3 pounds bone-in beef short ribs
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon canola oil
4 medium carrots, cut into 1-inch pieces
1 cup beef broth
4 fresh thyme sprigs
1 bay leaf
2 large onions, cut into 1/2-inch wedges
6 garlic cloves, minced
1 tablespoon tomato paste
2 cups dry red wine or beef broth
4 teaspoons cornstarch
3 tablespoons cold water
Salt and pepper to taste

Steps:

  • Sprinkle ribs with salt and pepper. In a large skillet, heat oil over medium heat. In batches, brown ribs on all sides; transfer to a 4- or 5-qt. slow cooker. Add carrots, broth, thyme and bay leaf to ribs., Add onions to the same skillet; cook and stir over medium heat 8-9 minutes or until tender. Add garlic and tomato paste; cook and stir 1 minute longer. Stir in wine. Bring to a boil; cook 8-10 minutes or until liquid is reduced by half. Add to slow cooker. Cook, covered, on low 6-8 hours or until meat is tender., Remove ribs and vegetables; keep warm. Transfer cooking juices to a small saucepan; skim fat. Discard thyme and bay leaf. Bring juices to a boil. In a small bowl, mix cornstarch and water until smooth; stir into cooking juices. Return to a boil; cook and stir 1-2 minutes or until thickened; press cancel. If desired, sprinkle with additional salt and pepper. Serve with ribs and vegetables.

1 onion (Sliced Thickly)
1 tbsp vegetable oil
1 tsp salt
1 tsp black pepper
1 lb Carrots (Peeled and Diced into Large Pieces)
1 8 oz tomato sauce
2 cups cooking red wine
2 tsp garlic salt
1 tsp ground thyme
1 bay leaf
1 cup beef broth
1 tbsp cornstarch
1/4 cup water

Steps:

  • Heat the vegetable oil over medium heat in a skillet.
  • Add the short ribs and onions to the pan. Season with the salt and pepper.
  • Sauté for 3-5 minutes on each side until brown.
  • Add the short ribs and onions in the crock pot.
  • Add all the other ingredients except the corn starch and water to the crock pot.
  • Cover and cook on low for 7-8 hours or on high for 3-4 hours.
  • Remove the ribs, carrots and bay leaf from the crock pot.
  • Make a corn starch slurry by dissolving the cornstarch in the water.
  • Stir the cornstarch slurry into the crock pot. Cook until gravy has thicken.
  • We recommend serving the short ribs and carrots with mashed potatoes with the gravy drizzled over the top.

Salt and Pepper
3 pcs Beef Bullion Cubes (dissolved in 3 cups warm water)
1/4 cup Worcestershire Sauce
1 1/2 teaspoons Garlic Powder
1 1/2 teaspoons Onion Powder
1 stem Rosemary
Oil for Sauteing

Steps:

  • Put the Worcestershire sauce, beef bullion cubes, and warm water in a large slow cooker.
  • Add the garlic powder and onion powder, stirring to incorporate.
  • Salt and pepper the short ribs all over.
  • In a large skillet, heat two or three tablespoons of cooking oil over medium-high heat.
  • Once the oil is hot, place the short ribs in a single layer in the pan, about two inches apart.
  • Brown the meat, turning the pieces until they are golden brown all over.
  • As the meat pieces are cooked, place them in the slow cooker and repeat with the other short ribs until they are all nicely browned and nestled in the slow cooker.

Tender cooked ribs in a delicious, rich sauce, served over creamy mashed potatoes. All cooked in just one pot!

