SLOW COOKER SWISS STEAK

2.5 lbs. round steaks (or bottom or top round roast cut into thick steaks (2-4 pounds will work fine in this recipe))
1/2 cup flour
1 tsp. salt
1/4 tsp. black pepper
4 Tbsp. cooking oil
10.5 oz. Campbell's beef consomme (or beef broth)
29 oz. petite diced tomatoes ((two 14.5 oz. cans) do not drain)
2 Tbsp. Worcestershire sauce
1 cup diced onion
1 green bell pepper
2 garlic cloves (minced)

Steps:

  • On a large plate add the flour and salt and pepper. Mix this together.
  • Dredge each steak in this mixture on both sides, transfer to another plate. Save any excess flour mixture, you will add this to the slow cooker with the meat later.
  • Set a large skillet to medium high heat. Add enough oil to coat the pan. Brown the steaks on both sides, no need to cook through. You may have to cook the meat in two batches if your pan is too small, add more oil inbewteen batches. Add the browned steaks to the slow cooker. Sprinkle over any excess flour from the plate.
  • Deglaze the pan that you browned the meat in with by adding the beef consomme and scrapping up any brown bits. Add to the slow cooker on top of the beef.
  • Add the remaining ingredients, stir.
  • Place the lid on the slow cooker. Cook on LOW for 7 hours or HIGH for 4 hours with out opening the lid during the cooking time.

1-1/2 pounds boneless beef round steak (1/2 inch thick)
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons canola oil
2 medium carrots, chopped
1 medium onion, chopped
1 cup chopped green pepper
3/4 cup chopped celery
1 teaspoon cornstarch
1/2 cup cold water
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 teaspoon prepared horseradish

Steps:

  • Cut steak into serving-size pieces. Combine the flour, salt and pepper; sprinkle over both sides of steak. In a pressure cooker, brown steak on both sides in oil; drain. Add carrots, onion, green pepper and celery. , In a bowl, combine cornstarch and water until smooth; add soup and horseradish. Pour over vegetables., Close cover securely; place pressure regulator on vent pipe. Bring cooker to fully pressure over high heat. Reduce heat to medium and cook for 12 minutes. (Pressure regulator should maintain a slow steady rocking motion or release of steam; adjust heat if needed.) Remove from the heat. Immediately cool according to manufacturer's directions until pressure is completely reduced.

2 teaspoons salt
2 teaspoons dry mustard
1 teaspoon black pepper
2 pounds cube steak
¼ cup vegetable oil
1 onion, sliced thin
2 cloves garlic, minced
3 cups beef broth
2 tablespoons tomato paste
2 (14.5 ounce) cans diced tomatoes
2 tablespoons Worcestershire sauce
2 teaspoons ground paprika
2 teaspoons ground thyme

Steps:

  • Mix flour, salt, mustard, and pepper together in a wide, shallow bowl.
  • Dredge cube steaks in the flour mixture to coat completely.
  • Heat oil in a skillet over medium-high heat. Fry steaks until golden brown, 2 to 3 minutes per side; transfer to a slow cooker, reserving drippings in the skillet.

1 ½ pounds round steak (or cube steaks or minute steaks)
2 carrots (sliced into 1" pieces)
1 stalk celery (sliced into 1" pieces)
½ onion (sliced ½" )
2 cloves garlic (sliced)
¼ cup flour
1 tablespoon olive oil
½ cup white wine
1 cup beef broth
14 oz canned diced tomatoes, with juice
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
½ teaspoon dried thyme leaves
salt and pepper to taste
corn starch for thickening (optional)

Steps:

  • Add sliced carrots, celery, onion, & garlic to the bottom of a slow cooker.
  • Pound steaks with a meat tenderizer to ¼ inch thickness and season with salt and pepper (cube steaks do not need to be pounded). Put flour in a shallow dish or plate and dredge each steak in the flour mixture.
  • Heat oil in a skillet over medium-high heat and brown steaks on both sides, about 2 minutes per side adding more oil if needed.
  • In the same pan, add wine and scrape up any brown bits. Add to the slow cooker with remaining ingredients except for the cornstarch.

