Slow Cooker Navy Bean Soup With Kielbasa image

Adapted from a recipe posted at Budget Bytes. The long slow cooking means you don't need to pre-soak the beans.

1 lb dried navy beans
1 -2 teaspoon table salt, divided
2 tablespoons olive oil
4 garlic cloves, minced
1 medium onion, diced
1/2 lb carrot, sliced into thin rounds
4 celery ribs, sliced
1 bay leaf
1 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/2 teaspoon smoked paprika
1 teaspoon fresh ground black pepper
14 -16 ounces kielbasa, sliced 1/2-inch thick
6 cups water

Steps:

  • Sort through beans, removing any debris or stones. Rinse briefly and add beans to a 5-qt or larger slow cooker. Add 1 tsp salt.
  • Add all remaining ingredients to slow cooker. Cover and cook on low for 8 hours.
  • Mash 1/4 - 1/3 beans and vegetables (use a potato masher, food mill or blender - don't use an immersion blender, which will grind up the sausage with it) and stir in well. Taste and add additional salt by 1/4 tsp until it tastes good to you. Serve hot with crusty bread.

4-1/2 cups water
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
2 medium green peppers, chopped
2 medium onions, chopped
2 celery ribs, chopped
1 medium zucchini, sliced
2 teaspoons chicken bouillon granules
2 garlic cloves, minced
2-1/2 teaspoons chili powder
2 teaspoons dried basil
1-1/2 teaspoons salt
1/2 teaspoon pepper
2 bay leaves
3/4 pound smoked kielbasa or smoked Polish sausage, halved lengthwise and sliced

Steps:

  • In a soup kettle or Dutch oven, combine all ingredients except the sausage. Bring to a boil. Reduce heat; cover and simmer for 1 hour. Add sausage and heat through. Discard bay leaves.

This is my adaptation of a recipe I found in "The Unwatched Pot". Total comfort food. Everyone in the family likes this one. It freezes very well and is creamier when it thaws.

2 cups dried navy beans
1/2 cup onion, chopped
3 stalks celery, diced
1 ham hock
1 teaspoon dried sage
1 bay leaf
1 garlic clove, minced
1/2 teaspoon black pepper
1 (16 ounce) can chicken broth

Steps:

  • Place all of the ingredients in the crock pot.
  • Add enough water to generously cover the beans.
  • Cook on low for 8-10 hours or on high for 5-6.
  • Remove ham hock.
  • Discard fat and bones and return the meat to the soup.

1 lb fully cooked kielbasa sausage, cut in half lengthwise, then into 1/4-inch slices
2 tablespoons chopped fresh parsley

Steps:

  • Spray 3- to 4-quart slow cooker with cooking spray. In cooker, mix all ingredients except sausage and parsley.
  • Cover; cook on Low heat setting 8 to 9 hours.
  • Stir in sausage and parsley. Cover; cook on Low heat setting 30 minutes longer or until sausage is hot.
