SLOW-COOKER CARAMEL-BANANA FRENCH TOAST
Experience French toast like never before with this Slow-Cooker Caramel-Banana French Toast recipe. A combination of brown sugar, cream cheese, rum extract, bananas and brioche breaded make up this caramel banana French toast that the entire family will love.

Steps:
- Beat cream cheese, sugar, cinnamon and 1 Tbsp. rum extract in large bowl with mixer until blended.
- Add 2 cups milk, 1/4 cup at a time, mixing well after each addition. Blend in eggs.
- Layer brioche slices in slow-cooker insert sprayed with cooking spray; top with egg mixture. Cover with lid.
- Refrigerate overnight.
- Cook on LOW 4 to 4-1/2 hrs. (or on HIGH 2 hrs.).
- Microwave caramels and remaining 3 Tbsp. milk in microwaveable bowl on HIGH 2 min. or until caramels are completely melted and sauce is well blended, stirring every 30 sec. Stir in remaining 1 Tbsp. rum extract; set aside. Slice bananas.
- Serve French toast topped with bananas, nuts and caramel sauce.

I came up with this recipe when I was looking for a recipe for French toast that I could make in the slow cooker. Some people will say this is more of a bread pudding, but say what you will. This is delicious!

- Grease the inside of a slow cooker.
- Place apple pieces in the prepared slow cooker. Sprinkle brown sugar over apples and top with butter slices.
- Beat eggs, milk, vanilla extract, and allspice together in a bowl with a whisk until smooth; add raisins. Mix bread pieces into egg mixture until bread is saturated. Pour bread-egg mixture into the slow cooker.
- Cook on High for 2 hours.

- Grease a 9x13-inch baking dish.
- Heat brown sugar, butter, and corn syrup in a saucepan over medium heat until thickened, about 5 minutes. Pour mixture into prepared baking dish and sprinkle with pecans. Arrange apple slices over pecans. Layer bread slices over apple in two layers.
- Whisk eggs, milk, vanilla extract, almond extract, and salt in a bowl; pour over bread and allow to set for 1 hour at room temperature or cover and refrigerate overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Uncover and bake in preheated oven until fluffy and golden brown, 40 to 45 minutes.

- In a small saucepan, bring the brown sugar, butter and corn syrup to a boil over medium heat, stirring constantly. Remove from the heat. - Heat oven to 300°F. On large cookie sheet, spread bread cubes. Bake 20 to 30 minutes or until dry.
- Line sides of 4- to 5-quart slow cooker with foil that has been folded into thirds; spray with cooking spray. (See tip.)
- In large bowl, beat remaining French Toast ingredients. Fold in bread cubes to coat. Let stand 15 minutes, folding occasionally.
- In 8-inch skillet, melt 2 tablespoons of the butter. Add apples; cook about 5 minutes, stirring occasionally. Meanwhile, in small bowl, stir together remaining 6 tablespoons butter and remaining Apple-Pecan Filling ingredients until crumbly.

- In a medium skillet over medium heat melt the butter. Add the brown sugar, and maple syrup. Cook stirring for a couple of minutes until it becomes smooth. Remove from heat and stir in bananas. Set aside.
- Grease a 9x13 inch pan and add half of the french bread cubes to the bottom. In a large bowl, whisk the eggs, milk, vanilla, and cinnamon. Pour half of the mixture over the french bread. Spoon half of the banana caramel mixture on top. Layer with the rest of the french bread cubes followed by remaining egg mixture and caramel banana sauce. Cover with foil and let it soak overnight.
- Preheat oven to 350 degrees. Remove the french toast from the fridge and bake uncovered for 40-50 minutes or until puffy, golden brown and set in the center.
- To make the caramel syrup: Melt the butter in a saucepan over medium hear. Add the sugar and lemon juice. Cook while stirring constantly 5-6 minutes or until mixture turns a caramel color. Slowly add the whipping cream stirring constantly. Cook until smooth. Serve on top of french toast and garnish with fresh banana slices and chopped pecans if desired.