½ cup red wine
1 onion, diced

400 g (14.1 oz) crushed tomatoes
½ cup beef stock

Steps:

  • Tenderize each piece of steak by using a meat tenderizer.
  • In a bowl, combine the flour, salt, and pepper. Lightly coat the steaks in the flour.
  • In a frypan over high heat, add 1 Tbsp of oil. Once hot, add the steaks and cook each side for a couple of minutes. Place steaks to the side.
  • In the same frypan, add the red wine and deglaze the pan.
  • Transfer the red wine to the slow cooker and add the onion, garlic, celery, carrot, oregano, Worcestershire sauce, crushed tomatoes, and beef stock. Gently stir until combined.

1 tablespoon canola oil
2 lbs round steaks, cut into cubes
2 onions, chopped finely (medium size)
1 carrot, thinly sliced
1 stalk celery, thinly sliced
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons flour
1 (28 ounce) can plum tomatoes, drained and chopped
1/2 cup reserved juice from canned tomato
1 tablespoon Worcestershire sauce
1 bay leaf

Steps:

  • In a skillet, heat oil, then brown steak on all sides. Transfer to slow cooker.
  • Reduce heat to med-low, then add onion, carrots, celery, salt and pepper to pan, then cover and cook until veggies are a little softened - about 5 minutes.

3 lb Bottom Round Roast (cut into 3 to 4 steaks, tenderized (top round also works))
2 tbsp Oil
1/2 c Flour
1/4 tsp Salt
1/8 tsp Pepper
2 c Beef Broth (if using bouillon, use 1 tsp per cup of boiling water)
14 oz Can of Crushed Tomatoes ((generally available in 28 oz cans, so use half))
14.5 oz Can of Diced Tomatoes (juices included!)
2 tbsp Worcestershire Sauce
1 c Onion (diced)
1 c Green Bell Pepper (diced)
Garlic Powder (to taste)
Salt and Pepper (to taste)
Fresh Parsley (chopped, for garnish)
Mashed Potatoes
Green Beans
Salt and Pepper (to taste)

Steps:

  • Cut a bottom round roast into 3 to 4 steaks. I find this easiest when it's partially frozen and use a sharp knife. Pound slightly to make all steaks an even thickness and then tenderize to create those holes. If you don't have a meat tenderizer, use a fork.
  • Season each with salt and pepper, then dredge to create a light coating of flour.
  • Heat a large stock pot over medium high heat and add oil. Sear each steak on all sides until golden brown. They will not be fully cooked at this point.
  • Place the steaks into the slow cooker and top with beef broth.
  • Add all of the remaining ingredients for cooking. Cook for 7-8 hours or until the meat is literally fork tender. It should be falling apart.
  • Serve with mashed potatoes and green beans, give a final seasoning of salt and pepper, to taste. Garnish with freshly chopped parsley and spoon over some of that flavorful gravy. Enjoy!

  • Place diced onion and bell pepper in bottom of slow cooker. Trim excess fat from meat then cut into serving-sized pieces. Sprinkle meat lightly with salt and pepper.
  • Add flour to medium mixing bowl then dredge each piece of meat, reserving excess flour. Place meat in slow cooker on top of veggies.
  • Add pureed or diced tomatoes (including juice) and tomato sauce into the bowl containing remaining flour. Whisk until mixture is well combined then stir in remaining ingredients (beef broth, minced garlic, beef bouillon, paprika, pepper, mustard powder and Worcestershire). Pour over meat, stirring to ensure sauce is distributed evenly among the layers of meat and that it is completely submerged in sauce.
  • Cover and cook on low for 7–8 hours. When the dish has finished cooking, carefully remove meat (it will be very tender) from slow cooker then arrange on a platter. Give gravy a good stir, season to taste using salt and pepper then ladle over meat. Serve remaining gravy on the side. Yum!
