2 medium onions (white, diced)
2 tablespoon rosemary (fresh, chopped)
¼ cup parsley (fresh, chopped)
3 cloves garlic (minced)
1 teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
½ cup olive oil
½ cup white vinegar
5 pound leg of lamb (boneless)
4 cloves garlic (cut in long strips)
2 medium onions (quartered)
3 cloves garlic (smashed)
1 cup chicken broth (low sodium or no sodium added)
¼ cup olive oil
1 cup water
1 tablespoon tomato paste
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Prepare the marinade by combining all of the marinade ingredients in a large ziploc bag.
  • Poke holes in the leg of lamb and insert a piece of the garlic that's cut into long strips, in each hole. This step is optional, but it gives the lamb a more garlicky flavor.
  • Place the leg of lamb in the ziploc bag, close it and toss it around so that the marinade goes all around the leg. Place the ziploc bag in the fridge and let it marinade overnight. I would recommend at least 12 hours to 2 or 3 days.
  • The next day, preheat your oven to 350 F degrees.
  • Place the quartered onions and smashed garlic in a large metal roasting pan then place the leg of lamb on top of the onions, fat side up. Discard the rest of the marinade. Add the chicken broth to the pan, the olive oil, drizzling some over the lamb, and the water.
  • Cover the pan with aluminum foil and place the roasting pan in the oven. Roast the leg of lamb covered for 4 hours. Remove the aluminum foil from the pan and using a ladle, spoon some of the pan juices over the lamb. Place the pan (uncovered) back in the oven and roast for an additional hour or until well browned.
  • Remove the lamb from the pan onto a platter.
  • Skim some of the fat from the pan drippings using a large spoon.
  • Place the pan on the stove over medium-high heat. Add the tomato paste when the liquid starts to bubble. In a little bowl whisk together the cornstarch with the water, then add it to the pan. Whisk everything together. There should be at least a couple cups of liquid in the pan, but if most of your liquid has evaporated, add more chicken broth or water. I only added 1 tbsp of cornstarch because I wanted a thinner gravy, but feel free to add more until you reach the desired consistency. Cook for a few minutes, until the gravy thickens a bit.
  • Strain all the liquid into a bowl, then press all the liquid out of the onion and garlic using a spatula, for additional flavor.
  • To serve, use two forks or tongs to tear or shred the meat and serve with the gravy over mashed potatoes or with roasted vegetables.

1 large leg of lamb, about 3kg/6lb 8oz
4 onions, sliced
8 garlic cloves, peeled, but left whole
4 carrots, leave whole if small or quarter lengthways
300ml white wine
300ml stock, use what you have
2 tbsp Armagnac or Madeira, optional, to finish
thyme sprigs, to finish

Steps:

  • Heat oven to 120C/fan 100C/gas ½. Put your largest lidded casserole on the hob and brown the seasoned leg of lamb on all sides - do this very thoroughly until it is a good dark brown as it will not brown during the cooking. (If you don't do it now, it will end up beige.) If the lamb sticks, add a drizzle of oil - legs of lamb differ. Allow 10 mins on a high heat and put on the cooker fan to remove the smoke. Pour away any fat that has collected in the bottom of the pan.
  • Throw in the vegetables, followed by the wine and stock. Season and bring to the boil, then clap on the lid and put in the oven. Bake for 7 hrs, turning twice. After 5 hrs the meat will be cooked and offer no resistance to the knife.
  • There is no need to rest the meat when cooked in this way, but to finish the sauce, transfer the meat and vegetables to a serving dish. Strain the sauce into a jug and pour or blot away the fat with kitchen paper. Pour the sauce into a pan then boil the liquid hard to reduce by a quarter, by which time it will be rich and flavoursome. Adjust seasoning, add the Armagnac if you wish, and serve alongside the lamb, which should be served with a spoon, a la cuillère as the French call it.

