1 can (4.5 oz) Old El Paso™ chopped green chiles, drained
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 cup shredded Monterey Jack cheese (4 oz), if desired

Steps:

  • In 3 1/2- to 4-quart slow cooker, mix pork, salsa and chiles.
  • Cover; cook on Low heat setting 6 to 8 hours.
  • Stir in beans. Cover; cook on Low heat setting about 5 minutes or until beans are hot. Sprinkle with cheese.

3 carrots, cut into 2-inch chunks
2 stalks celery, cut into 2-inch chunks
3 cloves garlic, smashed
1 2-inch piece ginger, peeled and grated
1/3 cup all-purpose flour
Kosher salt and freshly ground pepper
3 bay leaves
1 bone-in pork shoulder or pork sirloin roast (2 to 2 1/2 pounds)
1 teaspoon dried thyme
1/2 teaspoon ground allspice
1 14-ounce can diced tomatoes

Steps:

  • Combine the potatoes, carrots, celery, garlic and ginger in a slow cooker. Toss in half of the flour and season with salt and pepper. Scatter the bay leaves over the vegetables.
  • Season the pork generously with salt and pepper, sprinkle with the thyme and allspice and toss with the remaining flour to coat. Place the pork over the vegetables in the slow cooker. Add 2 cups water and the tomatoes, cover and cook on low 8 hours.
  • Discard the bay leaves. Remove the pork roast and slice or pull the meat off the bone into large pieces. Serve in bowls with the vegetables and broth.

Steps:

  • Sprinkle pork with salt and pepper; transfer to a 4-qt. slow cooker. Add carrots, celery and onion. In a small bowl, whisk broth and tomato paste; pour over vegetables. This slow-cooker stew is one of those recipes that's pretty darn tough to mess up. As long as your pork and veggies have all day to cook 'til tender, you'll be alright.

3 medium potatoes, unpeeled
4 carrots
1 medium onion
1 medium zucchini
1 1/2 pound pork
1 can (16 ounce size) diced tomatoes, undrained
2 cups water
1 tablespoon beef bouillon granules
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
3 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • Scrub the potatoes well then cut into cubes. Peel the carrots and slice into 1/2-inch rounds. Dice the onion and zucchini. Place the vegetables in the bottom of the crock pot. Cut the pork into 1-inch cubes and place on top of the vegetables. Combine the tomatoes, water, beef bouillon granules, salt, pepper, and paprika in a small bowl. Pour over the pork and vegetables (do not stir). Cover the crock pot and cook on low heat for 4-6 hours or until the pork and vegetables are tender. Increase the heat to high. Mix together the cornstarch and cold water until smooth. Stir into the stew and cook until the sauce has thickened, about 20-30 minutes. Serve hot.

1 tsp black pepper

3/4 cup juice from orange (2 oranges)
1 tbsp dried oregano
2 tsp ground cumin
1 tbsp olive oil

Steps:

  • Rinse and dry the pork shoulder, rub all over with salt and pepper.
  • Combine the Rub ingredients then rub all over the pork.
  • Place the pork in a slow cooker (fat cap up), top with the onion, jalapeño, minced garlic (don't worry about spreading it) and squeeze over the juice of the oranges.
  • Slow Cook on low for 10 hours or on high for 7 hours. (Note 2 for other cook methods)
  • Pork should be tender enough to shred. Remove from slow cooker and let cool slightly. Then shred using two forks.
  • Optional: Skim off the fat from the juices remaining in the slow cooker and discard.
  • If you have a lot more than 2 cups of juice, then reduce it down to about 2 cups. The liquid will be salty, it is the seasoning for the pork. Set liquid aside - don't bother straining onion etc, it's super soft.

