CHEESY ASPARAGUS SOUP

This is one of our favorites. It's quick to make and freezes well. Add cooked asparagus tips as garnish.

6 cups chicken stock, divided
1 ½ pounds asparagus, trimmed and chopped
¼ cup butter
2 tablespoons olive oil
1 onion, chopped
2 ribs celery, chopped
2 cloves garlic, chopped
6 tablespoons all-purpose flour
1 cup half-and-half, or more to taste
1 pound processed American cheese (such as Velveeta®), cubed
salt and ground black pepper to taste

Steps:

  • Bring 4 cups chicken stock to a boil in a saucepan. Add asparagus and cook until tender, 3 to 5 minutes. Drain asparagus, reserving the stock. Set a few asparagus tips aside for garnish.
  • Heat butter and olive oil in a stockpot over medium heat. Add onion and celery and cook until tender, 6 to 8 minutes. Add garlic; cook and stir until fragrant, about 3 minutes more.
  • Stir flour into onion mixture until combined, about 2 minutes. Add remaining 2 cups chicken stock; cook and stir until thickened, about 5 minutes more. Add cooked asparagus stalks and remaining reserved asparagus-chicken stock; bring soup to a boil.
  • Heat half-and-half in a small saucepan over medium heat until warmed slightly, 1 to 2 minutes. Add warmed half-and-half to soup, reduce heat, and simmer until flavors have blended, about 10 minutes.
  • Pour soup into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Return pureed soup to stockpot. Add American cheese and stir until melted; season with salt and pepper. Garnish with asparagus tips.

2 pounds fresh asparagus, trimmed and cut into 1 inch pieces
1 pound provolone cheese, shredded
2 (10.75 ounce) cans condensed golden mushroom soup
1 (2.8 ounce) can French-fried onions

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place asparagus in baking dish; cover with cheese. Spread mushroom soup over cheese.
  • Bake, covered, until hot and bubbly, about 35 minutes. Remove from oven; remove cover and sprinkle with onions. Return to oven and bake, uncovered, until onions are lightly browned, about 10 minutes.

1 cup shredded part-skim mozzarella cheese
¼ cup finely grated Parmesan cheese
¼ teaspoon crushed red pepper

Steps:

  • Preheat oven to 400 degrees F. Arrange asparagus in a 9-by-13-inch baking dish. Combine cream, garlic, pepper and salt in a small bowl; drizzle over the asparagus. Sprinkle mozzarella, Parmesan and crushed red pepper evenly over the asparagus. Bake until the cheese is golden and melted and the asparagus is tender, about 20 minutes. Serve immediately.

This is a great way to cook fresh asparagus that isn't as tender to cook by other methods. It's perfect for those thicker stalks, just be sure to trim off the tough woody ends.

2 pounds fresh asparagus, cleaned and about 1 1/2" cut off the bottoms*
1 can (14.25 ounce size) fat-free chicken broth
1 tablespoon Butter Buds Sprinkles
1/2 teaspoon garlic salt

Steps:

  • Snap any woody ends from the asparagus. Lightly grease a slow cooker with non-stick cooking spray. Combine the broth, butter buds, and garlic salt in the slow cooker until mixed. Place the fresh asparagus in the slow cooker, it's ok if the asparagus isn't covered in the broth or you can cut it in half to fit. The steam that forms inside will cook any exposed parts that aren't covered by liquid. Cover the slow cooker and cook on low for 6 hours or until the asparagus is tender.

3/4 cup skim evaporated milk
1 cup sharp cheddar cheese, grated

Steps:

  • Wash and trim asparagus. Asparagus breaks naturally at the tough part of the stalk.
  • Lay the spears in a 5 quart slow cooker.
  • Stir flour, salt and pepper together in saucepan. Whisk in evaporated skim milk gradually until no lumps remain.
  • Heat and stir until boiling and thickened.
  • Stir in cheese to melt.
  • Pour over asparagus. Cover. Cook on low for 2 to 3 hours.
  • Check for doneness at 2 hours if you like it crisp, let it cook longer if you like it softer.

2 lb fresh asparagus spears
8- oz fresh sliced mushrooms
1 Tbsp butter or oil
¼ cup butter
¼ cup all-purpose flour
2 cups milk
2 Tbsp sherry
1 cup shredded mozzarella cheese
salt and pepper, (to taste)

Steps:

  • Preheat oven to 350ºF. Spray a 9x13x2-inch baking dish with cooking spray.
  • Trim any tough ends from asparagus and cut spears into 1-inch pieces. Place in prepared baking dish.
  • In a skillet over medium heat, melt 1 Tbsp butter. Add mushrooms and saute for about 5 minutes. Spread over asparagus in baking dish.
  • In a medium saucepan, melt 1/4 cup of butter. Stir in flour until smooth. Gradually whisk in milk and sherry. Cook over medium heat just until the sauce thickens, about 3 minutes. Remove from heat and stir in mozzarella cheese, salt and pepper. Pour sauce evenly over asparagus and mushrooms.
  • Bake uncovered for 30 minutes.

Bring to a boil; cook and stir until thickened, about 2 minutes. Cool slightly., Pour half the milk mixture into a blender; add half the asparagus. Cover and process until very smooth; return soup to the saucepan. Repeat with the remaining milk mixture and asparagus. Stir in the cheese, hot pepper sauce, salt and pepper; heat through (do not boil). If desired, top with roasted asparagus tips.