In my books, there are only 2 ways to roast a leg of lamb - with a hint of pink so it's juicy (30 minutes per kg/2lb) or cooked loooooong and slow until tender. Anything in between = dry, tough meat. This recipe is the Greek way of roasting lamb - slow roasted until tender, braised in a lemon garlic thyme broth that reduces down to a sauce. The sauce is completely different to the thick gravy you are probably used to. This sauce is not thickened with flour, it is lemony, herby and garlicky so it cuts through the richness of the lamb. This is easier and far more foolproof than traditional roast leg of lamb because you don't need to worry about overcooking it.

12 cloves of garlic, peeled
7 lb / 3.5 kg leg of lamb (Note 1)
Salt and pepper
3 tsp paprika powder
3 tsp garlic powder (or sub with onion powder)
2 tbsp olive oil
2 large onions, quartered (white, brown, yellow, red)
10 sprigs of thyme
3 sprigs rosemary
3 tsp dried oregano
3 dried bayleaves (or 5 fresh)
1/2 cup / 125 ml lemon juice (2 - 3 lemons), plus more to taste
1 1/2 cups / 375 ml white wine (or sub with chicken broth/stock, low salt)
2 cups / 500 ml chicken broth (liquid chicken stock)

Steps:

  • Preheat oven to 240°C/465°F (220°C fan). (Note 2)
  • Use a small knife to make around 25 incisions all over the lamb, with most on the top.
  • Cut around 6 cloves into slivers and stuff them into the incisions.
  • Sprinkle the lamb generously all over with salt, pepper, paprika and garlic powder. Drizzle with olive oil and rub all over the lamb.
  • Place the lamb in a roasting pan and roast for 30 minutes or until it has a nice brown crust.
  • Remove from the oven. Turn the oven down to 180°C/350°F (160°C fan).
  • Turn the lamb upside down. Pour / place all the remaining ingredients in the pan around the lamb (including remaining garlic cloves). Fill the roasting pan with hot water so it comes up about 1/4 - 1/3 of the way up the height of the lamb.
  • Cover with lid or with baking/parchment paper then 2 layers of foil. Bake for 3.5 hours. (Note 3) Top up water if it dries out (e.g. Might happen if your lid is loose)
  • Remove the roast from the oven and remove the lid/foil. Turn the lamb over so it is the right side up.
  • Cover again and roast for a further 2 1/2 hours, or until you can pull meat apart with forks.
  • Remove cover and roast for a further 20 - 30 minutes (to brown). (Note 3)
  • Remove from the oven and transfer lamb to serving platter. Cover loosely with foil and rest for 30 - 40 minutes.
  • Strain liquid into a clear jug. The fat will rise to the top. Scoop/pour most of it off - I get 3/4 - 1 cup. There should be 2 - 3 cups of Sauce left. Adjust salt, pepper and lemon to taste.
  • Serve lamb with the Sauce on the side and Truly Crunchy Roast Potatoes (heat oil while lamb is in the oven, then cook potatoes when the lamb is resting).

3 carrots, coarsely chopped
1 head garlic, split but not peeled
1 (5 pound) leg of lamb
1 ¼ cups red wine
1 ¼ cups lamb stock
salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 250 degrees F (120 degrees C).
  • Place carrots and garlic in a roasting pan large enough for the leg of lamb. Place lamb on top. Pour in wine and lamb stock. Place roasting pan on the stove and heat over medium-low heat until liquid is boiling. Cover the roasting pan tightly with aluminum foil, using oven mitts to protect your hands, and place in the oven.
  • Roast in the preheated oven until an instant-read thermometer inserted into the center reads 130 degrees F (54 degrees C) for medium, about 7 hours. Remove from the oven.
  • Increase oven temperature to 400 degrees F (200 degrees C). Transfer lamb into a second roasting pan.
  • Roast lamb uncovered until skin is crispy, 15 to 20 minutes. Let rest before slicing.
  • While lamb is resting, pour cooking juices from the first roasting pan into a saucepan. Bring to a boil and simmer until reduced into a gravy, about 5 minutes. Season with salt and pepper.