2-3 pounds pork roast cut into 1-inch cubes (see note)
1 yellow onion (sliced thinly)
4 cloves garlic (finely minced)
1 can (19-ounces) red or green enchilada sauce (see note)
1 jar (16-ounces) salsa verde, regular or thick 'n chunky
1 cup chicken broth
1 can (4-ounces) green chiles
2 cans (15.5 ounces each) white hominy, drained
2 teaspoons dried oregano
1/2 teaspoon salt
1/2 teaspoon cayenne pepper (more or less to taste)
1/2 cup chopped fresh cilantro

Steps:

  • Heat the oil in a 10- or 12-inch skillet or saucepan over medium heat. Season the pork pieces lightly with salt and pepper. Add the pork in a single layer and brown on all sides (may need to do this in batches so the pan doesn't get crowded - otherwise the meat steams instead of browning nicely). Transfer the meat to a 6- or 8-quart slow cooker.
  • To the skillet, add the onions and cook on medium-low or medium heat until the onions start to soften, 2-3 minutes. Add the garlic and cook another minute or so. Transfer the onions and garlic to the slow cooker.
  • Add the enchilada sauce, salsa verde, broth, green chiles, drained hominy, oregano, salt, and cayenne pepper. Give the mixture a good stir.
  • Cover and cook on high for 6-7 hours (or low for 8-9 hours) until the pork is fall apart tender. Thin with broth, if desired, and heat through.
  • Stir in the cilantro. Season to taste with additional salt and pepper, to taste. Serve with shredded cabbage, sliced avocado, fresh lime wedges, tortilla chips, shredded cheese, etc.

1 garlic clove, minced
1 cup chopped onion
1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrained
1 to 2 cans (4 ounces each) chopped green chilies
1 tablespoon minced fresh cilantro
2 teaspoons dried oregano
2 bay leaves
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • In a large skillet that has been coated with cooking spray, brown pork and garlic. Add onion, saute until tender. Stir in tomatoes, chilies, cilantro, oregano and bay leaves; cover and simmer for 40 minutes or until pork is tender and no longer pink., In a bowl, combine cornstarch and water until smooth; stir into skillet. 1 teaspoon salt
1 teaspoon ground black pepper
2 tablespoons olive oil
1 large onion, chopped
1 ¼ cups diced green chile pepper
1 (5 ounce) bottle hot pepper sauce
1 teaspoon chili powder
1 teaspoon cayenne pepper
1 teaspoon garlic powder
2 cups water, or as needed

Steps:

  • Season pork roast with salt and ground black pepper on all sides.
  • Heat olive oil in a large skillet over medium-high heat. Cook roast in hot oil until browned, 3 to 5 minutes per side; transfer to a slow cooker.
  • Top roast with chopped onion, chile pepper, hot pepper sauce, chili powder, cayenne pepper, and garlic powder. Pour enough water into the slow cooker to come 1/3 the way up the sides of the roast.
  • Cook on High for 6 hours, adding more water if mixture becomes too dry. Reduce heat to Low and cook until meat is tender and falling apart, 2 to 4 hours more. Transfer roast to a bowl and shred meat using two forks. Return meat to slow cooker with 2 cups cooking liquid.

5 lbs country-style boneless pork ribs, trimmed

2 tablespoons vegetable oil
2 onions, chopped medium
2 tablespoons chili powder
5 garlic cloves, minced
1 (14 1/2 ounce) can diced tomatoes
5 cups low sodium chicken broth
1 (14 ounce) can white hominy or 1 (14 ounce) can yellow hominy, rinsed
2 tablespoons minced fresh oregano (or 2 t. dried)
1/4 cup minced fresh cilantro
1 tablespoon fresh lime juice

Steps:

  • Dry the pork with paper towels, then season with salt and pepper.
  • Heat 2 teaspoons of the oil in a 12-inch skillet over med-high heat until just smoking.
  • Brown half of the pork, about 10 minutes, then add to the slow cooker.
  • Return the skillet to med-high heat and repeat with 2 more teaspoons oil and the remaining pork.
  • Add the remaining 2 teaspoons oil to the empty skillet and heat over medium heat until shimmering.
  • Add the onions, chili powder, and 1/4 teaspoon salt.
  • Cook until the onions are softened, about 5 minutes.
  • Stir in the garlic and cook for 15 seconds.
  • Stir in the tomatoes with their juice, scraping up any browned bits.
  • Bring to a simmer, then pour into the slow cooker.
  • Add the broth, hominy, and oregano to the slow cooker.
  • Cover and cook on LOW for 7-8 hours or on HIGH for 5 -6 hours, until the meat is tender.
  • Transfer the meat to a large bowl and let cool.
  • Let the cooking liquid settle for 5 minutes, then use a wide spoon to skim the fat off the surface.
  • When the meat is cool enough to handle, shred it using your fingers, discarding any gristle; add meat back to cooker.
