EASY SLOW COOKER TOMATILLO PORK
Break out the crock pot for this slow cooked pork in a tomatillo sauce flavored with cilantro, garlic, onions, and cumin. A delicious filling for taco, burritos, or low carb it and eat it on it's own!

- Place pork butt in slow cooker. Cover the pork with all the ingredients EXCEPT the lime and optional accompaniments. Place lid on top of slow cooker and cook on high for 6 hours or low for 8 hours.
- Remove pork from slow cooker and shred into smaller pieces with two forks. Place the shredded pork back in slow cooker with the leftover sauce and sprinkle with the fresh lime juice. Stir well. Serve with optional accompaniments, if desired.

- Place all ingredients except toppings in a 5-qt. slow cooker. Cook, covered, on low until a thermometer inserted in pork reads at least 145°, 4-5 hours. Top with french-fried onions and cilantro just before serving.

- Combine all the seasoning ingredients together in a small bowl. Measure out 2 tablespoons of the mixture and save for later.
- Cut the pork roast into large chunks (4-6 inches) and rub the remaining seasoning mixture (not the reserved 2 tablespoons) evenly over all sides of the pork.
- Pressure cooker: add the root beer/cola soda and the 1 cup green salsa/enchilada sauce to the insert of an electric pressure cooker. Stir to combine. Add the seasoned pork. Secure the lid, set the valve to seal and cook on high pressure for 55-60 minutes. Let the pressure naturally release for 10 minutes and then quick release the remaining pressure.
- Transfer the pork to a cutting board or pan and shred. Discard all but 1/2 cup of the cooking liquid in the pressure cooker. Add the pork back to the pressure cooker. Add the 2 tablespoons of reserved spices, red enchilada sauce, brown sugar, green chiles and green salsa/enchilada sauce and stir/toss to combine. Heat through using the saute function (stir often to avoid sticking) or slow cooker function (high for 30 minutes or so). Keep warm until serving.

- Mix all of the Mixed Spices together in a resealable container. Set aside. Lightly grease slow cooker with nonstick cooking spray. Set aside.
- Heat 2 tablespoon vegetable oil in Dutch oven, cast iron or stainless steel skillet (you can use nonstick but it will just take longer) over medium-high heat. Using tongs or 2 forks, sear pork on all sides until lightly browned.
- Transfer pork to slow cooker. Ladle a spoonful of the pan juices over the meat so the spices will stick. Separate out 1 1/2 tablespoons spices to use after the pork is cooked. Rub all remaining spices evenly over all sides of pork (it will seem like a lot but use all of it).
- Add all Slow Cooker Phase 1 Ingredients to the pork. Cook on LOW for 6-8 hours or until pork is tender enough to shred. Shred pork into larger sections in crock pot and continue to cook on LOW for 30 minutes.