This slow-roasted recipe is best if domestic lamb is used, as it is much more mild and flavorful than imported lamb. I made this recipe for a friend in TN that did not have a smoker. It is based on my pulled pork recipe I perfected in a Traeger® smoker. You can garnish the final product with more chopped fresh herbs and vadouvan if desired.

½ cup dried apricots, diced
10 sprigs fresh thyme, or to taste
10 sprigs fresh rosemary, or to taste
8 cloves garlic, diced
1 (3 1/2) pound boneless leg of lamb
1 teaspoon ground coriander

1 teaspoon ground cumin
½ teaspoon salt

Steps:

  • Mix apricots, thyme, rosemary, and 1/2 of the diced garlic and rub onto lamb. Tie lamb with kitchen string and refrigerate, 8 hours to overnight.
  • Combine coriander, allspice, cumin, salt, pepper, and vadouvan and rub over lamb. Heat olive oil in a large pan over medium-high heat. Brown the roast on all sides, about 10 minutes total. Pour in Madeira wine and bring to a boil, using a wooden spoon to scrape up any browned bits from the bottom of the pan.
  • Preheat the oven to 225 degrees F (110 degrees C). Place lamb and juices in a pan and rub with chopped rosemary and thyme. Add apple juice and top with lemon slices.
  • Bake in the preheated oven, basting and rotating the lamb occasionally, until an instant-read thermometer inserted into the thickest part reads 140 degrees F (60 degrees C), 3 1/2 to 4 hours.
  • Remove from the oven and let rest until internal temperature reaches 120 degrees F (49 degrees C). In the meantime, transfer the liquid into a pan and boil until thickened as desired, 3 to 5 minutes. Serve lamb with tzatziki sauce.

Good roast lamb is hard to beat, Lesley Waters's recipe gives it new flavour

2kg leg of lamb
4 garlic cloves , sliced
8 good sprigs thyme
5 tbsp olive oil
half a bottle red wine
zest 1 lemon
1l hot lamb stock
3 red onions , each cut into 6 wedges
2 tbsp balsamic vinegar
2 rosemary , needless roughly chopped
100g SunBlush tomato , drained and roughly chopped
3 x 400g cannellini beans
handful flatleaf parsley , roughly chopped

Steps:

  • Using a sharp knife, cut small slashes all over the lamb, then push a slice of garlic into each. Put half the thyme, 3 tbsp olive oil, wine, lemon zest and a good grinding of black pepper into a large freezer bag. Addthe lamb, tie the bag tightly and refrigerate for at least 4 hrs, preferably overnight.
  • Heat oven to 220C/fan 200C/gas 7. Put the rest of the thyme into the bottom of a roasting tin then lift the lamb out of the marinade and sit on top of the thyme. Roast for 20 mins, then toss onions into the pan, drizzle with a little oil, then turn the oven down to 190C/fan 170C/gas 5. Roast for 15 mins/450g for medium. Meanwhile, strain the marinade into a pan, add most of the stock and boil until reduced by two thirds (this will take about 20 mins). Set aside. Gravy can be made ahead or the day before if necessary, as long as the meat has marinated for 4 hrs.
  • Once the lamb is ready, take out and rest on a board, wrapped in a tent of foil to keep warm. Set the onions aside in a bowl. Put the roasting tin onto a low heat and add the balsamic vinegar to the tin with a splash more stock and scrape all the meaty bits from the bottom. Tip into the jug with the gravy.
  • For the beans, add 2 tbsp oil to the roasting tin. Add the rosemary and tomatoes, and fry for 1 min until the rosemary smells aromatic. Tip in the beans, the red onions and the final splash of stock, then warm through. Season, then stir in the parsley just before serving. Serve on a platter, topped with the lamb.

