SLOW COOKER SHREDDED BEEF TACOS
These tacos have been a family favorite and a reader favorite for 5+ years! They're so easy to make and so flavorful! They taste just like the tacos you order at Mexican restaurants. The shredded beef makes great leftover too.

Steps:
- Heat olive oil in a large pot over medium-high heat. Dab both sides of beef dry with paper towels.
- Season beef with salt and pepper (about 1 tsp salt, 3/4 tsp pepper) and sear in pot until browned on both sides, about 3 minutes each side.
- Transfer beef to a 6 or 7 quart slow cooker. Pour beef broth over roast.
- Sprinkle chili powder, cumin, onion and garlic powder evenly over roast. Cover slow cooker and cook on low heat 8 hours (high heat cooking is not recommend here).
- Remove roast from slow cooker, shred beef (remove fat) and return shredded beef to slow cooker (season with a little more salt if needed).
- Add in lime juice, cover with lid and cook on low an additional 5 - 10 minutes while preparing toppings and tortillas.
- Remove beef from slow cooker with tongs to remove juices when plating or drain in a colander.
- Serve in warmed tortillas with desired toppings.

MEXICAN SLICED STEAK TACOS

- Seed chipotle peppers then pure with adobo sauce into a smooth paste
- Add 4 tablespoons to a large plastic food storage bag
- Place remainder in a small freezer bag, mark it with date and contents and place in freezer for another use
- To the large food storage bag, add the lime juice, honey, Worcestershire, oregano, garlic and vegetable oil
- Mash up the bag with your hands to combine
- Season steak with salt and lots of black pepper
- Drop it in the bag and press out most of the air as you seal up the bag
- Maneuver the marinade evenly around the meat and marinate in the fridge for several hours
- Bring the beef to room temperature
- Preheat the broiler and set an oven rack one notch up from the center
- Shake off excess marinade, place beef on a broiler pan and broil 5 minutes on each side for rare, 12 minutes total for pink center or medium
- Let meat rest 5-10 minutes then thinly slice against the grain
- Dress each portion of sliced steak with more lime juice, cilantro and salt
- Serve with charred hot tortillas and toppings of your choice

- Preheat the oven to broil. You can also use a grill.
- Combine the lime juice and spices. Rub over the steak.
- Broil (or grill) for 5-6 minutes per side for medium-rare, or to your desired doneness. Let rest for 10 minutes and slice thin or chop into small pieces. You can also chop the steak into smaller pieces and cook it in a skillet. It will take 3-5 minutes in a hot skillet with about one tablespoon of oil.
- Warm the tortillas and top with cilantro and your other favorite toppings.

- Cut your beef sirloin into 2 inch strips. Sprinkle garlic powder on top of them, rubbing it in.
- In a skillet over medium high heat, add vegetable oil and beef strips. Brown sirloin strips (takes about 10 minutes), drain grease and set aside.
- Add beef broth and cornstarch to the bottom of the slow cooker and mix so cornstarch is dissolved. You want your beef broth to be hot so the cornstarch is dissolved, I throw mine in the microwave for 30 seconds.
- Add beef strips into the slow cooker on top of broth mixture.
- Add onion, diced tomatoes, cumin, chili powder and salt into the slow cooker mixing to combine all ingredients.
- Cover and cook on HIGH for 2 hours, 30 minutes. Add sliced green peppers and cook an additional 1 hour on HIGH. So the total time is 3 hours, 30 minutes.
- Serve on tortillas or hard shells, add cheese, salsa, lettuce, avocado or whatever else you'd like on top.
