SLOW-COOKER MEMPHIS-STYLE RIBS
After my dad and I had dinner at the legendary Rendezvous Restaurant in Memphis, I was inspired to create a slow-cooked version of tasty dry-rub Memphis ribs. Smoked paprika in the rub mimics the flavor that the ribs would get from being grilled over hot coals. -Matthew Hass, Ellison Bay, Wisconsin

- Combine vinegar and water; brush over ribs. Pour remaining vinegar mixture into a 6-qt. slow cooker. Mix together remaining ingredients, reserving half. Sprinkle ribs with half the seasoning blend; reserve the other half. Cut the ribs into serving-sized pieces; transfer to slow cooker. , Cook, covered, on low until tender, 5-6 hours. Remove ribs; skim fat from cooking juices. Using a clean brush, brush ribs generously with skimmed cooking juices; sprinkle with reserved seasoning mixture. Serve ribs with remaining juices.

LOW & SLOW OVEN BAKED RIBS - SUPER SIMPLE!
This is truly the ONLY rib recipe you will ever need. Ribs simply don't get any better than this! You'll need a fork and knife to eat these, as they will FALL OFF THE BONE. . .tastier than you can imagine. And they couldn't be easier, just throw them in the oven and you are good to go. . .just make sure you have some of your favorite BBQ sauce on hand!

Steps:
- Preheat oven to 225 degrees.
- Season your ribs with Dale's marinade, your favorite rib rub, grill seasoning, or simply salt and pepper.
- Place ribs, meat side down, in baking dishes.
- Cover the baking dishes with aluminum foil and place in the oven.
- If you are using small baby back ribs, take out after 3.5 hours. If you are using regular baby back or St. Louis style ribs, then take out after 4 hours.
- Drain off the drippings. Flip the ribs over using two spatulas (and an extra set of hands if you have them) so the meat side is up. Be careful, as they may be so tender they fall apart.
- Put a layer of BBQ sauce on the ribs and return to the oven uncovered for an additional 20-30 minutes.
- Remove from oven and serve them up with a side of potato salad and some baked beans.

- Toast the fennel, coriander and cumin seeds in a sauté pan until fragrant and oils have been released. Grind in a spice grinder until in powder form. Feel free to use ground spices if you prefer, but use a 1/2 tsp LESS of each.
- In a small bowl whisk together the toasted/ground spices and all remaining dry rub ingredients. Set aside. Whisk together the mop sauce ingredients. Set aside.
- Peel membrane off from the back of ribs. Apply 3/4 of the dry rub all over both sides of the ribs. Reserve 1/4 of dry rub to apply before slicing after cooked.

- Preheat oven to 300F. Line a baking sheet with foil (to make it easier to clean) and set a wire rack on the top.
- Start preheating grill around the 2 hour mark. Pour 1/2 cup of barbecue sauce into a small bowl. When ribs are done, brush with barbecue sauce to coat, refilling bowl as needed. Transfer to a hot grill, meat side up. Grill for 10 minutes, until sauce is hot.

- Set a pan of water on one side of your grill prior to turning on. This will be the side you are using for indirect heat. Make sure you put the grate back on.
- Preheat grill to about 200 minimum or 225 degrees maximum F. You are only turning on one side of your grill. Remember indirect heat for low and slow recipes.
- Take your ribs out of the fridge so they have time to hit room temperature. Usually I'll rub them the night before but this recipe was done on the fly on a busy day so I rubbed about 30-45 minutes before they hit the grill.
- In a small bowl mix your rub ingredients. Now pour then over the ribs, coating all sides as you go. Rub them into the meat gently. Allow to stand till ready to grill.
