1 (16 ounce) package uncooked elbow macaroni
1 tablespoon vegetable oil
4 cups shredded Cheddar cheese
2 (12 fluid ounce) cans evaporated milk
3 cups milk
1 (14 ounce) bag frozen chopped broccoli, thawed
salt and ground black pepper to taste

Steps:

  • Spray the inside of slow cooker with cooking spray.
  • Stir uncooked macaroni and vegetable oil together in the slow cooker until pasta is coated.
  • Stir Cheddar cheese, evaporated milk, milk, broccoli, salt, and black pepper with macaroni until fully combined.
  • Cover the cooker and cook on Low until macaroni is tender and the sauce is bubbling, 2 1/2 to 3 hours, stirring often to reduce sticking.

6 cups frozen chopped broccoli, partially thawed
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1-1/2 cups shredded sharp cheddar cheese, divided
1/4 cup chopped onion
1/2 teaspoon Worcestershire sauce
1/4 teaspoon pepper
1 cup crushed butter-flavored crackers (about 25)
2 tablespoons butter

Steps:

  • In a large bowl, combine the broccoli, soup, 1 cup cheese, onion, Worcestershire sauce and pepper. Pour into a greased 3-qt. slow cooker. Sprinkle crackers on top; dot with butter. , Cover and cook on high for 2-1/2 to 3 hours. Sprinkle with remaining cheese. Cook until the cheese is melted, 10 minutes longer.

2 tablespoons butter
1 ¼ cups Almond Breeze Unsweetened Original almondmilk
1 cup low-sodium chicken broth
1 cup long-grain white rice
1 teaspoon dried thyme
1 teaspoon garlic salt
1 pound boneless, skinless chicken breasts, cut into 1/2-inch cubes
1 cup chopped onion
2 cups chopped fresh broccoli
1 ½ cups shredded sharp Cheddar cheese
freshly ground pepper to taste

Steps:

  • Bring butter, 3/4 cup Almond Breeze almondmilk, broth, rice, and seasonings to a simmer in a large saucepan. Top with chicken and onion. Cover and cook over low heat for 20 minutes.
  • Remove from heat and quickly add broccoli to pot. Cover and let stand for 5 minutes.
  • Stir in remaining Almond Breeze almondmilk, then gently stir in cheese. Cook over low heat just until cheese is melted, being careful not to overcook. Season with pepper.

This Slow Cooker Broccoli Cheese Soup is the easiest way to warm up on a cold winter day. Your whole family will love this recipe, too!

1 lb. frozen broccoli florets
1 whole medium onion, diced
2 whole carrots, finely diced
5 c. low sodium chicken broth
2 cans cream of celery soup
1/4 tsp. seasoned salt
1/4 tsp. salt, more to taste
1/2 tsp. black pepper
1/8 tsp. cayenne pepper
1 1/2 lb. velveeta
2 c. grated sharp cheddar cheese

Steps:

  • Add the broccoli, onion, carrots, chicken broth, cream of celery soup, seasoned salt, salt, black pepper, and cayenne pepper to the slow cooker. Stir, place on the lids, and set the slow cooker on high for 4 hours.
  • After 4 hours use an immersion blender or masher to puree 3/4 of the soup. (If you use a regular blender, blend only 1 cup at a time and use extreme caution.) Add the cheese, turn the slow cooker to low, and place on the lid for 15 minutes.
  • Stir to melt the cheese and mix it in. Taste the soup and add more salt and pepper as needed.
  • Serve warm! Soup keeps great in the fridge for a couple of days.

12 oz fresh broccoli
13-16 oz extra-sharp cheddar cheese, shredded
4 oz gorgonzola cheese
4 cups organic milk
19 oz whole wheat elbow macaroni ( 1 1/2 containers)
1/2 tsp celtic salt
1/2 tsp arrowroot powder, or cornstarch

Steps:

  • Place all the ingredients in the slow cooker, except the broccoli and arrowroot powder, mix through and set the slow cooker on high for 2 hours. Alternatively you can place the slow cooker on low for 4 hours. (I stirred the mixture two times while cooking) Place the broccoli on a food processor and pulse until minced, about 20 seconds. Set aside. Add the broccoli and arrowroot powder in the slow cooker, stir and cook for an additional 20 minutes on high. Serve immediately with some extra gorgonzola cheese. NOTE: I did stir the mac and cheese a couple of times while cooking. I don't know if this is necessary but I wanted all the elbow macaroni to get coated with the milk and cheese. You can also use any other cheese mixture of your choice. Some people have complained that they needed less time to cook the past because theirs become to soft with 2 hours. Watch the pasta and see how it is doing after 1 hour on high and 2 hours on low!!
