This easy Slow Cooker Ham & Bean Soup is a big bowl of warm comfort, for those chilly nights, made with dry beans and a store-bought ham steak or leftover ham!

Steps:
- Rinse and drain beans and place them in the bottom of a large (8-quart) slow cooker. Add all remaining ingredients and stir.
- Cover and cook on low for 7 to 8 hours or until the beans are tender.
- Season to taste as needed with salt and pepper. Serve hot with a hunk of warm bread.

This was a spur of the moment recipe I made to use the ham bone left from Easter. It's really easy and tastes great on a cold evening!

- Place 15-bean soup mix in a large bowl and cover with several inches of cool water; soak in refrigerator 8 hours to overnight. Drain and rinse.
- Place 15-bean soup mix, ham bone, cooked ham, chicken broth, water, onion, carrots, great Northern beans, garlic, black pepper, salt, and bay leaf in a slow cooker; stir to combine. Cook on Low for 8 to 10 hours.

- Place great northern beans in a large mixing bowl, add enough water to cover by a couple of inches. Let rest overnight.
- The next morning, drain beans then add to a 6 or 7 quart slow cooker. Add meaty ham bone, carrots, celery, onion, garlic, thyme, chicken broth and 2 cups water. Season with 1 tsp pepper and salt to taste*.

- Rinse and drain the beans. Pick through and remove any unwanted bits of debris. Place in a 6-quart or larger slow cooker.
- In a skillet over medium heat, heat the olive oil. Once the oil is hot (but not yet smoking), add the onion, carrots, and celery. Cook, stirring often, until the vegetables are crisp-tender and the onion is turning translucent, about 6 minutes. Add the garlic and cook for 30 seconds, just until fragrant. Transfer to the slow cooker with the beans.
- To the slow cooker, add the ham bone (or diced or shredded ham), stock, 2 cups water, tomatoes, potatoes, bay leaf, smoked paprika, chili powder, black pepper, and rosemary or thyme. Cook on high for 4 to 5 hours or low for 7 to 8 hours, or until the beans are tender.
- Once the soup is cooked, remove and discard the bay leaf and rosemary or thyme (the herb leaves will mostly have fallen off, so it will likely just be the stems left to remove, which is perfect). If using a hambone, remove it from the soup and shred or chop any meat left on it, then stir the meat back into the pot. Stir in the red wine vinegar and peas. If you like a thinner soup, add additional water until you reach your desired consistency.
