1 (15 ounce) can dark red kidney beans, drained, rinsed
1 (15 ounce) can light kidney beans, drained, rinsed
1 1/2 cups mild thick & chunky salsa
1 (16 ounce) can no-salt-added tomato sauce
2 tablespoons chili powder
1 1/2 lbs boneless skinless chicken thighs, cut into bite-size pieces
1 onion, chopped
1 cup frozen corn
1 cup kraft finely shredded four-cheese Mexican blend cheese

Steps:

  • COMBINE beans, salsa, tomato sauce and chili powder in slow cooker. Top with chicken, onions and corn. (Do not stir.) Cover with lid.
  • COOK on LOW 6 to 8 hours (or on HIGH 4 to 5 hours).
  • STIR just before serving. Serve topped with cheese.
  • Serving Suggestion: For added color and flavor, top individual bowls of chili with BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream and/or coarsely crushed PREMIUM Saltine Crackers.

2 lbs boneless skinless chicken thighs
1 (10 ounce) can rotel (2 if you want more heat)
1 (14 1/2 ounce) can diced tomatoes, undrained
1 medium yellow onion, chopped
1 (1 ounce) package chili seasoning mix
2 (15 ounce) cans ranch style beans
1/2-1 cup shredded monterey jack and cheddar cheese blend
chives (to garnish)
sour cream, if desired

Steps:

  • Place chicken thighs (mine were frozen) in bottom of 5 quart slow cooker.
  • Mix rotel, diced tomatoes and chili seasoning. Pour over chicken.
  • Place chopped onions over tomato mixture.
  • Pour both cans of ranch beans on top.
  • Cook on low until chicken is tender.
  • Shred chicken and return to pot for remainder of cooking time.
  • Garnish with chives, shredded cheese and sour cream if desired.

I found this in the local newspaper and can't wait to try it. notes from the author: Toasting the cumin and coriander takes a little time, but improves the flavor of the chili. Skip the step if it makes your life easier. If the chicken thighs have bones, go ahead and stick them in the slow cooker. The meat will literally fall off the bone after 8 hours of cooking, and you can just remove the bones with tongs and discard them. UPDATE: So I've made this twice since posting. Everyone loves it. The chunks of avocados on top really make this dish. Setting up a buffet of toppings makes this really fun for the kids. This is a must try for a cold day.

2 teaspoons ground cumin
1 teaspoon ground coriander
1 1/2 teaspoons salt
1 teaspoon black pepper
1 teaspoon oregano
1 teaspoon smoked paprika
1/4 teaspoon cayenne
1 large onion, finely chopped
3 large garlic cloves, finely chopped (about 1 tablespoon)
1 (4 ounce) can chopped green chilies
1 lb white beans, such as navy
3 lbs boneless skinless chicken thighs
5 cups low sodium chicken broth, water (or a combination)
chopped red onion
chopped cilantro
diced avocado
lime wedge
sour cream

Steps:

  • Turn a 3-quart slow cooker on high.
  • Place cumin and coriander in a small, dry skillet. Stir over medium-low heat until it smells toasty and spicy- about 2 or 3 minutes.
  • Combine it in a up with salt, pepper, oregano, paprika and cayenne.
  • Put onion, garlic and green chilies into the slow cooker.
  • Rinse beans, put them in slow cooker.
  • Sprinkle chicken thighs with cumin mixture and pile the chicken into the pot.
  • Add chicken broth/water.
  • Cover and cook 8 hours or so until the beans are soft and the chicken falls apart when you stir.
  • Serve with sour cream and spicy salsa.

1 bag (16 oz) dried great northern beans, sorted, rinsed
2 cans (4.5 oz each) Old El Paso™ chopped green chiles, drained
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano leaves
1 teaspoon ground red pepper (cayenne)
1 cup shredded Monterey Jack cheese (4 oz)
Sliced green onions, if desired
Tortilla chips, if desired

Steps:

  • Spray 5- to 6-quart slow cooker with cooking spray. In 12-inch skillet, heat oil over medium heat. Cook chicken, onion and garlic in oil 8 to 10 minutes, stirring occasionally, until onion is tender and chicken is no longer pink in center. Spoon mixture into slow cooker.
  • Add water, broth, beans, green chiles, chili powder, cumin, oregano and cayenne pepper to slow cooker; stir to combine.
  • Cover; cook on Low heat setting 7 to 8 hours. Sprinkle individual servings with cheese and green onions. Serve with tortilla chips.

1 teaspoon vegetable oil
2 skinless, boneless chicken breast halves
2 cups chicken broth
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can cannellini beans, drained and rinsed
1 (14.5 ounce) can diced tomatoes, drained and rinsed
½ yellow onion, chopped
1 ½ tablespoons chili powder, or more to taste
1 clove garlic, minced
½ teaspoon ground cumin
½ teaspoon paprika
½ teaspoon mustard powder
½ teaspoon garlic powder
1 dash hot sauce (such as Cholula®), or to taste
1 pinch salt and ground black pepper to taste
½ cup sour cream

Steps:

  • Lightly grease the crock of your slow cooker with vegetable oil.
  • Put chicken breasts into the bottom of the slow cooker crock; add chicken broth, black beans, cannellini beans, diced tomatoes, yellow onion, chili powder, garlic, cumin, paprika, garlic powder, hot sauce, salt, and black pepper.
  • Cook on Low for 6 hours (or on High for 3 hours).
  • Remove chicken breasts from the crock to a cutting board. Shred chicken into strands with a pair of forks and return it to the mixture in the crock; add sour cream and stir.
  • Continue cooking on Low for 30 minutes more.

2 cans (14 1/2 ounces each) diced tomatoes with green chilies, undrained
1 can (15 ounces) tomato sauce
1 envelope (1 1/4 ounces) mild chili seasoning mix
2 cans (15 1/2 ounces each) hominy, drained
Sour cream, if desired
Cilantro, if desired

Steps:

  • Place chicken in 3 1/2- to 4-quart slow cooker. Mix tomatoes, tomato sauce and chili seasoning; pour over chicken.
  • Cover and cook on low heat setting 7 to 9 hours or until juice of chicken is no longer pink when centers of thickest pieces are cut.
  • Stir to break up chicken. Stir in hominy. Cover and cook on low heat setting 15 minutes until heated through. Serve chili with sour cream and cilantro.
