ELITETWIG'S GUINNESS STOUT SAUSAGES AND ONIONS
A lovely winter/spring hearty dish, using the most favourable stout in the land!! This is one for all you Guinness lovers out there!

Steps:
- Prick Sausages using a fork about 6 times in each.
- Place oil in a Large Frying pan over a medium heat. Add Sausages.
- Turn Sausages occasionally until brown all over. Add Onions, garlic, paprika and Sugar.
- Stir carefully covering Sausages and Onions in the Sugar unitl Sugar has dissolved and is caramilising and bubbling slighty. Remove Garlic Clove.
- Add Guinness Stout and stir in carefully.
- Bring to boil and then reduced liquid by about half about 7-10mins. Taste tewt. Add salt if required.
- Once liquid reduced, plate up and serve with mash potato.

SLOW COOKER GUINNESS® BEEF STEW
This is a recipe my husband got from one of his co-workers. He absolutely loves this!

Steps:
- Combine flour, salt, and pepper in a shallow dish; add beef pieces. Toss to coat each piece evenly. Reserve remaining flour mixture for later use.
- Heat oil in a large non-stick skillet; cook and stir coated beef, working in batches, until browned on all sides, about 10 minutes per batch. Transfer cooked beef to a slow cooker.
- Cook and stir onion in the same skillet used for beef until golden, about 5 minutes. Add beer and garlic; bring to a boil for 1 minute. Scrape browned bits of food from bottom of the pan with a wooden spoon. Pour onion mixture into the slow cooker.
- Mix beef broth, parsley, thyme, and bay leaves into beef mixture in slow cooker.
- Cook on Low until beef is almost tender, 2 1/2 to 3 hours. Sprinkle in the reserved flour mixture; stir well. Add potatoes and carrots.
- Cook on High until potatoes are tender, about 1 hour.
- Preheat oven to 400 degrees F (200 degrees C).
- Arrange puff pastry on baking sheets; pierce each piece several times with a fork.
- Bake in the preheated oven until golden and crispy, about 10 minutes. Ladle stew into individual dishes; top each with a pastry square.

SLOW COOKER GUINNESS SAUSAGES
I like to slice the sausages on the diagonal before putting in the slow cooker. But I've also left them whole - both ways work. Serve over mashed potatoes....yummm!

Steps:
- 1. Fry the sausages using a little oil in a non-stick pan over a moderate heat. When lightly colored on all sides, remove from the pan. Place the sausages in the slow cooker.
- 2. Slice the onions thinly and mix them with the flour and brown sugar. Put this mixture over the sausages.
- 3. Pour the bovril, beef stock and beer over the top.
- 4. Cook on high for 4 - 5 hours or low for 8 - 10 hours.

- Place the potatoes, carrots, and celery in the bottom of a large slow cooker. Top with the bouquet garni.
- Season the beef chunks with salt and pepper to taste. Heat the oil in a large skillet set over medium-low heat. Sear the beef chunks on all sides, which should take about 10 minutes total. Set aside on a cutting board.
- Increase the heat to medium and drizzle more oil into the skillet if necessary. Add the onion and garlic and saute for 3-4 minutes. Sprinkle 2 tablespoons of the flour on the onions and stir to combine, then pour in half of the beer and deglaze the pan, scraping the browned bits from the bottom with a wooden spoon. Remove from heat.
- Add the remaining Guinness, beef stock, tomato paste, soy sauce, and Worcestershire to the slow cooker; stir everything together well. Season with salt and pepper to taste.
