Pork Ragu is a hearty sauce that is a great sauce on pasta, mashed potatoes, zoodles, or mashed cauliflower. Instructions included for Instant Pot, Slow Cooker, Oven, Stovetop. A great make ahead freezer. Great for a family dinner or when guests are coming for dinner.

2 1/2 pounds boneless country ribs, cut into 2-3 inch chunks (See Note 1)
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1-2 Tablespoons olive oil
2 medium carrots, peeled and diced
2 celery stalks, diced
1 large onion, peeled and diced
4 cloves garlic, peeled and minced
1 cup red wine
28 ounce can crushed tomatoes
28 ounce can, diced tomatoes drain excess liquid
4 ounces tomato paste
4 ounces water
1 bay leaf
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried fennel
salt and pepper, to taste
1/4 cup chopped fresh parsley, garnish (optional)
fresh Parmesan Reggiano Cheese, garnish (optional, Note 3)

Steps:

  • Season country pork ribs with garlic powder, onion powder, and black pepper. Set aside.
  • Turn the Instant Pot to Saute, 15 minutes. Add 1 Tablespoon olive oil. Add in the seasoned pork and sear until brown on all sides. Set aside pork.
  • If needed, add the second Tablespoon of olive oil to the Instant Pot. Add in the carrots, celery, and onions. Saute till veggies get soft, around 3 minutes. Add in the minced garlic, stir for a minute.
  • Add in the red wine, use a wooden spoon to bring up any brown bits at the bottom of the pot. (Note 2). Let saute about 3 minutes.
  • Stir in crushed tomatoes, diced tomatoes, tomato paste, water, bay leaf, oregano, basil, and fennel. Add in a dash of salt and pepper. Cancel saute on the instant pot. Add in the brown pork pieces.
  • Place lid on Instant Pot, lock it and close the vent. Press "Pressure Cook" high pressure and put the time to 40 minutes. Once cooking complete, naturally release the pressure for about 5 minutes. Then turn valve to auto release remaining steam.
  • Once complete, remove the lid, discard the bay leaf. Shred the pork, check seasoning, reseason if needed.
  • Serve with pappardelle or your favorite pasta. If a low-carb alternative is needed, see note 4.

1 tablespoon olive oil
4 ounces pancetta, diced
1 tablespoon unsalted butter
12 ounces shiitake mushrooms, woody stems removed and discarded, caps sliced
1 small onion, diced
1 small carrot, diced
1 celery rib, diced
1 tablespoon fresh thyme leaves
Kosher salt and freshly ground pepper
1 large tomato, diced
8 ounces ground veal
8 ounces ground pork
2 tablespoons tomato paste
1/2 cup white wine
1 (28-ounce) can San Marzano whole tomatoes
1 pound dried pappardelle pasta
1/2 cup heavy cream
3 tablespoons thinly sliced basil leaves

Steps:

  • 1. In a large pot, heat the oil over medium-high heat. Add the pancetta and cook, stirring, until lightly browned, about 2 minutes. Lower the heat to medium and add the butter. Stir in the mushrooms, onions, carrots, celery, thyme, and salt and pepper to taste. Cook, stirring occasionally, until the vegetables are softened, about 10 minutes. Add the diced tomato and cook until soft, about 5 minutes more.
  • 2. Increase the heat to medium-high and add the veal and pork. Cook, breaking up the meat with a spoon, until it is no longer pink. Add the tomato paste and cook, stirring, 2 to 3 minutes. Add the wine and cook until the wine is reduced by half. Add the canned tomatoes, reduce the heat to medium, and simmer, uncovered, 40 minutes; stir occasionally and adjust the heat if necessary so the sauce simmers gently.
  • 3. When ready to serve, cook the pasta according to package directions. Drain. Meanwhile, stir the cream into the sauce, lower the heat, and cook 5 minutes more. Season the sauce with salt and pepper. Add the pasta to the sauce and mix well. Serve garnished with basil.

Salt and freshly ground black pepper
3 tablespoons olive oil, plus more for drizzling
2 cloves garlic, chopped
1 white onion, finely chopped
2 teaspoons tomato paste
1 teaspoon crushed red chile flakes
2 cups chicken stock
2 cups shredded Simple Roasted Pork Shoulder, recipe follows
1 pound dried pappardelle pasta
Freshly grated Parmesan, for garnish
Chopped fresh parsley, for garnish
Red chile flakes, for garnish
3 tablespoons olive oil
3 tablespoons chopped garlic
Salt and freshly ground black pepper
1 (4 pound) pork shoulder

Steps:

