part of pork.
  • Roast uncovered 45 to 55 minutes or until thermometer reads 150°F. Remove pork from pan; cover with foil and let stand 10 minutes until thermometer reads 160°F. Remove strings from pork before carving. Garnish with sage.

SWISS MUSHROOM BURGERS

Swiss Mushroom Burgers image

Recipe video above. Big, juicy Swiss Mushrooms Burgers are a mighty vegetarian burger that at first glance, looks like a beef burger! Large mushrooms are roasted with garlic butter, topped with Swiss cheese then stuffed into fully loaded soft rolls.Only got small mushrooms? No worries, read the recipe notes!Desperate for meat? Add a meat burger pattie (beef, chicken mince/ground, or chicken breast/thigh), or even bacon and egg!Fully loaded veggie burger - add a vegetarian burger pattie (one of my signature recipes!).

Provided by Nagi

Categories     Mains     Side

Time 50m

Number Of Ingredients 17

4+ BIG mushrooms - like portobello, BBQ flat mushrooms ((20% larger than buns, or buy multiple per burger) (Note 1))
30g / 2 tbsp unsalted butter
2 garlic cloves (, finely minced)
1/2 tsp each salt and pepper
1/2 tbsp olive oil
4 slices swiss cheese ((or any other cheese slice of choice))
3 onions (, cut into 0.7cm / 1/3" rings)
1 tbsp olive oil
1/4 tsp each salt and pepper
2/3 cup mayonnaise (or sour cream + pinch of salt)
2 tbsp ketchup
1 - 3 tsp Sriracha ((adjust spiciness to taste))
4 buns or rolls ((I like brioche))
8 - 12 lettuce leaves
2 tomatoes
French fries
Baked potato wedges

Steps:

  • Preheat oven to 220°C/450°F (200°F fan).
  • Garlic butter: Place butter, garlic, salt and pepper in a heatproof jug. Microwave to melt butter, then stir.
  • Brush with butter: Brush the mushroom cap with butter (smooth side), then place on a tray gills side up (ie stalk facing up). Brush remaining butter onto the rims and gills, being sure to scrape up all the garlic in the jug.
  • Olive oil: Drizzle with olive oil.
  • Roast 25 minutes, then flip mushrooms. Brush with tay juices, roast a further 10 minutes or until the centre of the mushrooms are tender. {Meanwhile, cook onion, mix Sauce)
  • Top with cheese: Place a slice of cheese on each mushroom, return to oven for 3 minutes just to melt the cheese.
  • Toast buns: Place split buns in the oven at the same time - to lightly toast.

SLOW-ROASTED STUFFED SWISS BROWN MUSHROOMS

Slow-Roasted Stuffed Swiss Brown Mushrooms image

I love mushrooms: could eat them every day! And love this recipe, adapted from one by Nino Zoccali, that I found in the September 2009 issue of the 'BBC Australian Good Food' magazine. Nino comments that he never peels the skins from mushroom caps "unless they are damaged or stained and (that) unlike many chefs (that he likes) to use the mushroom stems - as long as they're tender." Ah, great, I thought, before trying this recipe! Perhaps it's uncool, but I only peel mushrooms if the recipe persuades me of the need to do this, and I generally use the stems. As Nino says "I think they taste great." Some conversions: 15 grams = 1/2 ounce; 60 grams = 2 ounces; 80 grams = aproximately 3 ounces.

Time 40m

Yield 8 slow-roasted stuffed swiss brown mushrooms, 4 serving(s)

Number Of Ingredients 12

8 medium swiss brown mushrooms
2 tablespoons extra virgin olive oil
1 small brown onions (for Australians) or 1 small yellow onion, finely chopped (for Americans)
1 -3 garlic clove, minced, depending on how much you like garlic
dried sage, a sprinkling, to taste (optional)
dried rosemary, a sprinkling, to taste (optional)
1/4 cup coarse wholemeal breadcrumbs (15 grams)
1/2 cup walnuts, coarsely chopped (60 grams)
1 cup pecorino cheese, grated (80 grams)
sea salt, to taste
fresh ground black pepper, to taste
1 sprig thyme, leaves only

Steps:

  • Preheat oven to 180°C/160°C fan/350°-375°F/4-5 gas mark.
  • Remove stems from mushrooms and finely dice the stems; heat the oil in a large pan over a medium heat; cook the diced stems and onion and roseemary and sage if using for 4 minutes, until softened, add the minced garlic and cook for another minute; transfer to a medium bowl to cool.
  • Stir in the breadcrumbs, walnuts and half of the pecorino; season with salt and pepper, to taste; spoon the onion/breadcrumb mixture into the mushroom caps.
  • Fit the mushroom caps into a baking pan and scatter with the remaining pecorino; bake for 25 minutes or until golden; scatter with the thyme sprigs and serve.

SWISS CHARD AND RICOTTA STUFFED ROASTED PEPPERS

Swiss Chard and Ricotta Stuffed Roasted Peppers image

Provided by Food Network

Categories     main-dish

Time 1h35m

Yield 4 servings

Number Of Ingredients 15

4 large red bell peppers
Kosher salt
Freshly ground black pepper
Vegetable oil, for rubbing the peppers
3 tablespoons unsalted butter, plus more for the baking dish
4 cups diced eggplant
2 cups sliced onion
1 pound fresh Swiss chard, cleaned and roughly chopped
1 cup ricotta cheese
1/2 cup dry bread crumbs
1/2 pound fresh basil, leaves picked
1/2 cup pine nuts, toasted
1/4 cup grated Parmesan
3 garlic cloves
1/2 cup extra-virgin olive oil

Steps:

  • Preheat the oven to 350 degrees F.
  • Cut out the stems from peppers and discard. Remove the seeds and clean out the white ribs. Season them inside with salt and pepper. Rub the outsides of the peppers with vegetable oil and place them, stem side down, onto a baking sheet. Bake them for 30 minutes, or until the skins are wrinkled and slightly charred. Remove the peppers from the oven and put them into a large bowl. Cover the bowl with plastic wrap and let them steam until they are cool enough to handle, about 10 minutes. Peel the skin from the peppers, making sure to keep them whole, and set aside.
  • While the peppers are baking and steaming, make the pesto: Bring a large pot of water to a boil. Have a bowl of ice water ready. When the water is boiling, add the basil leaves. After 5 seconds (yes, 5 seconds) remove the basil and immediately put it into the ice water. (This will keep the pesto green.) When it is cold, drain the basil and squeeze out any excess water. Put the basil into a food processor or blender and add the pine nuts, cheese, and garlic. Turn on the processor and slowly add the olive oil until the mixture is smooth. Refrigerate until ready to use.
  • In a large skillet over high heat, melt 2 tablespoons of the butter. Cook the eggplant until beginning to soften, about 5 minutes. Add the onions and cook until softened and lightly browned, about 10 minutes more. Transfer them to a cutting board, let them cool a bit, and chop them finely with a knife. Add 1 tablespoon butter to the same pan over medium-high heat. When it is melted, add the Swiss chard, cover the pan, and let the chard wilt for about 1 minute. Transfer the chard to a bowl. Add the vegetables, ricotta, 1 tablespoon of the pesto, and season with salt and pepper. Mix well, taste, and adjust the seasoning. Stuff this mixture into the peppers, being careful to keep them whole. Place them on their sides into a lightly buttered baking dish. Sprinkle each pepper evenly with bread crumbs and bake until the tops are golden brown, about 10 minutes. Serve immediately garnished with extra pesto.
