1-1/2 teaspoons ground cumin
1-1/2 teaspoons chili powder
1-1/2 pounds boneless pork loin chops
1 can (14-1/2 ounces) petite diced tomatoes, undrained
1 small onion, finely chopped
1 celery rib, finely chopped
1 small carrot, julienned
1 garlic clove, minced
1/2 teaspoon Louisiana-style hot sauce
1/4 teaspoon salt
1-1/2 cups uncooked instant rice
1 cup reduced-sodium chicken broth
1 teaspoon olive oil
1 medium green pepper, julienned

Steps:

  • Mix cumin and chili powder; sprinkle pork chops with 2 teaspoon spice mixture. Transfer to a 4-qt. slow cooker., In a small bowl, mix tomatoes, onion, celery, carrot, garlic, hot sauce, salt and remaining spice mixture; pour over chops. Cook, covered, on low until meat is tender, 4-5 hours., Stir in rice and chicken broth, breaking up pork into pieces. Cook, covered, on low until rice is tender, 12-15 minutes longer. , In a small skillet, heat oil over medium-high heat. Add green pepper; cook and stir 5-7 minutes or until crisp-tender. Serve on top of pork mixture.

1 small onion
1 celery rib
1 small green pepper
3 tablespoons butter
3 garlic cloves, minced
2 teaspoons dried thyme
1 teaspoon paprika
1/2 teaspoon each salt, white pepper and pepper
1/2 teaspoon ground mustard
1/2 teaspoon hot pepper sauce
1 boneless pork loin roast (4 pounds)
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • Finely chop vegetables. In a large skillet, saute vegetables in butter until tender. Add garlic; cook 1 minute longer. Stir in seasonings and pepper sauce., Cut several slits in roast to within 1/2 in. of bottom. Place in a 5-qt. slow cooker. Spoon onion mixture between slits and over the top of meat. Cover and cook on low for 6-8 hours or until pork is tender., Transfer roast to a serving platter; keep warm. Strain cooking juices and pour into a small saucepan. Combine cornstarch and water until smooth; stir into the pan. Bring to a boil; cook and stir until thickened, about 2 minutes. Serve with roast.

2 tablespoons butter
½ teaspoon cayenne pepper
1 teaspoon dried oregano
½ teaspoon ground black pepper
½ teaspoon dried thyme
½ teaspoon ground mustard
2 cloves garlic, minced
1 (4 pound) pork loin roast
salt and pepper to taste
1 tablespoon olive oil
2 carrot, cut into 1/2 inch pieces
1 red bell pepper, cut into 1/2 inch pieces
1 stalk celery, cut into 1/2 inch pieces
1 large onion, cut into 1/2-inch pieces
3 tablespoons all-purpose flour
½ cup chicken broth

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Melt the butter in a small skillet over medium heat. Stir in the cayenne, oregano, pepper, thyme, mustard, and garlic. Cook for 1 minute. Use a paring knife to make several small incisions in the fat side of the meat. Stuff the slits with the spice mix, and rub the remaining mix over the surface of the meat. Sprinkle the roast with salt and pepper.
  • Heat the olive oil in a roasting pan over medium heat. Put the roast in the pan, and surround with the carrots, red pepper, celery, and onion. Lightly salt and pepper the vegetables. Place roasting pan in preheated oven, and cook for 1 hour and 45 minutes. Increase the oven temperature to 425 degrees F, and cook for an additional 15 minutes to brown the meat. Cook until meat is 145 degrees F (63 degrees C). Remove roast from pan, and let stand 10 minutes before slicing.
  • Place the roasting pan, with the pan juices, over medium heat. Whisk the flour into the hot drippings, and cook for 3 minutes. Pour in the chicken stock and cook, whisking occasionally, for 6 minutes. Strain sauce, and serve with the sliced pork roast.

1/2 cup apple cider vinegar
1/3 cup ketchup
1/4 cup plus 2 tablespoons Creole or spicy brown mustard
1 tablespoon molasses
2 tablespoons packed light brown sugar
2 teaspoons paprika
Kosher salt and freshly ground pepper
1 3-to-4-pound boneless pork shoulder
2 links andouille sausage
1/3 cup mayonnaise
8 soft sesame buns
Pickle slices and potato chips, for serving

Steps:

  • Whisk 1 1/2 cups water, the vinegar, ketchup, 1/4 cup mustard, the molasses and 1 tablespoon brown sugar in a 7-to-8-quart slow cooker. Combine the remaining 1 tablespoon brown sugar, the paprika, 1 teaspoon salt and 1/2 teaspoon pepper in a small bowl. Rub all over the pork, then add to the slow cooker along with the sausage. Cover and cook on low, 8 hours. Remove the pork and sausage and set aside to cool slightly. Skim off the excess fat from the cooking liquid, then strain into a large skillet and bring to a boil. Cook until reduced by one-third, about 15 minutes. Shred the pork with a fork and coarsely chop the sausage. Toss the pork and sausage with enough of the reduced cooking liquid to moisten; season with salt. Whisk the mayonnaise and the remaining 2 tablespoons mustard in a small bowl; spread on the buns. 3/4 teaspoon of sea salt
3/4 teaspoon of garlic powder
3/4 teaspoon of onion granules
1/2 teaspoon of cayenne

800g (28oz) of uncooked pork tenderloin
1 onion, halved and sliced
1/2 cup (120ml) of unsweetened apple sauce
3 tablesoons of maple syrup
1/4 cup of water (60ml) of water
2 spring onions, sliced

Steps:

  • Mix all the seasoning for the Cajun seasoning together in a bowl.
  • Rub this all over the pork tenderloins (or you can add the pork tenderloin to a zip lock bag with the season and shake to coat.
  • Add the pork tenderloin to a slow cooker with the onion.
  • In a bowl whisk together the apple sauce, water and maple syrup.
  • Pour this over the pork tenderloin.
  • Cook in the slow cooker for 4 hours on low or 2 hours on high
  • Remove pork and rest for a few minutes before slices.
  • If you require a thicker sauce, add sauce to a saucepan and simmer on a high heat until it reduces down.
  • Pour over the pork, sprinkle with the chopped spring onion and serve with your choice of sides.

