This is a dish that my aunt gave me. It takes awhile to make, but it is worth it. Hope you like it. Serve over spaetzle or rice.

2 pounds beef chuck roast, cubed
1 large onion, diced
½ cup ketchup
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar
2 teaspoons salt
2 teaspoons Hungarian sweet paprika
½ teaspoon dry mustard
1 ¼ cups water, divided
¼ cup all-purpose flour

Steps:

  • Place beef in slow cooker, and cover with onion. In a medium bowl, stir together ketchup, Worcestershire sauce, brown sugar, salt, paprika, mustard, and 1 cup water. Pour mixture over beef and onions.
  • Cover, and cook on Low for 9 to 10 hours, or until meat is tender.
  • Mix 1/4 cup water with flour to form a paste, and stir into goulash. Cook on High for 10 to 15 minutes, or until sauce thickens.

4 tablespoon olive oil
2 ½ pounds stewing beef (lean, cut into 1 inch pieces)
1 teaspoon salt (or to taste)
1 teaspoon pepper (or to taste)
2 large onions (roughly chopped)
5 cloves garlic (minced)
3 tablespoon sweet paprika
1 teaspoon caraway seeds (ground)
1 teaspoon oregano (dried)
3 bay leaves
1 teaspoon brown sugar
½ cup tomato sauce
2 tablespoon balsamic vinegar
4 cups beef broth (no salt added)
2 tablespoon parsley (chopped, for garnish)

Steps:

  • Heat a large deep skillet or Dutch oven over high heat then add the olive oil.
  • When the oil is hot add the stewing beef. Season with salt and pepper and sear the beef until it starts to brown. The beef will release liquid so continue searing on high heat, and the liquid will evaporate. Alternatively you could drain all the liquid.
  • Add the onions and garlic to the skillet and cook for about 5 minutes until the onions soften and become translucent. Turn the heat down to medium-high.
  • Add the paprika, caraway seeds, oregano, bay leaves and brown sugar to the skillet. Stir everything together and cook for 30 seconds.
  • Add the tomato sauce, balsamic vinegar, beef broth and stir. Bring to a boil, then cover and cook on low for about 2 hours or until the beef is fork tender, stirring occasionally. The liquid will reduce down a lot as the beef cooks, so feel free to add more water as needed.
  • Taste for seasoning and adjust with salt and pepper if needed.
  • Garnish with chopped parsley and serve over noodles or mashed potatoes.

2 lb beef stew meat, cut into 1-inch pieces
1 large onion, sliced
1 3/4 cups Progresso™ beef-flavored broth (from 32-oz carton)

2 cloves garlic, finely chopped
1 tablespoon Worcestershire sauce
1 tablespoon paprika
1 teaspoon salt
1/4 teaspoon caraway seed, if desired
1/4 teaspoon pepper
1/4 cup cold water
3 tablespoons Gold Medal™ all-purpose flour
1 medium green bell pepper, cut into strips
8 cups hot cooked noodles

Steps:

  • In 10-inch skillet, heat oil over medium-high heat. Cook beef in oil about 10 minutes, stirring occasionally, until brown; drain.
  • Spray 3 1/2- to 6-quart slow cooker with cooking spray. In slow cooker, place beef and onion. In medium bowl, mix broth, tomato paste, garlic, Worcestershire sauce, paprika, salt, caraway seed and pepper; stir into beef mixture.
  • Cover; cook on Low heat setting 8 to 10 hours (or High heat setting 4 to 5 hours) or until beef is tender.
  • In small bowl, stir water and flour until well mixed; gradually stir into beef mixture. Stir in bell pepper. Increase heat setting to High. Cover; cook 30 minutes longer. Serve goulash over noodles.

3 tbsp olive oil
2kg braising or stewing steak, cut into chunks
2 large onions, finely chopped
4 mixed peppers, cut into 4cm chunks
3 garlic cloves, crushed
2 tbsp flour
2 tsp caraway seeds
2 tsp hot smoked paprika
1 tbsp sweet smoked paprika, plus extra to serve
4 tbsp tomato purée
4 large tomatoes cut into small chunks
400-500ml beef stock
300ml soured cream
small bunch of parsley, chopped

Steps:

  • Heat the slow cooker to low and heat 2 tbsp oil in a deep frying pan over a medium heat. Season and sear the beef in batches until brown on all sides. Transfer to a plate.
  • Put the remaining oil in the pan and fry the onions for 10 mins until lightly golden. Add the peppers and garlic, and fry for another 5-10 mins, then stir in the flour and all of the spices. Cook for 2 mins more, then stir in the tomato purée, tomatoes and 400ml beef stock. Season well. Bring the mixture to a simmer, then tip into the slow cooker with the seared beef. Add the remaining stock, if needed, to cover the meat completely. Cover and cook for 6-7 hrs until the beef is tender and the sauce has thickened slightly.
  • Season to taste, then swirl the soured cream and most of the parsley through the stew. Scatter over the remaining parsley and some sweet smoked paprika, then serve with small roasted potatoes or brown rice, if you like.

