2 (6 1/2 ounce) cans clams
1/4 lb salt pork or 1/4 lb bacon
1 medium onion, chopped
3 -4 potatoes, pared and cubed
1 1/2 cups water
1 3/4 teaspoons salt
1/8 teaspoon pepper
2 cups half-and-half or 2 cups milk
1 1/2-2 tablespoons cornstarch (optional)

Steps:

  • Saute pork or bacon and onion until golden brown;drain.
  • Put clams in crock pot with bacon.
  • Add all remaining ingredients, except milk or half-and-half.
  • Cover and cook on High 3-4 hours.
  • Add 1 cup milk or half-and-half and cornstarch last hour of cooking.
  • Add remaining milk or half and half before serving.
  • STOVE TOP INSTRUCTIONS: Place all ingredients EXCEPT milk and cornstarch in kettle.
  • Simmer on low heat for 45 minutes.
  • Mix cornstarch into milk and add to kettle.
  • DO NOT BOIL.
  • Heat to warm, then serve.

1 (6 ounce) can minced clams
4 slices bacon, cut into small pieces
3 potatoes, peeled and cubed
1 cup chopped onion
1 carrot, grated
1 (10.75 ounce) can condensed cream of mushroom soup
¼ teaspoon ground black pepper
2 (12 fluid ounce) cans evaporated milk

Steps:

  • In a small bowl, drain the clams and reserve the juice. Add water to the juice as needed to total 1 3/4 cups liquid. Cover the clams and put in refrigerator for later.
  • In a slow cooker combine the bacon, potatoes, onion, carrot, soup, ground black pepper, evaporated milk and reserved clam juice with water. Cover and cook on low setting for 9 to 11 hours OR on high setting for 4 to 5 hours. Add the clams and cook on high setting for another hour.

Steps:

  • In a 3 1/2- or 4-quart slow cooker, combine celery, onions, potatoes, carrots, the water, clam juice, broth, thyme and pepper (see Tip).
  • Cover and cook on low-heat setting for 7 hours or on high-heat setting for 3 1/2 hours.
  • If using low-heat setting, turn to high-heat setting. In a medium bowl, combine evaporated milk and cornstarch. Stir milk mixture, clams and sherry (if desired) into cooker. 4 1/2 C potatoes
1 Tbsp olive oil
1 tsp garlic (minced)
1 C yellow onion (chopped)
1/2 C celery (chopped)
4: 6 oz clams (see notes)
8 oz clam juice (see notes)
1 tsp salt
1/2 - 1 tsp pepper
1/4 tsp dried thyme
1/4 tsp red pepper flakes (optional)
1/4 C all purpose flour
3 1/4 C half and half
5-6 slices bacon
1/2 Tbsp bacon grease (optional)

Steps:

  • Prepare onion, celery and garlic. Heat olive oil in a large skillet. Add vegetables, cooking over medium heat until onion is translucent. Add garlic and, thyme and optional red pepper flakes, cooking for an additional 1-2 minutes or until fragrant. Transfer to the bowl of a 6 quart slow cooker.
  • Peel and chop potatoes into small bite sized pieces. Add to the slow cooker along with clams, juice and seasonings. Stir to combine. Cover and begin cooking on high for 5 hours or low for 10.
  • Meanwhile, cook bacon in a large skillet over medium heat. Remove 1/2 Tb bacon grease, transfering to the slow cooker, if desired. Chop bacon, reserving a small portion for topping chowder later. Toss remaining larger portion of chopped bacon to the slow cooker. Return lid and continue to cook.
  • When 30 minutes remain in the cook time, add flour to half & half, whisking well until smooth. Add to the slow cooker, stirring wel lto combine. Replace lid and continue to cook until thickened.
  • Divide among bowls serving warm and sprinkling with bacon.

Steps:

  • In a Dutch oven, cook bacon over medium heat until crisp. Remove to paper towels to drain; set aside. Saute celery and onion in the drippings until tender. Add garlic; cook 1 minute longer. 2 lb potatoes (roughly 5 cups, peeled and chopped into bite size pieces)
3 cloves garlic (minced)
1 C onion (chopped)
1 C celery (chopped)
1 : 7oz can corn (drained)
1 1/2 tsp salt
1 1/2 tsp white pepper or ground black pepper
1/4 tsp red pepper flakes (optional)
2 bay leaves
1 1/2 tsp thyme
4 : 6oz cans clams with juice
1 : 8oz bottle clam juice
6 slices bacon (¼ cup reserved if desired for topping)
1-2 Tbsp bacon grease (optional)
2 Tbsp cornstarch
2 C heavy cream

Steps:

  • Add vegetables, seasonings, clams and all clam juice to the slow cooker. Cover and begin cooking on high for 4 hours or low for 8.
  • Cook and chop bacon, reserving ¼ cup as optional toppings. Add remaining bacon and optional bacon grase to slow cooker. Stir and replace cover.

The recipe calls for just clams and juice, but I also toss in 3-4 ounces of fish and/or seafood if it is available...you might have to add a bit of extra liquid if it is too thick. I also use cut up turkey bacon instead of pork bacon for even lower fat. Freezes well.

1/2 pound bacon, diced into 1/4 inch strips
3 cups half-and-half
1 1/2 teaspoons basil
1 1/2 teaspoons thyme

Steps:

  • Saute the bacon in a skillet until golden brown, then drain the excess grease off and place the bacon into a 4 quart slow cooker (or larger). Drain the clam juices from the cans into a measuring cup until you have collected 2 cups of clam juice. If you do not have 2 cups, either add more clam juice (available at any grocery story) or water until you have a combined total of 2 cups of liquid. Pour this liquid into the pot, and place the clams into the fridge. Add the cream of mushroom soup, potatoes, celery, garlic, onion and spices to the pot, leaving only the clams and half-and-half out. Mix thoroughly, then cover and cook on high for four hours. After four hours, place the half-and-half and clams into a bowl, then slowly ladle the soup into the bowl until the half-and-half is heated up. Combine everything into the slow cooker, then cook on high for one hour, or until the soup begins bubbling. Serve immediately. Best served with a sprinkling of chopped parsley and oyster crackers.