Cook your Sunday lunch in the slow cooker this weekend. The pork stays succulent and moist and the vegetables are cooked alongside in the tasty gravy.

Number Of Ingredients 12

1½ tsp fennel seeds
3 sprigs fresh thyme
2 garlic cloves
2 tbsp rapeseed or olive oil
300g shallots
about 1.8kg pork loin, skin removed and fat well-scored (cut from the thicker end of the joint)
1 small celeriac, peeled, quartered and cut into chunks
2 eating apples, such as braeburns or coxs, peeled, cored and cut into wedges
150ml white wine
250ml chicken or pork stock
1 tbsp honey
1 tbsp Dijon mustard

Steps:

  • Lightly crush the fennel seeds with the leaves from the thyme and the garlic in a pestle and mortar. Add 1 tbsp oil and plenty of salt and pepper, then bash to a rough paste. Rub all over the pork, then cover and chill for up to 24 hrs, if you have time (2 hrs if not).
  • Set your slow cooker to a low heat. Pour a kettleful of boiling water over the shallots, then set aside for 2 mins until cool enough to handle - this will make them easier to peel. Cut off the root and remove the papery skins. Heat the remaining oil in a large casserole or frying pan large enough to fit the pork. Brown the shallots for a few mins then tip into the slow cooker. Add the celeriac and apples, season well and give them a mix.
  • Brown the pork in the same pan, on all sides, not forgetting the ends. Sit on top of the veg and apples, fat-side up, nestling the joint in a little so you can fit the lid on. Pour the wine into the frying pan and bubble for a minute, scraping the bottom of the pan to pick up any tasty bits. Pour in the stock, honey and mustard, bubble for another min, then pour over the pork. Cover with a lid and cook on low for 5-6 hrs (depending on slow cooker size), turning the pork and stirring the veg halfway through cooking.
  • Remove the pork, wrap in foil and leave to rest for 10 mins before carving to serve alongside the veg with roast potatoes and greens.

6 -8 potatoes

1 teaspoon hot pepper sauce
2 bay leaves
1 boneless pork loin roast (roughly 4 lbs.)
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • Peel potatoes and slice them into 1/4" rounds. Place them in the bottom of your crock pot.
  • Finely chop the remainder of the vegetables. In a large skillet, saute the vegetables in butter until tender.
  • Add the garlic; cook 1 minute longer. Stir in pepper sauce and all seasonings but the bay leaves.
  • Cut deep slits in roast and place in crock pot on top of the potatoes slit side up.
  • Spoon vegetable mixture into slits and over the top of the roast. Add bay leaves to the crock pot.
  • Cover and cook on low for 6-8 hours or until the pork is tender.
  • Transfer roast to a serving platter. Using a slotted spoon, remove potatoes and place them around the roast on the platter. Cover platter with foil to keep the roast and potatoes warm.
  • If bay leaves are still in the crock pot, remove them. Pour juices into a small saucepan. Combine cornstarch and water until smooth; stir into the pan.
  • Bring to a boil; cook and stir for two minutes until liquid has thickened.
  • Serve gravy with roast and potatoes.

  • Pour cooking juices into a medium saucepan. Place cornstarch in a small bowl and add 3 tablespoons of beef broth. Stir until mixed. Pour into saucepan along with remaining beef broth.
  • Bring to a simmer for 2 to 3 minutes to thicken. Season to taste with salt and pepper.
  • Slice pork roast and serve with gravy.

1 large onion, sliced thinly
1 red pepper, sliced
1 orange pepper, sliced
2 tablespoons of light brown sugar
1 teaspoon of black pepper
2 cloves of garlic crushed

1/4 cup (60ml) of passata
2 tablespoons of dark soy sauce
2 tablespoons of light soy sauce
2 tablespoons of Hoisin sauce
1 tablespoon of cornstarch
2 teaspoons of sesame oil
optional: 1-2 tsp of Chinese five spice

Steps:

  • Place onions and peppers in the bottom of slow cooker.
  • Mix together the sugar, black pepper, garlic and ginger and rub this all over the pork tenderloin.
  • Place the pork tenderloin on top of the pepper and onion.
  • Mix together thoroughly the passata, soy sauce, hoisin sauce, cornstarch and sesame oil and pour this into the slow cooker.
  • Turn on the slow cooker and set low for 6-8 hours
  • When pork is cooked, remove from slow cooker, shred up pork and add back to the slow cooker and mix in all the sauce.
  • Serve with your choice of sides.
  • I served with steamed rice and sauteed shredded veg.

  • In an oven roasting bag (or grocery bag, whatever will fit pork) mix salt with warm water until dissolved. Whisk in brown sugar, vinegar, bay leaves and ice, then add pork. Brine pork in the refrigerator for 90 minutes up to 24 hours (90 minutes is long enough to work wonders!). RINSE pork very well and pat very dry.
  • Whisk together all of the Spice Mix ingredients in a small bowl. Evenly rub pork all over with spice mix; set aside.
  • Lightly grease 6 qt. or larger slow cooker. Add all of the sauce ingredients and whisk to combine; set aside.
  • Heat 2 tablespoons vegetable oil in a large cast iron skillet over medium high heat. When oil is very hot and just smoking, add pork loin (squeeze it in). Sear each side of the pork until golden, then transfer to prepared slow cooker.