Steps:

  • Heat oil in a nonstick skillet over medium-high heat until simmering. Add onion, paprika, salt, tomato paste, garlic, and cumin. Cook, stirring often until the onions are softened and lightly browned (about 8-10 minutes).
  • Stir in cornstarch. Mix until the cornstarch is evenly distributed.
  • Add beef broth and stir until the mixture is thickened, scraping up any browned bits (about 2-3 minutes).

1 kg beef (flat cut brisket or bavette steaks)
1 white onion (sliced)
1 large red pepper (sliced)
1 large green pepper (sliced)
3 garlic cloves (crushed)
400 g chopped tomatoes
4 tbsp tomato paste
1½ beef stock cube
300 ml hot water
150 ml red wine
1½ tsp caraway seeds
1 tbsp paprika
2 tbsp smoked paprika
2 bay leaves
1½ tsp salt
1 tsp ground black pepper
2 tbsp oil
4 tbsp flour (corn flour)
1 tsp sugar
natural yogurt (to serve)

Steps:

  • Cut the beef into large chunks and place in a bowl. Pour over 1 tbsp of oil and season with ½ tsp of salt and pepper then mix to ensure all of the meat is coated. Place into a hot pan and cook until the outer edges of the meat are sealed (approximately 1- 2 minutes). Transfer to the slow cooker.
  • Now pour the caraway seeds into the same pan on the stove along with 1 tbsp of oil. Toast the seeds over a high heat stirring continuously for 1 minute to release their flavour. Then add the red wine and cook for 2 minutes to 'cook off' the alcohol. Transfer the red wine and caraway to the slow cooker along with the beef.

  • Add the chopped tomatoes, tomato paste, stock cubes dissolved in the hot water, sugar and bay leaves and stir through. Turn the cooker onto low and cook for 8 hours.

3 carrots, peeled and sliced into 1/2 inch pieces
2 large onions, thinly sliced
6 cloves fresh garlic, minced
2 1/2 cups beef broth
2 6-oz cans tomato paste
2 Tbsp Hungarian paprika (sweet or hot depending on how you like the heat. I like to use smoked paprika for a nice twist!)
2 tsp finely shredded fresh lemon peel
1 tsp salt
1 tsp caraway seed
1/2 tsp black pepper
2 bay leaves
1 red or green bell pepper, cut into bite sized pieces
1/2 cup dry red wine
Hot, cooked egg noodles cooked to package directions
Sour cream or yogurt for garnish

Steps:

  • In a large slow cooker crock, combine meat, carrots, onions and garlic. In another mixing bowl, combine beef broth, tomato paste, paprika, lemon zest, salt , caraway seed, and black pepper. Whisk until smooth. Stir into the meat and vegetable mixture, and add the bay leaves. (You can do this part the night before you cook it, and just put it in the refrigerator) Cover the crock, and cook on low-heat setting for 8-10 hours. You really can't over-do it. Everything will be nice and tender. About 30 minutes before serving, turn the heat to the high setting. Stir in the sweet pepper strips and the red wine. Cover and cook for 30 minutes more. Taste and adjust seasoning. Discard the bay leaves. Serve over hot buttered noodles with a dollop of sour cream or yogurt.

  • Melt the pork fat in a large deep sauté pan over medium-high heat. Add the onions and brown them for 5 to 7 minutes.
  • Turn up the heat, add the beef and season with salt and pepper. Sear the beef on each side, this will take 3 to 4 minutes. Add the garlic, mix and sauté for 30 to 45 seconds.
  • Add the Hungarian red pepper and sauté for 3 to 5 minutes, until slightly softened. Turn off the heat, add the Hungarian paprika and mix thoroughly. Let the residual heat toast the paprika.

  • Put the flour into a large bowl, season with salt and freshly ground black pepper, then toss the cubes of beef in the flour to coat and shake off any excess.
  • Heat 2tbsp of the oil in a large pan and quickly fry the meat in small batches until browned on all sides. Transfer to the beef to a slow cooker (don't turn the cooker on at this point).