This is the recipe for Gigot d'Agneau aux Flageolets of Brasserie Balzar in Paris. If you can't find the pretty pale green flageolets, substitute cannellini or great northern beans. The beans need to be soaked overnite so 12 hours soaking time is included in the cooking time.

1 lb flageolet beans
1 bouquet garni (thyme, parsley, bay leaf)
1 carrot, peeled, sliced
1 onion, poked with
4 cloves
3 quarts cold water
2 quarts salt water
1 lb fresh green beans, washed, trimmed
4 lbs leg of lamb
2 garlic cloves, cut in slivers
salt & freshly ground black pepper
1 onion, sliced
3 carrots, peeled and sliced
1 cup dry white wine
2 cups water
salt & freshly ground black pepper
1 tablespoon unsalted butter

Steps:

  • For the Beans:.
  • Rinse, pick over and soak the flageolet beans in cold water overnight.
  • Drain the soaked beans and place them in a large pot with the bouquet garni, carrot and onion.
  • Cover with the 3 quarts of cold water, bring to a boil, reduce the heat to low, and simmer for 2 to 2 and 1/2 hours or until the beans are thoroughly cooked.
  • Bring the 2 quarts of salted water to a boil, add the green beans, and cook about 12 minutes or until crisp-cooked.
  • Drain and refresh under cold running water.
  • For the Lamb:.
  • Preheat oven to 450°F.
  • Poke the leg of lamb with the tip of a knife in various spots and insert slivers of garlic into the slits.
  • Make a bed of the onion and carrot in the bottom of a roasting pan and place the lamb on the vegetables and the roasting pan in the oven.
  • Reduce heat to 350°F and roast for about one hour and twenty minutes for a rare roast (165°F internal Temperature) up to two hours for a well-done roast (175° to 180°F).
  • Remove lamb to a platter and add the white wine and water to the roasting pan, mixing well to scrape up all carmelized juices from the bottom of the pan.
  • Strain through a fine sieve and season sauce to taste with salt and pepper.
  • To Serve:.
  • Reheat the flageolets and season with salt and pepper.
  • Reheat the green beans in a skillet with a little butter and season with salt and pepper.
  • Carve the lamb, place the slices on a large platter on a bed of the flageolets (or white beans) surrounded by the green beans and douse the meat with some of the sauce.
  • Serve additional sauce on the side.

Based on a wonderful recipe from McCall's Cooking School, Meat #22. The intro says, "Lamb and beans the French way. To most Americans, accustomed to pork with their beans, lamb with white beans is an unusual combination. But it's an everyday meal to the French, particularly those from Brittany. The beans are cooked until tender, combined with garlic, onion, herbs and plum tomatoes, then cooked again for several hours with the lamb. We like our roast lamb fairly well done, while the French prefer it pink. A meat thermometer is a great help in roasting it to just the right degree."

1 lb dried navy beans (Great Northern)
3 garlic cloves
1/4 cup butter or 1/4 cup margarine
2 lbs onions, thinly sliced
1 teaspoon dried rosemary leaves
1 teaspoon dried thyme leaves
3 teaspoons salt
1/4 teaspoon pepper
2 (1 lb) cans Italian plum tomatoes, drained
7 lbs leg of lamb

Steps:

