Slow-Roasted Goat Shoulder with Spicy Dry-Rub image

Slow-roasted goat shoulder rubbed with a spicy blackening spice is a perfect dish for summer meals. Serves 6

1 3 pound goat shoulder
1.5 teaspoons salt
2 tablespoons blackening spice
5 tablespoons sweet paprika
2 teaspoon garlic powder
1 tablespoon onion powder
2 tablespoons dried thyme
1 tablespoon ground black pepper
1 teaspoon cayenne pepper (or more to taste)

Steps:

  • Mix all the spices together until combined.
  • Season the shoulder all over with salt and allow to rest overnight.
  • The next day, sprinkle liberally with the blackening spice, wrap it up in parchment like a package, and cook for 5-6 hours at 250F in a wood fired oven, a smoker, or just a regular oven until fork-tender.
  • You can cut off pieces of the shoulder and serve as pictured, but my favorite is to pull the meat while it's warm, then toss with salt and pepper to taste along with a little fat like lamb tallow and a splash of stock, heat it in a pan and use like carnitas for tacos and sandwiches.

This slow roasted goat shoulder is rubbed with middle eastern spices and then cooked to fork tender.

1 goat shoulder (3 1/2 to 4 lbs)
2 tbsp preserved lemon, minced (or lemon zest)
2 tbsp Baharat spice mix (see note)
2 tsp salt
2 tsp garlic powder

Steps:

  • Make a paste by mixing the spices with the preserved lemon (or a dry rub without the preserved lemon). Rub the shoulder refrigerate for 12 to 24 hours to allow the rub to season the meat.
  • Place the goat shoulder on a wire rack above a roasting pan with a bit of water at the bottom. Roast the goat shoulder at 325 degrees for about 4 hours, until the meat is fork tender.

3 pounds (1.3 Kg) goat leg with the bone (you can also use lamb)
2-3 cloves of garlic cut into little sticks
3-4 sprigs of rosemary
Juice from 1 lemon
1/4 cups olive oil
Salt and pepper to taste
1 tablespoon dried oregano
1 cup white wine
2 pounds baby potatoes or potatoes peeled and cut into wedges
3 tablespoons pomegranate syrup, or grape syrup, maple syrup or honey
1/2 teaspoon ground coriander seeds
Pinch of salt and pepper
1 teaspoon olive oil
Pomegranate arils for decoration, optional
Aluminum foil

Steps:

  • Preheat your oven to 356°F (180°C)
  • Rub the meat with salt and pepper. Make small incisions throughout the meat and put inside one stick of garlic and some rosemary.
  • Place the meat and potatoes in a pan, add the wine and lemon juice, drizzle with the olive oil and sprinkle with the oregano. Wrap well with foil and bake for 2 hours.
  • Combine all the ingredients for the glaze in a bowl, and mix well. Remove foil and brush the meat with half of the glaze.Return to the oven and bake uncovered for at least 30 more minutes or until the surface of the meat is deep brown and you can see the tissue separating from the bone.
  • When the meat is almost done, brush once more with the rest of the glaze and bake for additional 5 minutes (this is the time to throw in some pomegranate arils). Take out of the oven and let it rest for 15 minutes before serving.Eat!

This recipe adapts beautifully to lamb shoulder.

1 bone-in goat shoulder, about 4 pounds look for the meaty Boer breed
Salt
freshly ground black pepper
½ cup harissa (see recipe, or use store-bought)
1 large onion, peeled and sliced
2 carrots, peeled and sliced
4 garlic cloves, smashed
2 bay leaves
1 teaspoon coriander seeds or a few sprigs fresh cilantro
1 cinnamon stick
2 tablespoons extra-virgin olive oil
2 cups low-sodium chicken stock or water
½ cup white wine
1 tablespoon honey
½ Moroccan preserved lemon, rinsed and inner flesh removed, finely chopped
2 sprigs mint leaves, roughly torn

Steps:

