SLOW COOKER BEEF STROGANOFF
Cook a version of beef stroganoff that's lighter on the wallet yet full of flavour thanks to slow cooking. Serve with pasta, rice or mashed potato

- Turn on the slow cooker. Season the beef. Heat the oil in a wide frying pan and add the beef in batches so as not to overcrowd the pan. Cook over a high heat until deep brown, then transfer to the slow cooker. Add the onion and garlic to the pan and cook for a few mins until soft, adding more oil, if needed. Add a splash of water and scrape any bits from the bottom of the pan. Tip everything into the slow cooker.
- Add the stock to the beef, then the mustard and season. Add enough water to just cover the beef, put the lid on and cook on Low for 6-8 hrs or High for 5-6 hrs.
- About 30 mins before serving, melt the butter in a frying pan and cook the mushrooms until soft and caramelised. Tip into the slow cooker. Mix the cornflour with a little liquid from the stroganoff in the frying pan until smooth, then add about 100ml more and bring to a simmer. Once thickened, pour into the slow cooker with the sour cream. Turn to High (if not already) and cook for another 20 mins. Stir through the parsley. Serve with tagliatelle or mash, sprinkled with paprika.

- Season the meat with the paprika and some salt and pepper. Heat a Dutch oven or heavy-bottomed pot over medium heat and add the oil. When hot, add the meat and cook until brown on both sides. Remove to a plate and set aside.
- Add the mushrooms and cook until brown, about 2 minutes. Add the garlic and onions and cook, stirring occasionally, until starting to soften, an additional 2 minutes. Add the flour and cook the roux, stirring, for a couple minutes. Whisk in the red wine and bring to a simmer. Add the stock and milk, whisking to remove any lumps. Place the ribs back in the pot and simmer until the meat is tender, about 2 hours. (Alternatively, cook in the oven at 275 degree F until tender.)
- When you are ready to serve, bring a pot of water to a boil and salt liberally. Add the pasta, give it a stir and cook until al dente according to the package directions. Drain and set aside.
- Remove the stroganoff from the heat, mix in the sour cream, pickles and parsley if using and serve with the pasta.
BEEF SHORT RIB STROGANOFF WITH BUTTERED NOODLES AND LEMON CREME FRAICHE

- For the short ribs: Sear short ribs, then add to a pressure cooker with red wine, garlic, carrot, onion and thyme. Cook on high pressure for 45 minutes to 1 hour. Cool and let pressure release, then open and remove short ribs from the liquid. Strain the liquid, reduce to a glaze and glaze the meat.
- Boil the orecchiette until tender in salted boiling water. Strain and mount with butter.
- For the mushroom puree: Chop the mushrooms and saute lightly in a saucepot. Deglaze with Madeira and reduce. Deglaze with cream and reduce until mushrooms are tender. Blend until smooth.
- For the mushrooms: Preheat a wood-burning oven. Toss the mushrooms in the melted butter. Put on a sheet tray, cover with the thyme and roast in a wood-burning oven until tender.
- For the lemon creme fraiche: Combine the creme fraiche, lemon juice, lemon zest and some black pepper.
- Sauce the bottom of the plate with the mushroom puree, then top with orecchiette, mushrooms, glazed meat and a dollop of the lemon cream.

- Season beef - Pat beef dry then sprinkle with all the salt and pepper.
- Brown beef - Heat 1 tbsp oil in a large heavy based pot or skillet* over high heat. Add beef in a single layer (not squished) and brown aggressively all over - 4 minutes or so. Remove and repeat with rest of beef, adding more oil as needed.
- Sauté aromatics - Let the pot cool down a bit then return to stove. Melt half the butter, then cook garlic and onion for 3 minutes until softened.
- Add flour - Sprinkle the flour across the surface, then stir. Add the mustard, and stir - it will look gluey, that's ok, it will dissolve.
- Add stock - While stirring, pour in about half the beef stock then mix so the flour mixture dissolves into the liquid. It will thicken quite quickly into a gravy-like consistency .Switch to a whisk if needed, to make it lump free. Then add remaining stock, stir well, scraping the bottom of the pot, and bring to simmer. Cook using chosen method below.

- Sprinkle ribs with salt and pepper. In a large skillet, heat oil over medium heat. In batches, brown ribs on all sides; transfer to a 4- or 5-qt. slow cooker. - Prepare a slow cooker crock with cooking spray.
- Spread celery, carrots, onion, and garlic in the bottom of the crock. Season short ribs with salt and pepper; place atop the vegetables. Pour beef consomme and water into the crock.

- 1. Add 1 tablespoon canola oil to heavy skillet over medium high heat. Add beef and brown on both sides. Transfer to slow cooker. Work in batches and do not crowd the pan.
- 2. Add 1 tablespoon canola oil to the skillet over medium high heat and add mushrooms and onions. Cook until mushrooms are golden brown; approximately 7-8 minutes Reduce the heat to low. Then add the garlic, onion powder, dried parsley and cook for 30 seconds. Remove the vegetables and add to the slow cooker.
- 3. Pour in 1 1/2 cups beef broth and Worcestershire Sauce. Cook for 2-3 hours on high or 4-6 on low.

- 5. Remove several tablespoons of the cooked broth to a bowl. Put the cream cheese in a bowl and add just 1 tablespoon of broth at a time; stir until it is smooth. Slowly stir this into the slow cooker.
- 6. Slowly stir in sour cream until smooth. Serve over cooked egg noodles or add egg noodles to the slow cooker and stir to coat. Salt and pepper to taste. If desired garnish with fresh chopped parsley.

- Preheat the oven to 325°. Sprinkle 2 teaspoons each of the hot and sweet paprika on the short ribs and rub it in well. Season the meat with salt and pepper.
- In a large enameled cast-iron casserole, heat 1 1/2 tablespoons of the vegetable oil until shimmering. Add half of the short ribs and cook slowly over moderately low heat, turning, until browned, about 10 minutes. Transfer the short ribs to a platter and repeat with the remaining oil and ribs.
- Add the onions to the casserole and cook over low heat, stirring occasionally, until softened, about 8 minutes. Add the garlic, 1/4 teaspoon of the caraway seeds and the remaining 1 teaspoon each of hot and sweet paprika. Cook over low heat until fragrant, about 4 minutes. Add the Cognac and simmer for 2 minutes. Whisk in the flour and cook for 3 minutes. Increase the heat to moderately high and slowly whisk in the beef stock until smooth.