  • Rinse and drain beans. In a 6-quart kettle, combine beans with 6 cups cold water. Bring to boiling; reduce heat and simmer 2 minutes. Cover; remove from heat; let stand 1 hour. Drain beans, reserving lequid. Measure liquid. Add water to make 2 quarts.
  • Return beans and their liquid to kettle; bring to the boil. Reduce heat and cover; simmer gently for 1 hour, or just until beans are tender but not mushy. Place beans in colander and drain. Preheat oven to 325°F.
  • Peel 1 clove of the garlic, and crush in garlic press.
  • Heat butter in large skillet; saute sliced onion and crushed garlic until golden -- about 10 minutes.
  • In shallow roasting pan, combine cooked beans, onion mixture, 1/2 teaspoon rosemary, 1/2 teaspoon thyme, 2 teaspoons salt, the pepper and tomatoes; mix well.
  • Pat lamb dry with paper towels; trim off most of the fat. Using a paring knife, make 6 small slits in in flesh. Peel 2 cloves garlic; cut into slivers; insert slivers of garlic in each slit in surface. Sprinkle lamb with the remaining rosemary, thyme and salt.
  • Arrange leg of lamb on top of beans; insert meat thermometer into the meatiest part of leg -- do not let it rest against the bone.
  • Roast, uncovered, 3 to 3 1/2 hours, or to 175°F on meat thermometer, for well done. Roast 20 minutes less for medium-well or pink.
  • To serve: Remove lamb to heated platter or carving board. Allow roast to stand about 20 minutes before carving for easier slicing. With long, sharp knife, cut long, thin, flat slices from leg. Spoon beans around lamb. Garnish with parsley.

4-Hour Lamb image

One 6- to 7-pound leg of lamb (see Cook's Note)
Good olive oil
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
One 750-ml bottle dry white wine
2 heads of garlic, broken apart but not peeled
15 large sprigs fresh rosemary
15 large sprigs fresh thyme
6 bay leaves

Steps:

  • Preheat the oven to 300 degrees F.
  • Rub the lamb all over with olive oil and season all over with salt and pepper. Heat a very large Dutch oven such as Le Creuset over medium-high heat until its hot. Add the lamb and sear on all sides for about 12 minutes, until its browned all over. Remove the lamb to a plate.
  • Add the wine and 2 cups of water to the pan and cook for a minute or two, scraping up all the brown bits in the bottom. Add the garlic, rosemary, thyme, and bay leaves and the lamb on top. Place the lid on the pot and bake in the oven for 4 hours, basting occasionally. (If you dont have a lid, you can cover it tightly with 2 layers of aluminum foil.)
  • After 4 hours, the lamb should be incredibly tender and falling off the bone. Remove the lamb to a plate, cover it tightly with foil and allow it to rest. Strain the sauce into a saucepan and bring to a boil. Lower the heat and simmer for 10 minutes to reduce. The lamb will be too tender to slice; serve it warm with spoons and the sauce.

4 anchovy fillets
3 cloves garlic, peeled

1 Tbsp (15 ml) olive oil
1 shoulder of lamb (2.2 kg)
2 onions, peeled and sliced
2 bulbs garlic, sliced in half
1 stalk celery, roughly chopped
1 x 400 g can whole peeled tomatoes
1½ C (375 ml) white wine
salt and freshly milled pepper to taste
8 baby carrots, washed and halved lengthways
1 x 400 g can cannellini beans, drained and rinsed

Steps:

  • Method Rub Use a pestle and mortar to pound all the rub ingredients into a rough paste. Smear the lamb with the rub and keep to one side. Preheat the oven to 140 °C. Heat a little olive oil in a large frying pan and sear the lamb. Place the onions, garlic, celery, tomatoes and white wine in a deep roasting pan and place the lamb on top. Season with salt and pepper and cover tightly with foil. Place in the oven and roast slowly for 4-5 hours until the meat is tender and falls off the bone. Add the carrots and cannellini beans to the lamb for the last hour of cooking. Tear off chunks of tender meat and serve with the cannellini beans, roasted carrots and pan juices.

