A friend of my mother's brought chai tea to her house. She told us in India it is served every day. I had never had it before, but I liked it so much that I came up with a recipe to re-create it. —Patty Crouse, Warren, Pennsylvania

Number Of Ingredients 10

6 cups water
1 cup sugar
1 cup nonfat dry milk powder
6 black tea bags
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon pepper
1/2 teaspoon ground cardamom
1/2 teaspoon ground cloves
1/2 teaspoon vanilla extract

Steps:

  • Place all ingredients in a 3- or 4-qt. slow cooker. Cook, covered, on high until heated through, 3-4 hours. Discard tea bags. Serve tea warm.

Easy version of chai tea, using whole spices and sweetened condensed milk. To vary the flavor, try adding a bit of star anise, fennel, allspice, vanilla bean, or nutmeg. For a sweeter tea, stir in a bit of brown sugar.

15 slices fresh ginger, peeled
15 green cardamom pods, split open and seeded
25 whole cloves
3 cinnamon sticks
3 whole black peppercorns
8 black tea bags
1 (14 ounce) can sweetened condensed milk

Steps:

  • Pour water into the crock of a slow cooker. Stir in the ginger, cardamom pods, cloves, cinnamon sticks, and peppercorns. Turn to High; simmer for 8 hours.
  • Steep tea bags in the hot spiced water for 5 minutes. Strain tea into a clean container. Stir in sweetened condensed milk; serve hot.

15 slices fresh gingerroot (about 3 ounces)
3 cinnamon sticks (3 inches)
25 whole cloves
15 cardamom pods, lightly crushed
3 whole peppercorns
3-1/2 quarts water
8 black tea bags
1 can (14 ounces) sweetened condensed milk

Steps:

  • Place first 5 ingredients on a double thickness of cheesecloth. Gather corners of cloth to enclose seasonings; tie securely with string. Place spice bag and water in a 5- or 6-qt. slow cooker. Cook, covered, on low 8 hours. Discard spice bag., Add tea bags; steep, covered, 3-5 minutes according to taste. Discard tea bags. Stir in milk; heat through. Serve warm.

This recipe is from Stephanie at A Year of Slow Cooking.

Number Of Ingredients 8

--4 cups milk
--4 black tea bags
--1/4 tsp ground cloves
--1/2 tsp ginger
--4 sticks cinnamon (or 2 tsp ground)
--4 cardamom pods
--1 tsp vanilla extract
--1 T sugar (I like the Baker's because it dissolves nicely)

Steps:

  • Place everything into your crockpot. I use a 4 quart. If you have at least a 2 quart crockpot, it will work just fine.
  • Place and float the cinnamon sticks, cardamon pods, and tea bags on top.
  • Cover and cook on high for 2 hours, or until heated through.
  • Press the tea bags against the side of the crockpot with a spoon to release the last bit of tea-goodness and ladle into mugs.

2 cinnamon sticks
10 green cardamom pods (broken open with the side of a knife)
40 peppercorns (roughly 1 teaspoon)
20 whole cloves
4 inches fresh ginger (sliced into rounds)
64 oz unsweetened almond milk (2 quarts, 2 946 mL cartons; see note 1)
2-4 tablespoons maple syrup (optional; note 2)

Steps:

  • Spice Sachet - Place the cinnamon sticks, cardamom pods, peppercorns, cloves and ginger slices on a square of cheesecloth. Use kitchen twine to tie it shut.
  • Add liquid - Place in a large slow cooker and add 2 cartons of unsweetened almond milk. Add in maple syrup if desired and stir.
  • Slow cook - Cook on low for 4 hours.
  • Serve - Remove the bag of spices and serve with coconut whipped cream and cinnamon
