SLOW COOKED PUERTO RICAN PORK (PERNIL)



Slow Cooked Puerto Rican Pork (Pernil) image

Pernil is a traditional Puerto Rican dish that is slow roasted in the oven. Slow cooker pernil is a twist on the traditional and slow cooks a pork shoulder in the crock pot until tender.

4 lb pork shoulder or pork butt
6 garlic cloves, pressed
1/4 teaspoons ground black pepper
1 tablespoon oregano
1 1/2 tablespoons olive oil
1 1/2 tablespoons white vinegar
4 teaspoons salt

Steps:

  • Combine garlic, pepper, oregano, olive oil, vinegar, and salt. Rub pork with garlic mixture and refrigerate overnight or a minimum of 4 hours.
  • When ready drop into the crockpot on low for 8 hrs.
  • Done! Consume with vigor.

4 cloves garlic
1 large onion, quartered
2 tablespoons chopped fresh oregano
1 tablespoon ground cumin
2 teaspoons ground ancho chile pepper
2 teaspoons salt

Steps:

  • 1.Place the garlic, onion, oregano, cumin, chile pepper, salt, and pepper into a blender. Pour in the olive oil and vinegar. Puree until smooth. Spread this mixture all over the pork loin, and place into a slow cooker. 2.Cook on Low until the pork is fork tender, 6 to 8 hours. When ready, cut the pork into chunks, or shred; garnish with lime wedges to serve.

Steps:

  • Pulse garlic, onion, oregano, cumin, chile pepper, salt, and pepper together in a blender, pouring in vinegar and enough olive oil until mixture is pasty. Scrape down sides of the blender as necessary to fully incorporate. Spread this mixture all over the pork loin, and place into a slow cooker.
  • Cook on Low until the pork is fork tender, 6 to 8 hours. When ready, cut the pork into chunks, or shred; garnish with lime wedges to serve.

Steps:

Traditional Puerto Rican Pernil is made with fatty pork shoulder. I made a healthier version using pork loin and the slow cooker. It comes out juicy and flavorful!

2 -3 lbs pork loin roast
12 garlic cloves
1 tablespoon dried oregano
1/4 cup cilantro, chopped
1 teaspoon cumin
1 teaspoon paprika
2 tablespoons kosher salt
1 tablespoon black pepper
1 lime, juice of
1 tablespoon olive oil

Steps:

  • In a mortar and pestle or food processor, make a paste with garlic, oregano, cilantro, cumin, paprika, salt, pepper, lime juice and olive oil.
  • Using a pairing knife, make slits inside the pork loin.
  • Rub the garlic mixture all over the pork loin, making sure to get some of it into the holes you made with the knife.
  • Add a few tablespoons of water to the bottom of a slow cooker. Place the seasoned pork loin inside. Place on low, cover and cook for 4-5 hours, until the pork is tender.
  • Allow pork to rest for thirty minutes before slicing and serving.

  • Using a pointy knife, poke holes into the pork shoulder. Rub the seasoning mixture all over the meat pushing some of the seasoning into the small holes. Cover and place in the refrigerator. Let marinate overnight.
  • The next day, place the pork shoulder on the slow cooker and cover with water. Add enough water to cover at least 3/4 of the meat inside the slow cooker. Cook on low for about 8 hours.
