Steps:
- Combine all sauce ingredients in slow cooker and stir. Set to high and cover while making meatballs, or for 30 minutes. (Or use pre-made/canned sauce.)
- Combine all meatball ingredients except the mozzarella in a large bowl. Using your hands, mix until fully combined.
- Take a golf ball sized piece of the ground beef mixture and place a piece of mozzarella in the middle. Press meat around the piece of cheese, fully enclosing it. Repeat until all meat is used.
- Place meatballs in slow cooker and submerge in sauce.
- Cover and cook on high for 2-2½ hours, or until meat is fully cooked.
- Serve by itself or over pasta.

- Crush the chips in a plastic bag.
- In a bowl, combine all ingredients except the cheese and vegetable oil. Stir until fully incorporated.
- With your hands, grab about a golf ball-sized amount of the ground beef mixture and slightly flatten it in your palm.
- Take 1 cube of cheese, place it in the the middle, and press the beef around it so the cheese is fully covered and in the center of the meatball.
- Heat a thin layer of vegetable oil in a cast-iron pan over medium to medium-high heat.
- Once the pan is hot, cook the meatballs. Rotate them throughout cooking to brown all sides and cook through.
- Once meatballs are fully cooked and browned, remove from the pan and top with salsa, sour cream, and cilantro.
- Enjoy!

- In 10- to 12-inch skillet, heat oil over medium-high heat. Add meatballs; cook just until browned on all sides.

- In a large mixing bowl combine ground beef, ground pork, parmesan cheese, eggs, salt, pepper, garlic, basil, parsley and oregano.
- Add bread crumbs 1/2 cup at a time until mixture is not too wet and can be formed into balls easily.

- Preheat oven to 400°. In a large bowl, whisk egg, milk, minced onion, 2 tablespoons chili powder, salt and pepper; stir in crushed crackers. - 1. In a large mixing bowl combine ground beef, ground pork, parmesan, eggs, salt, pepper, garlic, basil, parsley and dried oregano. Add bread crumbs 1/2 cup at a time until mixture is not to wet and can be formed into balls easily. Form mixture into 12 balls using your thumb to press a hole in the center. Insert a piece of the fresh mozzarella into the hole and close the hole by pushing the meatball mixture around it to secure the mozzarella inside each ball.
- 2. Heat a large saute pan over medium heat and drizzle olive oil into it. Add meatballs and cook until lightly browned. Don't overcook. (4-5 minutes) on low to medium heat. Using a slotted spoon, transfer meatballs into a slow cooker.
- 3. Pour red sauce over the meatballs and cook on LOW for approximately 5 hours. Serve the stuffed meatballs and sauce over spaghetti.
- 4. Serve with a green salad and French Bread.
SLOW COOKER MEATBALLS IN SPICY MEXICAN CHEESE SAUCE
Steps:
- Heat the oven to 350 F. Line a rimmed baking sheet with foil.
- Mix the ground beef and meatloaf seasoning with the egg, 1/3 cup of milk, and bread crumbs. Shape into meatballs and arrange on the prepared baking pan. Bake for 15 minutes, until the meatballs browned.
- Put the cheese, taco seasoning, peppers, and 1/2 cup of water in the slow cooker. Cover and cook on LOW, frequently stirring until melted. Thin the sauce with more water, as desired.
- Drain the meatballs on paper towels and then add to the cheese sauce. Cover and cook on LOW 2 to 3 hours. Serve the meatballs hot from the slow cooker.

- Chop each cheese stick into half inch pieces (about 6-8 pieces for each cheese stick). Place on a plate and chill in the freezer until ready to use.
