Steps:
- Combine the broth, bean mix, salt, pepper, celery, carrots, garlic, onions, bay leaf, thyme and 2 cups water in a slow cooker. Cover and cook on low for 7 hours. Add the barley and, if the broth looks low, another cup of water. Cover and cook on low an additional 1 hour (8 hours total).
- Just before serving, stir in the spinach to wilt. Serve in a big bowl with toasted crusty bread or baguette.
SLOW COOKER NORTHERN WHITE BEAN
White beans are cooked in a slow cooker with smoked neck bones, aromatic vegetables, seasonings, and chicken broth. This recipe can be used for cooking most any dried bean in the slow cooker. Adjust liquid when cooking tougher skin beans (such as pinto beans). Add garlic and onion powder to taste, if desired.

- Place beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse.
- Place neck bones in a slow cooker and pour chicken broth over the top; stir in soul seasoning.
- Cook on High until meat is falling off the bones, about 1 hour. Transfer bones and meat to a plate and shred meat from bones; discard bones.
- Stir beans, onion, vinegar, sugar, and hot sauce into slow cooker; spread shredded meat over beans.
- Cook on High for 2 to 4 hours (or cook on Low for 4 to 6 hours).

- Mix everything but the water and flour in a slow cooker.
- Cook on low for 7 hours.
- Beat the flour into the water (or chicken broth) with a fork until smooth then mix into the slow cooker.

- Mince the garlic, dice the onion, slice the celery, and peel and slice the carrots. Add the olive oil, garlic, onion, celery, and carrots to a large (5qt or larger) slow cooker.
- Give the beans a quick rinse in a colander and then add them to the slow cooker, along with the bay leaf, rosemary, thyme, paprika, and some freshly cracked pepper.
- Add six cups of water to the slow cooker and stir to combine the ingredients. Place the lid on the slow cooker and cook on low for 8-9 hours or on high for 4-5 hours.
- After 8 hours on low or 4 hours on high, stir the soup and begin to mash the beans against the side of the slow cooker to thicken the soup. Once the soup is thickened to your liking, start adding salt to taste. Begin with 1/2 tsp and add more until the soup tastes flavorful to you. I used about 2 tsp total.
- Serve the soup hot with crackers or crusty bread for dipping.

- 1. If using dried beans soak them overnight or you can do this quick soak method or simply just use canned. 2. Add the chopped bacon to a skillet and fry on medium heat until almost crispy. Remove the bacon but keep the fat. 3. Add the sausage links and caramelize on medium heat. When you start to see some good dark charring it's time to remove those and put them to the side with the bacon. 4. Add the onions and then garlic, cook until soft. 5. Remove the onions and garlic and add the pork and beef stew meat. Cook until the outside has browned. 6. Add all these ingredients to the slow cooker, along with the beans (drained). 7. Add the thyme, Creole seasoning and bay leaves. As well as the tomato paste, sauce and beef broth. 8. Cook on low for 6-8 hours or high for 4-6 hours. 9. Remove the bay leaves and serve with your choice of sides.

- Sauté the vegetables: Heat 1 tablespoon of the oil over medium-high heat in a large Dutch oven. Add both onions and cook for one minute. Add the garlic and cook for another minute.
