SLOW COOKER TURKEY BREAST RECIPE
Great recipe for when you need a smaller amount of turkey. Perfect for small Thanksgiving or Christmas get togethers.

- THAW: Be sure to thaw your turkey breast ahead of time. This can take about 36-48 hours.
- Remove the thawed turkey from its packaging. Rinse off any liquids that are in the cavity. Pat dry with paper towels. Place the turkey in the slow cooker. I usually have to place the turkey on its side for it to be able to fit.
- Pour over the melted butter, then sprinkle over the seasonings.
- Cover and cook on low for 7 hours without opening the lid during the cooking time.
- Let the turkey rest for about 20 minutes before carving. You can use a bread knife, a sharp kitchen knife, or an electric knife.
- If you are going to carve this, then keep it warm in the slow cooker, leave some of the drippings with the meat, or chicken broth to keep it moist. You can keep the turkey on the warm setting for about 2 hours if you add drippings to keep the turkey moist. If you are worried that your turkey isn't done, it should read 165 degrees Fahrenheit on a meat thermometer.

- Brush turkey with oil. Combine the garlic, seasoned salt, paprika, Italian seasoning and pepper; rub over turkey. Transfer to a 6-qt. slow cooker; add water. Lemon-Garlic Turkey Breast: Combine 1/4 cup minced fresh parsley, 8 minced garlic cloves, 4 teaspoons grated lemon zest, 2 teaspoons salt-free lemon-pepper seasoning and 1-1/2 teaspoons salt; rub over turkey breast. - Rinse the turkey breast and pat dry. Cut off any excess skin, but leave the skin covering the breast. Rub onion soup mix all over outside of the turkey and under the skin. Place in a slow cooker. Cover, and cook on High for 1 hour, then set to Low, and cook for 7 hours.

- Coat slow cooker bowl with nonstick cooking spray.
- Place turkey in bottom and pour broth over top.
- Mix together curry powder, cayenne pepper and salt; sprinkle over turkey.
- Scatter onion, ginger and cilantro leaves over turkey.
- Cover and cook on low for 6 hours.
- Add chickpeas during last 30 minutes of cooking.
- Remove turkey to a cutting board and cover.
- Gradually whisk yogurt into slow cooker bowl; stir in chopped cilantro.
- Allow sauce to heat through.
- Slice turkey and serve with cooked rice and the yogurt and chickpea sauce.
