SLOW COOKER TACO MEAT WITH HOMEMADE TACO SEASONING
I love good tacos... They can be chicken, fish, beef, or pork... But I love tacos. When I do ground beef tacos I want the meat to be well seasoned, and taste like heaven. And this is exactly what this recipe will do. It does take six hours, but it is worth every single minute of that time. In addition will be using our own...

Steps:
- 1. Gather your ingredients.
- 2. Mix all the dry spices together.
- 3. Chop up the onions.
- 4. Place the ground beef in a mixing bowl.
- 5. Add the dry spices, the onion, and 4 tablespoons of beef stock or water.
- 6. Mix the ingredients together.
- 7. Chef's Note: You don't have to go too crazy with the mixing. Just get them combined. They will have plenty of time in the slow cooker to get to know each other.
- 8. Add the mixture to the slow cooker, and then add the remaining beef stock, or water.
- 9. Set your slow cooker to low, and set a timer for two hours.
- 10. After two hours open the slow cooker, and breakup the taco meat.
- 11. Return the cover to the slow cooker, and set the timer for an additional two hours.
- 12. After two hours, open slow cooker and again break the meat apart.
- 13. Chef's Tip: You might want to have some additional beef broth on hand, just in case the taco meat begins to dry out.
- 14. Close the lid, and set the timer for the last two hours.
- 15. At the end of six hours total time, remove that wonderful smelling taco meat from the slow cooker.
- 16. Chef's Note: If there is any grease, absorb it with a few paper towels. However, if you use lean ground beef, you probably won't have this problem.
- 17. What you do at this point is totally up to you. It goes good on a taco salad, stuffed shells; just plain old tacos, or anything else you can come up with. Enjoy.
- 18. Keep the faith, and keep cooking.

- Heat a large skillet over medium-high heat.
- Add oil and when it begins to shimmer, add beef.
- Saute beef, breaking it apart as it cooks, until cooked through, 8 to 10 minutes.
- Drain off any excess fat or liquid from the pan. (Note: Resist the urge to season the meat with salt or pepper at this stage. Depending on how salty your salsa is, you may or may not need additional salt.)
- Transfer beef to the bowl of a slow cooker and stir in salsa and water. (See note below for freezing instructions.)
- Cook for 7 to 8 hours on low or 4 to 5 hours on high. (After cooking is complete, you can leave the meat on the "warm" setting for up to 2 hours.)
- Give the meat a stir. Taste and season with some salt and pepper, if needed.

- Brown the beef in a large nonstick skillet over high heat, breaking it into smaller pieces as it cooks. When no longer pink add 2 teaspoons of the cumin along with the remaining dry spices, onion, bell pepper and garlic, stir and cook 2 to 3 minutes until soft, then transfer to the slow cooker along with 1/2 cup water, bay leaf and tomato sauce. Cover and cook on high 3 hours or low 6 to 8. Discard the bay leaf and add the remaining teaspoon of cumin.
- Heat the taco shells according to the directions, then assemble placing 1/4 cup beef in each shell, topped with lettuce, 1 tablespoon cheese and tomato.
- Press saute, add the beef and cook breaking it into smaller pieces as it cooks. When no longer pink add 2 teaspoons of the cumin along with the remaining dry spices, onion, bell pepper and garlic, stir and cook 2 to 3 minutes until soft.
