1 (1.5 pound) package small yellow-fleshed potatoes
3 pounds skin-on, boneless chicken thighs
3 small apples, peeled and diced
½ medium sweet onion, diced
1 cup chicken broth
½ cup honey
⅓ cup applesauce
1 clove garlic, minced
1 teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon ground cumin
¼ teaspoon ground black pepper

Steps:

  • Chop any large potatoes in half.
  • Place potatoes in the bottom of a slow cooker. Add chicken thighs on top of potatoes, and spread apples and onion over top.
  • Mix chicken broth, honey, applesauce, garlic, salt, cinnamon, cumin, and pepper together in a bowl; pour over chicken mixture.
  • Cook until chicken is no longer pink at the bone and the juices run clear, 4 to 6 hours on Low, or about 3 hours on High. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
  • Remove chicken thighs from the slow cooker and place, skin-side up, on the prepared baking sheet.
  • Broil in the preheated oven until skin is crisp, 3 to 5 minutes. Serve with potatoes, apples, onions, and sauce.

6 - 8 boneless skinless chicken thighs or breasts
3/4 cup apple cider
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
3 tablespoons maple syrup
1 tablespoon olive oil
Salt and pepper
2 sprigs fresh rosemary

Steps:

  • Place the chicken thighs on the bottom of a crockpot. Sprinkle salt and pepper generously over the chicken.
  • (Optional - Brown the chicken in a tablespoon of olive oil over medium heat for three minutes a side before placing into the crockpot.)
  • Used a small bowl to mix together the cider, Dijon mustard, maple syrup, vinegar and olive oil. Pour the marinade and fresh rosemary over the chicken, cover and set the crockpot to low and allow the chicken to cook for 6 to 8 hours.
  • Transfer the chicken thighs to plates or shred the chicken for sandwiches and serve on buns.

4 bone-in chicken thighs (about 1-1/2 pounds), skin removed
1/4 teaspoon salt
1/4 teaspoon pepper
2 medium Fuji or Gala apples, coarsely chopped
1 medium onion, chopped
1 garlic clove, minced
1/3 cup barbecue sauce
1/4 cup apple cider or juice
1 tablespoon honey

Steps:

  • In a large skillet, heat oil over medium heat. Brown chicken thighs on both sides; sprinkle with salt and pepper. Transfer to a 3-qt. slow cooker; top with apples., Add onion to same skillet; cook and stir over medium heat 2-3 minutes or until tender. Add garlic; cook 1 minute longer. 1 cup apple cider
1/8 teaspoon ground nutmeg
1 tablespoon curry powder
2 tablespoons butter
1 medium onion (chopped)
2 garlic cloves (minced)
6 boneless, skinless chicken breasts
Salt and pepper to taste
3 Granny Smith apples (peel on but cored and thickly sliced)
2 tablespoons apple-cider vinegar
1/3 cup chicken broth
1 tablespoon cornstarch

Steps:

  • Gather the ingredients.
  • In a small shallow bowl, combine the apple cider, nutmeg, and curry powder and set aside.
  • In a small microwave-safe dish, combine the butter, onion, and garlic. Microwave on high for 1 to 2 minutes or until the onion is softened. Place this mixture in the bottom of a 3- to 4-quart slow cooker.
  • Dip each chicken breast into the reserved apple-cider mixture to coat and then place them in the crock pot over the onion mixture. Pour any remaining apple-cider mixture over the chicken. Add salt and pepper to taste.
  • Cover the slow cooker and cook on low for 5 to 6 hours or until the chicken is almost cooked. Add the sliced apples and cook for 40 to 50 minutes longer on low or until the apples are tender and the chicken is thoroughly cooked to 165 F as measured by a reliable meat thermometer.
  • Remove the chicken and apples to a serving plate and cover with aluminum foil to keep warm.
  • To make the sauce, whisk together the vinegar, broth, and cornstarch in a small bowl until well mixed and lump free and stir into the liquid in the crock pot. Cover and cook on high heat, stirring occasionally, until sauce is thickened and bubbly, about 10 to 15 minutes. Pass the sauce separately at the table.
  • Enjoy!
