This creamy chicken dish (made easy in a slow cooker) is a garlic lover's dream!

4 chicken breasts (1 1/2 to 2 lb)
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon olive oil
20 cloves garlic that have been peeled and left whole
1/2 cup dry white wine
1 cup Progresso™ chicken broth (from 32-oz carton)
3 or 4 sprigs fresh thyme
1 tablespoon cornstarch
1 tablespoon water
1/4 cup grated Parmesan cheese
1/4 cup heavy whipping cream
2 tablespoons chopped fresh parsley leaves

Steps:

  • Spray slow cooker with cooking spray.
  • Season chicken breasts with salt and pepper. Heat 10-inch skillet over medium-high heat. Add oil to skillet, and sear chicken breasts on both sides until golden brown; arrange in single layer in bottom of slow cooker.
  • Add garlic to same skillet, and cook until just golden in a few spots; carefully add wine to skillet, and scrape up any browned bits from bottom. Heat to simmering; simmer 1 minute. Pour into slow cooker. Add broth to slow cooker, stirring gently to combine. Add thyme sprigs. Cover; cook on High heat setting 4 to 6 hours.
  • Twenty minutes before serving, with slow cooker still set to High, beat cornstarch and water with whisk to make a slurry; stir the slurry, Parmesan cheese and whipping cream into liquid in slow cooker (if necessary, remove chicken from slow cooker for this step, and add back once mixed).
  • Cover; cook 20 minutes longer to thicken. Serve with parsley and, if desired, additional Parmesan. Serve over pasta, rice or mashed potatoes.

1/2 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese
1/2 teaspoon Italian seasoning

1 jar (24 ounces) marinara sauce
4 slices part-skim mozzarella cheese

  • In a shallow bowl, combine bread crumbs, Parmesan cheese, Italian seasoning, pepper and salt. In another bowl, combine egg and water. Dip chicken in egg mixture, then in crumb mixture to coat both sides, patting to help coating adhere., Transfer chicken to a 4- or 5-qt. slow cooker. Pour sauce over chicken. Cook, covered, on low for 4-6 hours or until a thermometer inserted in chicken reads 165°. Top with cheese, recover, and cook for 10-15 minutes, until cheese is melted. If desired, serve with hot cooked pasta.

Salt Pepper
8 ounces sliced mushrooms
1/4 cup butter
2 garlic cloves (minced)

1 cup heavy cream or half and half
1/2 cup grated parmesan cheese
1/2 teaspoon garlic powder

Steps:

  • In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate. Add the sliced mushrooms and cook for a few minutes until tender. Remove and set aside.
  • To make the sauce add the butter and melt. Add garlic and cook until tender. Whisk in the flour until it thickens. 2 (28-ounce) cans crushed tomatoes
1 onion, diced
1 tablespoon dried basil
1 teaspoon dried oregano
1 teaspoon dried parsley
1/2 teaspoon crushed red pepper flakes, optional
1 pound penne
1 1/2 cups shredded mozzarella cheese
1/4 cup freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley leaves

Steps:

  • Season chicken with salt and pepper, to taste. Place chicken into a 6-qt slow cooker. In a large bowl, combine crushed tomatoes, onion, basil, oregano, parsley and red pepper flakes, if using. Stir into the slow cooker and gently toss to combine. Cover and cook on low heat for 4 hours. Remove chicken from the slow cooker and shred, using two forks. 2 eggs, beaten
½ cup panko crumbs
½ cup grated Parmesan cheese, divided
1 tbsp McCormick Italian Seasoning (Or, make your own: 1 tsp dried oregano, 1 tsp dried rosemary and 1 tsp dried basil)
1 tsp garlic powder
½ tsp kosher salt
¼ lbs sliced mozzarella cheese
3-4 cups red sauce

Steps:

  • Mix panko, ¼ cup Parmesan and spices together in one bowl
  • Place eggs in separate bowl and beat
  • Place one piece of chicken at a time into the beaten egg and make sure it is well coated - then press egg drenched piece of chicken into the panko crumb mixture and turn to coat with crumbs on all sides
  • Place each breaded piece of chicken into the slow cooker
  • Lay one slice of mozzarella cheese on top of each piece of breaded chicken
  • Fully cover all cheese-topped chicken with marinara sauce
  • Place lid on pot and cook 4 - 6 hours on low.
  • About ½ an hour before serving, sprinkle remaining grated Parmesan cheese over top of sauce and finish cooking; allowing cheese to melt.

1 (1 ounce) package dry onion soup mix
1 cup converted long-grain white rice
¼ cup grated Parmesan cheese for topping
6 skinless, boneless chicken breasts
1 ½ cups milk
2 (10.75 ounce) cans condensed cream of mushroom soup
salt to taste
ground black pepper to taste

Steps:

  • Mix together onion soup mix, milk, cream of mushroom soup, and rice in a medium bowl.
  • Lay chicken breasts in the bottom of a lightly greased slow cooker. Place one tablespoon margarine on each chicken breast and pour soup mixture over all. Season with salt and pepper to taste and sprinkle with grated Parmesan cheese.

  • Cover and cook on low for 4-6 hours (this is the time for a 6 quart slow cooker and thawed chicken, if using frozen chicken add 1-2 hours).
  • Remove the lid. In a small bowl whisk together the half and half and cornstarch until it is smooth. Stir it into the slow cooker. Turn the slow cooker to high and cover for another 30 minutes, until the sauce has thickened. Stir in the parmesan cheese and lemon juice.
  • Use tongs to remove chicken and slice it on a cutting board. Serve chicken and sauce with noodles, zoodles, mashed potatoes or rice.
