2 pounds beef stew meat, cut into 1-inch pieces
¼ cup all-purpose flour
½ teaspoon salt
½ teaspoon ground black pepper
1 clove garlic, minced
1 bay leaf
1 teaspoon paprika
1 teaspoon Worcestershire sauce
1 onion, chopped
1 ½ cups beef broth
3 potatoes, diced
4 carrots, sliced
1 stalk celery, chopped

Steps:

  • Place meat in slow cooker. In a small bowl mix together the flour, salt, and pepper; pour over meat, and stir to coat meat with flour mixture. Stir in the garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots, and celery.
  • Cover, and cook on Low setting for 10 to 12 hours, or on High setting for 4 to 6 hours.

1 1/2 lb beef stew meat
4 medium red potatoes (about 3/4 lb), cut into quarters
1/3 cup Gold Medal™ all-purpose flour
1 tablespoon spicy Cajun seasoning
1 can (14.5 oz) diced tomatoes, undrained
3 cups frozen bell pepper and onion stir-fry (from 1-lb bag)

Steps:

  • Pour marinade over beef in resealable food-storage plastic bag or glass or plastic dish; coat beef with marinade. Let stand 15 minutes.
  • Spray inside of 4- to 5-quart slow cooker with cooking spray. Place potatoes in slow cooker. Mix flour and Cajun seasoning; toss with beef and marinade, coating well. Place beef and marinade on potatoes. Add tomatoes.
  • Cover; cook on Low heat setting 7 to 8 hours.
  • Stir in stir-fry vegetables. Cover; cook on Low heat setting 15 to 30 minutes or until vegetables are tender.

3/4 pound andouille or kielbasa, sliced into 1/2-inch-thick rounds
1 red onion, sliced into wedges
2 garlic cloves, minced
2 celery stalks, coarsely chopped
1 red or green bell pepper, coarsely chopped
2 tablespoons all-purpose flour
1 (28-ounce) can diced tomatoes
1/4 teaspoon cayenne pepper
Coarse salt
1/2 pound large shrimp, peeled and deveined
2 cups frozen cut okra (from an 8-ounce package), thawed

Steps:

  • In a 5-to-6-quart slow cooker, place sausage, onion, garlic, celery, and bell pepper. Sprinkle with flour and toss to coat. Add tomatoes and their liquid, 1/2 cup water, and cayenne; season with salt. Cover and cook until vegetables are tender, 3 1/2 hours on high (or 7 hours on low). Add shrimp and okra, cover, and cook until shrimp are opaque throughout, 30 minutes (or 1 hour on low).

The diced tomatoes and green chilies, fresh basil, fresh mushrooms, and Merlot make this more than an everyday beef stew - it's a gourmet ragout. This is one of those dishes that actually tastes better the next day, after the flavors have had a chance to blend together. If possible, make ahead, refrigerate overnight, then heat and serve the next day. Serve over cooked rice. Enjoy!

½ cup all-purpose flour
1 tablespoon Cajun seasoning blend (such as Tony Chachere's®)
1 pound cubed lean beef stew meat
2 tablespoons olive oil
1 (16 ounce) package frozen stew vegetables, thawed
4 cups beef broth
1 pound fresh morel mushrooms, sliced
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL® Mild)
1 (8 ounce) can tomato sauce
½ cup chopped fresh basil
2 tablespoons garlic, minced
1 tablespoon herbes de Provence
2 bay leaves
½ cup Merlot wine
sea salt and ground black pepper to taste

Steps:

  • Combine flour and Cajun seasoning in a resealable plastic bag.
  • Pat stew meat pieces dry with paper towels; place meat, a few pieces at a time, into the bag. Seal the bag and shake several times to coat beef with seasoned flour. Set seasoned beef aside; repeat with remaining meat.
  • Heat olive oil in a large skillet over medium heat. Cook the meat in batches until browned on all sides, stirring often.
  • Place stew vegetables, beef broth, morel mushrooms, diced tomatoes with green chiles, tomato sauce, basil, garlic, herbe de Provence, and bay leaves in a large slow cooker set on High setting.
  • Stir the browned beef into the stew, cover, and cook until beef is tender, about 6 hours.
  • Reduce slow cooker setting to Low and stir in Merlot wine. Cover cooker and cook until wine is slightly reduced and flavors have blended, about 30 more minutes. Season with sea salt and black pepper.

2 lbs beef stew meat, cut into 1-inch pieces
1 1/2 teaspoons kosher salt
1 teaspoon creole seasoning
3/4 teaspoon cracked black pepper
2 tablespoons yogurt spread
1 lb button mushroom, thinly sliced
3 tablespoons all-purpose flour
3 cups beef stock, at room temperature
2 tablespoons tomato paste
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/8 teaspoon ground allspice
1 lb new potato, quartered
1 cup carrot, diced
1 cup frozen pearl onions, thawed
1/2 cup frozen green pea, thawed
1 tablespoon fresh parsley leaves, chopped

Steps:

  • Set a 12-inch saute pan over medium-high heat. Add 1 tablespoon of the olive oil to the pan and season the beef with 1 teaspoon of the salt, 1 teaspoon creole seasoning and 1/2 teaspoon of the black pepper.
  • Sear the beef (in 2 batches) in the saute pan for about 2 or 3 minutes per side.
  • Add the spread, mushrooms, flour, veal stock, tomato paste, herbs, spices, and browned meat to a slow cooker.
  • Cover the slow cooker and set the temperature to high. Cook for 1 hour.
  • Add the potatoes and carrots and continue to cook the stew for another 7 hours.
  • During the last hour of cooking, add the pearl onions and replace the lid.
  • Once the stew is cooked, stir in the peas and parsley and serve immediately.

Reduce heat, cover and simmer 20 minutes.
  • Add the carrots and the potatoes to the stew (you may have to add more water) and simmer covered 30 to 40 minutes until potatoes and carrots are cooked thoroughly.
  • In a small bowl, whisk together the flour and water until the mixture is smooth. Add slowly to the stew stirring constantly. Continue cooking uncovered 5 minutes or until meat and potatoes are tender. Stir in the browning sauce or Kitchen Bouquet. Heat thoroughly and serve over rice.
