SAVORY KALE, CANNELLINI BEAN, AND POTATO SOUP



Savory Kale, Cannellini Bean, and Potato Soup image

I wanted to use some of the kale I froze for the winter, and have something healthy to bring to work for lunch this week, so I whipped up this soup, which is really quite good!

2 tablespoons extra-virgin olive oil
1 onion, diced
¾ cup diced carrot
4 cloves garlic, minced
3 cups low-sodium chicken broth
2 cups water
1 cup white wine
3 potatoes, halved and sliced
½ teaspoon chopped fresh rosemary
½ teaspoon chopped fresh sage
½ teaspoon chopped fresh thyme
1 (16 ounce) can cannellini beans, rinsed and drained
2 cups finely chopped kale leaves
1 small red chile pepper, seeded and chopped fine
ground black pepper to taste

Steps:

  • Heat the olive oil in a large Dutch oven over medium heat; cook and stir the onion until softened and translucent, about 5 minutes. Stir in the carrot and garlic, and cook for 5 minutes more.
  • Pour in the chicken broth, water, and white wine; stir in the potatoes, rosemary, sage, and thyme. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until the potatoes are tender, about 20 minutes. Add the cannelini beans, kale, chile pepper, and black pepper, and simmer, covered, for 30 more minutes.

1 pound dried navy beans
2 cartons (32 ounces each) chicken broth
2 cups water
1 smoked turkey wing (about 7 ounces)
1 medium onion, chopped
1 jalapeno pepper, seeded and finely chopped
1 tablespoon minced garlic
3 bay leaves
1 teaspoon pepper
1/2 teaspoon crushed red pepper flakes
10 cups chopped fresh spinach (about 8 ounces)
1 large sweet red pepper, chopped
1/2 teaspoon kosher salt
Grated Parmesan cheese, optional

Steps:

  • Rinse and sort beans; soak according to package directions., In a 5- or 6-qt. slow cooker, combine beans, broth, water, turkey wing, onion, jalapeno, garlic, bay leaves, pepper and pepper flakes. Cook, covered, on low until beans are tender, 7-9 hours. , Remove turkey wing and bay leaves; discard. Stir in spinach, red pepper and salt; heat through. If desired, serve with grated Parmesan cheese.

This Slow Cooker Tuscan White Bean Soup with Sausage is a healthy and heart meal for chilly fall and winter nights.

1/2 pound Italian Sausage
2 Onions (chopped)
3 cloves Garlic (minced)
3 stalks Celery (sliced)
2 Carrots (peeled and sliced)
2 tablespoons Tomato Paste
2 tablespoons Italian seasoning
1/2 cup Dry White Wine (or more chicken broth)
28 ounces Chicken Broth
1 (14.5 ounce) can fire roasted tomatoes (I used a can of whole roasted cherry tomatoes)
1 (15 ounce) can Tomato Sauce
1 Green Pepper (diced)
2 sprigs Fresh Rosemary (optional)
1/2 cup Roasted Red Peppers (diced)
1/2 cup Orzo Pasta (uncooked)
1 15 ounce can White Beans (rinsed and drained)
2 cups Baby Spinach (or chopped kale (optional))
1/2 teaspoon Salt (check for seasoning first, then salt to your taste)

Steps:

  • Brown sausage and vegetables: Brown sausage in a skillet over medium heat. Remove to your crockpot. Add the onion, garlic, celery and carrots to the hot pan and cook until softened, about 3 minutes.
  • Deglaze the pan: Stir in the tomato paste and the Italian seasoning. Pour the white wine (or 1/2 cup chicken broth) into the pan and bring it to a boil, scraping the browned bits off the bottom of the pan. Take off the heat and transfer everything to the slow cooker, too.
  • Cook: Add the remaining ingredients EXCEPT for the white beans, orzo pasta and kale/spinach to the crock and stir well. Cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  • Finish the soup: Stir the dry orzo, white beans and spinach into the soup and cook on HIGH for about 15 minutes or until the pasta is done. Check for seasoning and add salt to taste, if necessary.

8 cups coarsely chopped fresh spinach
finely shredded parmesan cheese

Steps:

  • In a 3-1/2 or 4-quart slow cooker combine broth, tomato puree, beans, rice, onion, garlic, basil, salt and pepper.
  • Cover; cook on low setting for 5 to 7 hours or on high-heat setting for 2-1/2 to 3-1/2 hours.

2 tbsp extra virgin olive oil
1 sweet vidalia onion (finely chopped)
4 cloves garlic (minced)
8 oz mushrooms (sliced)
24 oz boneless skinless chicken breasts (I used 6 four ounce breasts)
30 oz cans white cannelini beans (drained (2 cans))
2 tsp fresh thyme
10 oz baby spinach leaves
64 oz chicken broth (2 (32 oz) cartons )
2 bay leaves
1 tsp seasoned salt
1 tsp freshly cracked pepper
freshly grated or shaved parmesan cheese (for garnishing)

Steps:

  • Heat olive oil in a large non-stick skillet over medium heat.
  • Sauté onions for 3 minutes, stirring frequently.
  • Add mushrooms and minced garlic. Cook 5 minutes more, stirring often.
  • Spray a slow cooker insert with olive oil spray and add chicken breasts followed by remaining ingredients, except parmesan cheese.
  • Cook for 3 1/2 hours on high.
  • Remove chicken breast, shred or chop, and add back to the pot. Give it a good stir and serve.
  • Garnish with fresh parmesan cheese.

6 cups reduced-sodium vegetable broth
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (15 ounces) tomato puree
1/2 cup finely chopped onion
1/2 cup uncooked converted long grain rice
2 garlic cloves, minced
1 teaspoon dried basil
1/4 teaspoon pepper
1/8 teaspoon salt
7 cups chopped fresh spinach
1/4 cup shredded Parmesan cheese

Steps:

  • In a 4-qt. slow cooker, combine the first 9 ingredients. Cover and cook on low for 6-7 hours or until heated through. Stir in spinach. Cover and cook for 15 minutes or until spinach is wilted. Sprinkle with cheese. Freeze option: Before adding cheese, cool soup. Freeze soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth or water if necessary. Sprinkle each serving with cheese.
