So simple! The carrots make it almost sweet, and it's a cinch to make gravy for mashed potatoes from the cooking juices.

4 pounds skinless, boneless chicken breast meat
1 medium head cabbage, quartered
1 pound carrots, cut into 1 inch pieces
water to cover
4 cubes chicken bouillon
1 teaspoon poultry seasoning
¼ teaspoon Greek-style seasoning
2 tablespoons cornstarch
¼ cup water

Steps:

  • Rinse chicken and place in slow cooker. Rinse cabbage and place on top of chicken, then add carrots. Add enough water to almost cover all. Add bouillon cubes and sprinkle liberally with poultry seasoning. Add Greek seasoning to taste (as you would salt and pepper). Cook on low for 8 hours OR on high for 4 hours.
  • To Make Gravy: When you're nearly ready to eat, pour off some of the juice and place in a saucepan. Bring to a boil. Dissolve cornstarch in about 1/4 cup water (depending on how thick you like your gravy). Add to saucepan and simmer all together until thick. If desired, season with additional Greek seasoning. Serve gravy over chicken and potatoes, if desired.

6 medium red potatoes, cut into chunks
4 medium carrots, cut into 1/2-inch pieces
4 boneless skinless chicken breast halves
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/8 teaspoon garlic salt
2 to 4 tablespoons mashed potato flakes, optional

Steps:

  • Place potatoes and carrots in a 5-qt. slow cooker. Top with chicken. Combine soups and garlic salt; pour over chicken., Cover and cook on low for 8 hours or until meat and vegetables are tender. To thicken, stir potato flakes into the gravy and cook 30 minutes longer, if desired.

1 lb. bag baby carrots
1 1/2 lbs. Yukon gold potatoes (cut into wedges)
1/2 cup salted butter (melted)
1 Tbsp. minced garlic ((or one teaspoon garlic powder))
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. dried thyme leaves ((not ground))
1 tsp. dried parsley

Steps:

  • Add the chicken down in the middle of the slow cooker. Add the potatoes on one side and the carrots on the other side.
  • In a small bowl mix together the butter, garlic, salt, pepper, thyme and parsley.
  • Pour the butter mixture over the chicken and veggies.

2 Tbsp. cooking oil
5 carrots (peeled and cut into thirds)
3 leeks (sliced and divided (rinsed after being sliced if they are sandy))
2 tsp. garlic cloves (minced)
1/2 tsp. salt
1/4 tsp. pepper
1/4 cup salted butter (melted)

Steps:

  • Heat a medium-sized pan over medium-high on the stove top
  • Once hot, add the oil.
  • Brown the chicken on both sides; remove from heat.
  • Add the carrots to the slow cooker and half the leeks.
  • Place the chicken over the vegetables in the slow cooker.
  • Sprinkle over the salt, pepper and garlic.
  • Add the remaining leeks and pour over the butter.
  • Cover and cook on LOW for 6 hours without opening the lid during the cooking time.
  • Serve the chicken and carrots along side mashed potatoes or rice and drizzle over the sauce that is in the slow cooker.
