kosher salt
¼-½ cup flour, as needed (optional)
3 tablespoons olive oil
½ cup beef broth
1 packet (1 ounce) Hidden Valley® Original Ranch Salad® Dressing & Seasoning Mix
1 stick (4 ounces) butter
8 pepperoncini

Steps:

  • Season chuck roast generously with salt and pepper. Rub enough flour over the roast to evenly coat the surface.
  • In a large skillet pan, warm oil over high heat until very hot but not smoking. Sear the roast until browned and crusty on all sides, about 10 minutes total.
  • Place roast in the pot of a slow cooker. Pour beef broth around the roast, then sprinkle with seasoning mix, top with butter, and scatter pepperoncini over and around the roast.
  • Cover the slow cooker and set on low heat for 7 to 8 hours. When ready, shred the meat, mixing with the sauce in the slow cooker, and serve over bread, egg noodles, or potatoes.Time-saving tip: In a rush? Swap the flour for one 1-ounce package of dry au jus gravy mix and skip the step for browning the meat.

1 packet ranch dressing mix
1 packet Au Jus mix
½ cup salted butter 1 stick

Steps:

  • Heat up a large non-stick pan on high.
  • Add oil to hot skillet.
  • You want it really hot here to brown or "sear" the beef quickly.
  • Take a paper towel and make sure you dry both sides of the pot roast.
  • Season with a little bit of pepper.
  • Once the skillet is nice and hot, add the roast.
  • Allow the roast to cook for about 2-3 minutes until it is golden brown.
  • Using tongs, flip the meat over and sear the other side of the roast for another 2-3 minutes.
  • Transfer meat to slow cooker.
  • Sprinkle packets of dry ranch dressing and Au Jus over pot roast.
  • Top with a stick of butter then place peppers on and around roast.

salt and pepper, (to taste)
1 packet ranch dressing mix
1 packet dry onion soup mix
1/2 cup (1 stick) salted butter
8 peperoncini peppers

Steps:

  • Heat up a large skillet on high. Add oil to hot skillet. You want it really hot here to brown or "sear" the beef quickly. This can also be done in your slow cooker if you have the sear or saute option.
  • Take a paper towel and make sure you dry both sides of the pot roast. Season with a little bit of salt and pepper. Once the skillet is nice and hot, add the roast. Using tongs, flip the meat over and sear the other side of the roast for another 2-3 minutes.
