SLOW COOKER GREEK CHICKEN GYROS
I love Gyros! I came up with a recipe for chicken that has all the flavors that I love in Gyros! It is super easy, just dump it in the slow cooker and let it do it's magic!

Steps:
- 1. Place chicken in crock pot/slow cooker.
- 2. Mix remaining ingredients in a bowl. Pour over chicken.
- 3. Cover and cook on low 6 hours.
- 4. Shred chicken and mix around in juices in crock pot.
- 5. Serve in warm pitas or over a salad for a Greek type salad. Add toppings like tzatziki sauce (I shared my recipe if you would like to try it), chopped seedless cucumber, chopped tomatoes, sliced red onions, pitted Greek olives, and feta cheese. I do not recommend cutting the pitas open to make pockets, because the meat is juicy and will soak through a pocket making a mushy mess.

- On top of the chicken breast, add lemon juice, garlic, red onion, salt, pepper, olive oil, water and red wine vinegar. Cook on high for 3-½-4 hours.
- While your chicken is cooking, prepare the tzatziki sauce. In a small mixing bowl, mix together all ingredients for the dip. Stir until well blended. Set aside and place in the refrigerator to allow the flavors to blend.
- When the cooking time is complete for the chicken, shred with a fork. Stir chicken inside the crockpot and allow it to set in the juices for 15-20 additional minutes before removing.

- Place chicken in a large Ziploc bag. Drizzle with olive oil. Season liberally with salt and pepper. Add oregano, basil, thyme, and garlic to the bag. Seal the bag, toss to coat the chicken. You can let the chicken marinate in the refrigerator for a couple of hours (or overnight), or you can just use it right away.
- Place onion and carrots in the bottom of a slow cooker. Top with chicken and herbs from the bag. Squeeze lemon juice over top.
- Cover and cook on LOW for about 4-6 hours, or on HIGH for about 2-3 hours. Season with additional salt and pepper, to taste. Chop chicken or shred with a fork before serving.
- Pile the chicken on top of pita bread, rice, or salad. Garnish with Tzatziki sauce, feta cheese, olives, and fresh veggies.
