INSTANT POT LOW CARB CORNED BEEF AND CABBAGE

Number Of Ingredients 9

4 pounds corned beef brisket
6 cups water
2 tsp black peppercorns
4 cloves garlic
2 tsp dried mustard
1 cabbage (cut into wedges or 8 cups)
1 cup onions (sliced)
1 cup carrots (sliced into thirds)
1 cup celery stalks (chopped)

Steps:

  • Place beef brisket into the pot. Discard the spice packet that comes with the meat.
  • Cover the beef with water, add more to cover if needed.
  • Add the spices into the pot.
  • Cover and set on "Meat/Stew" for 60 minutes on high.
  • Hit Cancel then use the Natural Release method, about 20 minutes.
  • Remove cover carefully, watch for steam, remove brisket and keep warm.
  • Add the vegetables to the pot and press "Soup" setting for 15 minutes.
  • Use the "Quick" Release method.
  • Uncover and add the beef back to the pot to warm through.
  • Enjoy immediately!

Slow Cooker Keto Corned Beef Cabbage is the low carb and paleo-friendly version of the traditional Irish dish but I made it in the slow cooker and used a healthier, preservative free, nitrate free, uncured brand of corned beef.

3 lb corned beef brisket with spices
½ large onion (chopped)
1 large carrot (chopped)
3 ribs celery stalks (chopped)
½ head of green cabbage (chopped in quarters)
4 cups water (or enough to cover brisket)

Steps:

  • Add corned beef brisket and the spices to a slow cooker.
  • Pour 4 cups or enough water over brisket to just cover the whole roast.
  • Add onions, carrots and celery. Cover and slow cook on low for 6 to 8 hours or on high for 4 to 5 hours.
  • Add cabbage the last half hour of cooking time, Cover and continue to cook the remaining 30 minutes.
  • Remove vegetables and cabbage with a slotted spoon from crockpot to drain excess liquid.
  • Remove corned beef and slice against the grain. Serve.

2 celery stalks, cut into 3-inch pieces
3 carrots, cut into 3-inch pieces
1 small yellow onion, cut into 1-inch wedges (root end left intact)
1/2 pound small potatoes, halved if large
6 sprigs thyme
1 corned beef brisket (about 3 pounds), plus pickling spice packet or 1 tablespoon pickling spice
1/2 head Savoy cabbage, cut into 1 1/2-inch wedges
Grainy mustard, for serving

Steps:

  • In a 5-to-6-quart slow cooker, place celery, carrots, onion, potatoes, and thyme. Place corned beef, fat side up, on top of vegetables and sprinkle with pickling spice; add enough water to almost cover meat (4 to 6 cups). Cover and cook on high until corned beef is tender, 4 1/4 hours (or 8 1/2 hours on low). Arrange cabbage over corned beef, cover, and continue cooking until cabbage is tender, 45 minutes (or 1 1/2 hours on low). Thinly slice corned beef against the grain and serve with vegetables, cooking liquid, and grainy mustard.

Steps:

  • Place the corned beef in a slow cooker.
  • Sprinkle with the seasonings then pour in the water.
  • Add the celery, carrot, and onion then cover the slow cooker.
  • Cook on low heat for 6 to 8 hours or on high heat for 4 hours.
  • Add the cabbage during the last 30 minutes of cooking.
  • Remove the corned beef to a cutting board and slice against the grain.
  • Use a slotted spoon to remove the vegetables into a serving dish.
  • Serve the corned beef with the vegetables on the side.