  • The evening before you plan to cook the shoulder, season it generously with salt, pepper and ¼ cup of the harissa. Refrigerate overnight and start to bring it to room temperature two hours before you plan to cook it.
  • Preheat oven to 350 degrees. In a large Dutch oven set over medium heat, cook the onion, carrots, garlic and spices for a few minutes in the olive oil until fragrant and slightly browned. If using cilantro sprigs, tuck them into the vegetables after they've cooked. Lay the shoulder over the vegetables.
  • In a small saucepan, bring the stock, wine and honey to a simmer and pour it over the goat. Cook uncovered in the oven for about 1 hour, adjusting the temperature so the juices maintain a very gentle simmer. Add a little more broth or water if it gets too low. Carefully turn the shoulder over and return to the oven. After 30 minutes, turn again and repeat every 30 minutes until the meat is very tender and nearly falling off the bone. Total cooking time will be 2½ to 3 hours. The slower it cooks, the more meltingly tender it will be. Cool in its juices.
  • Remove the shoulder and strain the liquid into a bowl, pushing some of the solids through the strainer. Let the liquid settle for a few minutes, then skim off all of the fat. This is made easier if you refrigerate the juices for a half hour or so, partially solidifying the fat.
  • To serve, gently reheat the meat in the juices and stir in the preserved lemon and sprinkle with mint. Serve with more harissa, yogurt and aromatic baked rice (recipe follows).

2kg lamb shoulder
3 onions, each sliced into 3 thick discs
1 shallot, halved
4 garlic cloves
4 cherry tomatoes
2 anchovies
½ tsp cumin seeds, toasted
½ tsp coriander seeds, toasted
½ tsp pink peppercorns
2 tbsp rosemary leaves
1 thyme sprig, leaves picked
small bunch mint leaves, chopped
70ml white wine
4 tbsp olive oil
1 tbsp brown sugar
zest and juice 1 lemon
zest ½ lemon
1 garlic clove, crushed
1 tbsp finely chopped mint

Steps:

  • Make the marinade. Blitz 1 halved shallot, 4 garlic cloves, 4 cherry tomatoes, 2 anchovies, ½ tsp toasted cumin seeds, ½ tsp toasted coriander seeds, ½ tsp pink peppercorns, 2 tbsp rosemary leaves, leaves from 1 thyme sprig, chopped leaves from a small bunch mint, 70ml white wine, 4 tbsp olive oil, 1 tbsp brown sugar and zest of juice of 1 lemon in a food processor.
  • Pierce 2kg lamb shoulder all over with a sharp knife, put it in a large roasting tin and slather the marinade onto the meat, coating thoroughly.
  • Cover with cling film and leave in the fridge for at least 3 hrs, preferably overnight.
  • Take the lamb out of the fridge at least half an hour before you cook it to bring it to room temperature. Heat oven to 160C/140C fan/gas 3.
  • Put 3 onions, each sliced into 3 thick disks, in the roasting tin, resting the lamb on top. Cover with tented foil and roast for 5 hrs, basting the meat occasionally.
  • Remove from the oven, transfer the lamb to a board and allow to rest, covered, for at least 30 mins.
  • Return the tin of onions and marinating juices to the oven to keep warm.
  • Combine zest ½ lemon, 1 crushed garlic clove and 1 tbsp finely chopped mint in a bowl.
  • Pull the lamb apart with forks and serve with the roasted onions and gremolata scattered over.
  • Skim off any fat from the juices and serve alongside the lamb.You can use the leftover meat in Rosie's lamb shoulder flatbread recipe (see 'goes well with').

  • Sit the lamb, skin-side up, on a board. Using a sharp knife, insert irregular holes through the skin. Insert the garlic into the holes.
  • Place the lamb in a roasting tin and roast for about 20 minutes until brown. Carefully turn the lamb over and roast for a further 20–30 minutes until brown all over.
  • Boil the onion in water for 10 minutes, then add the potatoes and boil for 4 minutes. Drain well.
  • Remove the lamb from the tin. Add the onions and potatoes to the tin and mix together. Add the stock to the tin, then put the lamb on top and cover tightly with foil.
  • Reduce the temperature of the oven to 160C/140C Fan/Gas 3 and cook for 3½–4 hours, or until the lamb is completely tender. Remove the lamb from the tin and place on a board.
  • To make the gravy, spoon the lamb fat into a saucepan. Add the flour and stir over the heat for 30 seconds. Whisk in the stock, wine, redcurrant jelly, Worcestershire sauce and browning.
  • Carve the lamb and serve with gravy and potatoes and onion. Serve with green vegetables.