  • Bring a large pot of salted water to a boil.
  • Heat 3 tablespoons oil in a large saute pan over medium-high heat. Add the garlic and onions and cook about 5 minutes. Stir in the tomato paste and red chile flakes. After a minute or so, add the chicken stock and pork and season with salt and pepper. Reduce the heat to low, cover and cook an additional 10 minutes.
  • When you are ready to serve, drop the pasta into the boiling water and cook 6 to 8 minutes. Remove the pasta and place directly into the sauce. Cook, tossing the pasta with the sauce, another 2 minutes, and then turn off the heat.
  • Place the pasta into warmed bowls, spooning extra sauce over the top of each portion. Garnish with Parmesan, parsley and chile flakes. Drizzle with olive oil, if desired.
  • Preheat the oven to 425 degrees F.
  • In a small bowl, mix the olive oil, garlic, salt, and pepper. Using a pastry brush, spread the mixture all over the pork shoulder.
  • Set the meat on a rack set into a roasting pan. Roast for 20 minutes, and then reduce the heat to 325 degrees F. Continue to cook until an instant-read thermometer inserted into the shoulder reads 185 degrees F, about 4 hours. Remove the pork from the oven and let stand until cool enough to handle, about 30 minutes.

2 medium yellow onions
1.5 lb pork shoulder, trimmed and cut into 1" cubes
1/2 lb ground veal
5 cloves garlic, finely minced
2 tsp red pepper flakes
2 bay leaves
1 Tbsp dried oregano
1 Tbsp dried basil
1 tsp dried sage
1 2" cinnamon stick
3 whole cloves
3 sun dried tomatoes, cut into small pieces
1 1/2 tsp salt
fresh ground pepper to taste
1 large 28-oz can crushed tomatoes with juice
2-3 cups good red wine (such as a zinfandel, syrah, merlot or cabernet)

Steps:

  • in a large dutch oven, heat some olive oil over medium high heat until hot. Add the onions and saute until translucent, about 5-6 minutes. Pushing the onions to the sides of the pan, put the pork pieces in a single layer in the center, and brown on all sides. Moving the browned pieces to the sides, continue with remaining pork until all is browned. Do the same with the ground veal, breaking up into small pieces as it browns. Mix all together, then add garlic, red pepper flakes, bay leaves, oregano, basil, sage, cinnamon stick, cloves, sun dried tomatoes and salt & pepper. Mix well and allow to cook until spices become fragrant, about 2-3 minutes. Add tomatoes with their juice, and a cup of the red wine. Mix well, and cover with the lid slightly ajar. Reduce heat to low and simmer for at least two hours, adding more wine as needed to keep the mixture moist (consistency should be quite thick like a chili or stew). You may use the entire bottle if you cook the mixture for 4 hours or more. Cook 1 lb pappardelle noodles as directed on the package, and serve ragu over the noodles.

Slice pork neck into large pieces and season well with salt. Heat the olive oil in a large ovenproof pot over medium-high heat. Fry in batches until well-browned on both sides, approx. 10 min. Remove from the meat from the pan and set aside.
  • Add diced onions, carrots, and celery stalks to the pot and sauté gently on medium-low heat for approx. 10 min. Add the garlic and cook a further 2 min. Then add the tomato paste.
  • Return the fried pork to the pot and add the red wine, let it simmer and reduce, approx. 2 min. Add the crushed tomatoes, chicken stock, herb and lemon bouquet garni, bay leaf, and freshly grated nutmeg. Season with salt and pepper, cover and cook gently for approx. 1 hr. Add the milk and cook a further approx. 30 min., or until the pork is very tender.
  • Gently pull the pork apart using two forks. Cook pasta in a large pot with salted boiling water according to packet instructions until al dente. Drain and add to the ragu, tossing everything together until well combined. Serve with freshly grated Parmesan and pair with a glass of red wine. Enjoy!

  • Season the veal with salt and pepper and dust with flour, tapping off the excess. In a large enameled cast-iron casserole, heat 1/4 cup of the olive oil. Add the veal and cook over moderately high heat until browned all over, about 12 minutes. Transfer the veal to a plate.
  • Add the remaining 1/4 cup of oil to the casserole. Stir in the onion, garlic, coriander and fennel and cook over low heat for 5 minutes. Add the wine and boil until reduced to 1/3 cup, 5 minutes. Add the tomatoes and cook over moderately high heat for 5 minutes. Add the stock and rosemary and bring to a boil. Add the veal, cover partially and cook over low heat until very tender, 2 hours.
  • Remove the meat and shred it. Boil the sauce until slightly reduced, about 10 minutes. Stir in the meat.
  • In a large pot of boiling salted water, cook the pappardelle until al dente. Drain and return to the pot. Add the ragù and toss over low heat until the pasta is coated. Serve with cheese at the table.
