- Whisk together first 4 ingredients. Place a third of the potatoes in a greased 5- or 6-qt. slow cooker; layer with a third of each of the following: ham, onion and cheese. Repeat layers twice. Pour egg mixture over top. Refrigerate, covered, overnight., Cook, covered, on low 4-5 hours, until casserole is set and edges begin to brown. Turn off slow cooker. Remove insert; let stand, uncovered, 30 minutes before serving.

Steps:
- Line sides of 4- to 5-quart slow cooker with foil that has been folded into thirds; spray with cooking spray. (See tip.)
- In medium bowl, beat eggs, half-and-half, salt, black and red pepper with whisk. Reserve 3/4 cup Cheddar cheese and 2 tablespoons green onions; set aside. In small bowl, stir together remaining cheeses.
- Layer half of the potatoes, spinach, ham, remaining green onions and cheese in slow cooker. Repeat layers. Pour egg mixture over layers.
- Cover; cook on Low heat setting 4 to 5 hours or on High heat setting 2 1/2 to 3 hours or until temperature reaches 160°F in center and egg mixture is set.
- Sprinkle reserved cheese and green onions over top of casserole. Cover; cook 10 minutes longer or until cheese is melted. Remove foil before serving by loosening edges with table knife.

- Add the butter to a slow cooker bowl and let it melt. Alternatively, melt some butter using the Saute function of an Instant Pot. Spray the bowl with additional non-stick spray.
- Add the ham, and green onions to the bowl.
- Beat the eggs and cream together in a jug, then pour it over the ham.
- Add the cheese and black pepper, then stir well to mix.
- Cook on high for 1 hour and stir well to ensure even cooking (use the slow cooker function if you're using an Instant Pot).
- Cook on high for another 15-30 minutes, depending on how firm you prefer the eggs to be cooked.

Cooks while you sleep! Some fun variations of this recipe: before cooking (during prep) you can add chunks of sourdough bread, diced chiles, salsa, and/or diced green onions. You can use sage or regular sausage in place of the maple sausage, if desired.

- Spray the crock of a slow cooker with cooking spray. Spread hash browns to cover the bottom of the slow cooker crock.
- Whisk eggs, milk, mustard, salt, and black pepper together in a bowl.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Spread sausage over hash browns and spread Cheddar cheese over sausage. Pour egg mixture over cheese.
- Cook on Low for 6 to 8 hours.

Steps:
- Gather the ingredients.
- Put half of the ham, potatoes, and onion in the crock pot. Sprinkle with salt and pepper, and then add 1 cup of the grated cheese.
- Add the remaining ham, potatoes, and onion, and sprinkle lightly with more salt and pepper.
- In a bowl, combine the condensed soup with the milk.
- Spoon the soup mixture over the potatoes and top with the remaining 1/2 cup of cheese.
- Sprinkle with the paprika.
