1 boneless beef chuck roast (3 to 4 pounds)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
1-1/2 pounds sliced fresh shiitake mushrooms
2-1/2 cups thinly sliced onions
1-1/2 cups reduced-sodium beef broth
1-1/2 cups dry red wine or additional reduced-sodium beef broth
1 can (8 ounces) tomato sauce
3/4 cup chopped peeled parsnips
3/4 cup chopped celery
3/4 cup chopped carrots
8 garlic cloves, minced
2 bay leaves
1-1/2 teaspoons dried thyme
1 teaspoon chili powder
1/4 cup cornstarch
1/4 cup water
Mashed potatoes

Steps:

  • Sprinkle roast with salt and pepper. In a Dutch oven, brown roast in oil on all sides. Transfer to a 6-qt. slow cooker. Add the mushrooms, onions, broth, wine, tomato sauce, parsnips, celery, carrots, garlic, bay leaves, thyme and chili powder. Cover and cook on low for 6-8 hours or until meat is tender., Remove meat and vegetables to a serving platter; keep warm. Discard bay leaves. Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth; gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with mashed potatoes, meat and vegetables.

2 jars (4.5 ounces each) sliced mushrooms, drained
3-pound beef boneless rump roast
1 3/4 cups Progresso™ beef flavored broth (from 32-ounce carton)
1 envelope onion-mushroom soup mix (from 1.8-ounce package)
12 French rolls, split

Steps:

  • Place onions and mushrooms in 3 1/2- to 4-quart slow cooker. Top with beef roast. Pour broth over beef. Sprinkle soup mix (dry) over beef.
  • Cover and cook on low heat setting 8 to 10 hours.
  • Remove beef from cooker; place on cutting board. Cut beef into 1/4-inch slices. To serve, fill rolls with beef. Remove onions and mushrooms from cooker, using slotted spoon, and place on beef. Serve juices in cooker in small individual bowls for dipping if desired.

1 tablespoon beef base
1/2 pound sliced fresh mushrooms
1 large onion, coarsely chopped
3 garlic cloves, minced
1 boneless beef chuck roast (3 pounds)
1/2 teaspoon pepper
1 tablespoon Worcestershire sauce
1/4 cup butter, cubed
1/3 cup all-purpose flour
1/4 teaspoon salt

Steps:

  • In a 5- or 6-qt. slow cooker, whisk water and beef base; add mushrooms, onion and garlic. Sprinkle roast with pepper; transfer to slow cooker. Drizzle with Worcestershire sauce. Cook roast, covered, on low 6-8 hours or until meat is tender., Remove roast to a serving platter; tent with foil. Strain cooking juices, reserving vegetables. Skim fat from cooking juices. In a large saucepan, melt butter over medium heat. Stir in flour and salt until smooth; gradually whisk in cooking juices. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Stir in cooked vegetables. Serve with roast.

Savory slow cooker recipe for pot roast with potatoes, carrots, onions, mushrooms and gravy. This recipe is gluten free and uses NO canned soups. It's terrific for company or holiday dinners like Easter, Mother's Day or Father's Day.

2-4 lb. beef chuck roast (without bone)
1 large onion (sliced in rings)
4 oz. can mushrooms (drained)
16 oz. beef broth
Salt & pepper (to taste)
gluten free flour (as needed (or use regular all-purpose flour))
3-4 tbsp. avocado oil
3-4 drops kitchen bouquet seasoning (or more as desired (I used about a half teaspoon))
6 large red potatoes (unpeeled and sliced in half lengthwise)
6-10 carrots (peeled, halved and quartered if really large carrots)

Steps:

  • Sprinkle both sides of roast generously with salt and pepper.
  • Dredge in flour.
  • Brown meat on both sides in oil over medium heat.
  • Place browned meat in slow cooker.
  • Add beef broth, onions and mushrooms.
  • Cook about 3-4 hours on high.
  • Add potatoes and carrots. (Add more if you need more for your family).
  • Continue cooking another hour and a half to two hours until carrots and potatoes are fork tender.
  • Remove carrots, potatoes, onions and mushroom to separate serving bowls. Keep warm.
  • Remove beef roast to platter and slice or chunk down.
  • Pour remaining beef broth mixture from crockpot into a large saucepan.
  • Heat over medium heat until mixture boils.
  • Mix about one-fourth to one-third cup of gluten free flour with about the same amount of water. (Or use regular flour).
  • Whisk to combine.
  • Add flour mixture about a tablespoon at a time to crockpot and keep whisking until all the flour mixture is incorporated.
  • If the gravy is not as thick as you like, repeat adding more flour/water mixture.
  • Add Kitchen Bouquet seasoning and continue whisking until mixture thickens and boils.
  • Season with more salt and pepper, if desired.
  • Stir to combine and serve.

This Slow Cooker Pot Roast With Onion Mushroom Gravy is probably my favourite slow cooker pot roast of all time! You cook it low and slow all day and come home to a delicious meal that is best served on top of mashed potatoes.

1 4 lb chuck or blade roast (strings and packaging removed)
2 tbsp olive oil
1 white onion chopped
2 stalks of celery chopped
1 tbsp minced garlic
1 tsp Worcestershire sauce
1 330 ml bottle of beer (non-alcoholic)
1 10.75 oz. can of cream of mushroom soup
1 9-10 oz. can of mushrooms (drained well (see notes for fresh mushrooms))
1 package of onion soup mix

Steps:

  • Heat a large skillet with 2 tbsp of olive oil on the bottom. Fry the roast until it is browned on all sides. Place into the bottom of your slow cooker.
  • Add in all of the vegetables around the beef roast.
  • In a large measuring cup, whisk together the Worcestershire sauce, beer, soup and soup mix until combined. IF you do not want to use beer, use beef broth instead!
  • Pour the mushroom mixture all over the roast, coating it completely.
  • Place the lid on top of the slow cooker and cook on low for 8-10 hours or until the meat falls apart. The roast is done when you can pull it apart with two forks easily.
  • Take 2-3 cups of the sauce and place it in a saucepan. Bring it to a boil and reduce for 5-6 minutes.
  • Whisk together 1 tbsp of cornstarch with 1/4 cup water. Whisk into the boiling sauce and cook until it thickens.
  • Shred the roast beef and serve with gravy.
