Zesty Italian Beef Tips (Crock-Pot) image

The original recipe is from a Betty Crocker Slow Cooker Cookbook. There the original recipe called for sun dried tomatoes I replaced them with a jar of pimentos. Easy to "throw together" before work and have a great dinner when you get home.

2 lbs beef stew meat
1 cup frozen small whole onions (from a 1 pound bag)
1 (6 ounce) jar pitted kalamata olives, drained
1 (6 ounce) jar pimientos, drained and coarsely chopped
1 (28 ounce) jar marinara sauce
6 cups hot cooked pasta

Steps:

  • Place beef and frozen onions in 3 1/2 to 4 quart crock pot. Top with olives and pimentos. Pour marinara sauce over top.
  • Cover and cook on low heat setting 8 to 10 hours or until beef is tender.
  • Serve over pasta.

2 pounds beef stew meat
1 cup frozen small whole onions
1 jar (6 ounce size) pitted Kalamata or Greek olives, drained
1/3 cup sun-dried tomatoes in oil, drained and chopped
1 jar (28 ounce size) marinara sauce

Steps:

  • Place the beef stew meat and frozen onions in the bottom of a crock pot. Top with the olives and sun-dried tomatoes. Evenly pour the marinara sauce over all. Cover the crock pot and cook on low heat for 5-6 hours or until the beef is tender and cooked through. Serve the beef and sauce over pasta or mashed potatoes.

1 jar (26 oz) marinara sauce
6 cups uncooked bow-tie (farfalle) pasta (12 oz)

Steps:

  • In 3 1/2- to 4-quart slow cooker, place beef and onions. Top with olives and tomatoes. Pour marinara sauce over top.
  • Cover; cook on Low heat setting 8 to 10 hours.
  • About 25 minutes before serving, cook and drain pasta as directed on package. Serve beef mixture over pasta.

1 onion, quartered
1 (10.5 ounce) can beef broth
1 (1 ounce) packet dry au jus mix
1 (.7 ounce) package dry Italian salad dressing mix (such as Good Seasons®)
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Place beef chuck roast into a slow cooker and scatter onion quarters around the meat. Pour the beef broth over the meat and sprinkle the au jus mix, Italian salad dressing mix, salt, and black pepper over the roast.
  • Cover cooker, set on Low, and cook until meat is very tender, 6 to 8 hours.