  • 1. Cook the lamb: Heat oven to 300˚. Rub lamb with oil and season generously with salt and pepper. Heat a 6-qt. Dutch oven over medium-high heat. Add lamb and cook, turning occasionally, until browned on all sides, about 12 minutes. Transfer lamb to a plate. Add wine and 2 cups water to the Dutch oven; scrape up browned bits from bottom of pot. Insert the cloves into the onion and add to the pot. Bring to a boil, reduce heat to low, cover, and simmer until beans are tender, about 1 hour. Remove pot from heat and season with salt and pepper. Discard herbs and strain beans, reserving cooking liquid. Transfer 2 cups beans, 1⁄4 cup cooking liquid, oil, crème fraîche, and remaining garlic clove to a blender and purée. Stir puréed bean mixture and about 1 cup of the cooking liquid back into pot and cover to keep warm until lamb is cooked. Serve the lamb sliced or torn into chunks, alongside the beans.   • Drain the soaked beans. Heat 2 tablespoons of the oil in a large flameproof casserole, in which the joint of lamb will lie flat. Add half of the chopped onion, 2 of the crushed garlic cloves, the crushed chillies and bay leaves and stir well. Cover and cook over a low heat for 10 minutes until the onions are soft and lightly golden. Add the beans and cold water to just cover (750ml-1 litre), bring to the boil, lower the heat, part-cover and leave to simmer for about 45 minutes or until the beans are partly tender.
  • Meanwhile, heat another 2 tablespoons of oil in a large nonstick frying pan. Pat the lamb dry, then fry it on all sides for about 6-8 minutes until browned. Set to one side, add the chorizo to the pan and fry briskly until lightly coloured. Set aside with the lamb. Add the peeled shallots and brown for 6-7 minutes; set aside. When the lamb is cool enough to handle, make small, deep incisions all over the joint with a small, sharp knife and poke the garlic slivers and rosemary leaves into each one. Season the joint all over.
  • Preheat the oven to 190°C, 170°C fan, gas 5. Add the remaining tablespoon of oil to the frying pan, if necessary, with the remaining onion and fry until it is nicely golden. Add the remaining 2 crushed garlic cloves, the smoked paprika and the cumin and cook for 2 minutes, then stir in the tomatoes and thyme leaves and bring to a simmer.
  • Stir the tomatoes, chorizo and browned shallots into the beans with the sugar and some black pepper. Rest the lamb on top and cover the casserole with some foil and a close-fitting lid. Transfer to the oven and cook for 1½ hours, removing the lid 15-20 minutes before the end of cooking. This will give you lamb that is slightly pink and nicely juicy. If you prefer your lamb a little more cooked, cook it for the full 1½ hours, uncover and return to the oven for 20 minutes more.

  • You need to pre-cook the beans, for all that they linger in the oven for hours and hours later, so put them in a large saucepan and cover them generously with cold water, bring to the boil and cook them for 20 minutes. Then drain but reserve the liquid.
  • Preheat the oven to 325°F. Either finely chop the onions, garlic and carrot or bung them all in a processor and blitz. Sear the lamb in a deep roasting pan, fat-and-skin-side down, over a fairly high heat on top of the stove until it takes on some color, and then remove.
  • Add the onion mush to the roasting pan, adding only a spoonful of oil as the lamb should have rendered some fat, and turn down the heat to fry gently, stirring every now and again, for about 5 minutes. Add the beans, stirring them in well, and then pour in the wine and 4 cups of the reserved bean liquid.   • Take a small sharp knife and cut into the lamb joint to create pockets that allow you to insert your fingers along the joint on both sides.
  • Place the joint in a roasting pan and pour the olive oil-garlic-rosemary mixture over it. Work the mixture into the slits you created with the knife. Sprinkle a pinch of salt over the joint and then cover with foil.
  • After the meat has marinated and you are ready to cook, take the joint out of the fridge and allow to come to room temperature for about 30 minutes.
  • Pre-heat the oven to 230 degrees (Celsius). Place the roasting pan uncovered in the oven and cook for 30 minutes to allow the joint to brown.
  • After 30 minutes, take the joint out of the oven and double wrap with foil. Return to the oven at just 160 degrees for 5 1/2 hours. (After 4 hours, turn the joint over and return to the oven, still covered in foil.)
  • When you take the joint out of the oven, there is no need to rest the meat. You will find it to be very moist and so tender that the meat falls away from the bone with just a spoon.