3 Tablespoons olive oil
1 yellow onion (, diced)
3 carrots (, chopped)
8 whole beef short ribs
salt and pepper (, to taste)
1/4 cup all-purpose flour
1 cup dry red wine ((such as Cote du Rhone or Pinot Noir))
2 1/2 cups low-sodium beef broth
2 Tablespoons tomato paste
2 sprigs fresh thyme
2 sprigs fresh rosemary

Steps:

  • Preheat oven to 350 degrees F.
  • In a large dutch oven or oven safe pot with a lid, heat one tablespoon of oil over medium high heat. Add onion and carrots and cook for a few minutes, stirring constantly. Remove veggies to a plate.
  • Season the ribs with salt and pepper and coat on all sides with flour. Add 2 more tablespoons of oil to the pot and turn heat to high. Add ribs and brown on all sides, about 45 seconds per side. Remove to a plate.
  • Add the wine to deglaze the pan. Scrape the bottom of the pan to release any browned bites of flavor. Bring to a boil and cook 2 minutes.
  • Add beef broth, salt and freshly ground black pepper. Stir in tomato paste. Taste broth and add additional seasonings, if needed.
  • Add ribs, veggies, and (whole) sprigs of thyme and rosemary to the pot.
  • Cover with the lid and place into the oven. Cook at 350 degrees for 2 hours, then reduce heat to 325 degrees and cook for an additional 30 to 45 minutes. Ribs should be very tender, nearly falling off the bone.
  • Remove the pan from oven and allow rest for 20 minutes, with the lid on, before serving. Skim off any fat that has risen to the top of the liquid, before serving.
  • Serve ribs over mashed potatoes with a spoonful of gravy from the pot.
  • Store leftover short ribs in a sealed container in the refrigerator for 3-4 days depending on the freshness of your ingredients.

6 each bone-in beef short ribs
1 pinch kosher salt
1 teaspoon extra virgin olive oil
1 large Spanish onion, cut into 1/2-inch pieces
2 each celery ribs, cut into 1/2-inch pieces
2 medium (blank)s carrots, peeled, cut in half lengthwise, then cut into 1/2-inch pieces
2 garlic clove (blank)s garlic cloves, smashed
1 ½ cups tomato paste
2 cups hearty red wine, or more to taste
2 cups water
1 bunch fresh thyme, tied with kitchen string
2 leaf (blank)s bay leaves
1 (4 ounce) package Idahoan® Roasted Garlic Flavored Mashed Potatoes, prepared
2 teaspoons prepared horseradish sauce

Steps:

  • Braised Short Ribs: Season each short rib generously with salt. Coat a pot large enough to accommodate all the meat and vegetables with olive oil and bring to a high heat.
  • Add the short ribs to the pan and brown very well, about 2 to 3 minutes per side. Do not overcrowd pan. Cook in batches, if necessary.
  • Preheat the oven to 375 degrees F.
  • While the short ribs are browning, puree all the vegetables and garlic in the food processor until it forms a coarse paste.
  • When the short ribs are very brown on all sides, remove them from the pan.
  • Drain the fat, coat the bottom of same pan with fresh oil and add the pureed vegetables.
  • Season the vegetables generously with salt and brown until they are very dark and a crud has formed on the bottom of the pan, approximately 5 to 7 minutes.
  • Scrape the crud and let it reform.
  • Scrape the crud again and add the tomato paste.
  • Brown the tomato paste for 4 to 5 minutes.
  • Add the wine and scrape the bottom of the pan.
  • Lower the heat if things start to burn. Reduce the mixture by half.
  • Return the short ribs to the pan and add 2 cups water or until the water has just about covered the meat.
  • Add the thyme bundle and bay leaves.
  • Cover the pan and place in the preheated oven for 3 hours.
  • Check periodically during the cooking process and add more water, if needed.
  • Turn the ribs over halfway through the cooking time.
  • Remove lid during the last 20 minutes of cooking to let things get nice and brown and to let the sauce reduce. Serve with the braising liquid.
  • Roasted Garlic Horseradish Mashed: Blend the potatoes and horseradish together and serve with the short ribs.

Braised Short Ribs are economical cuts of meat that are full of flavor. Braising short ribs with onion, garlic, carrots, and a broth/wine sauce brings out an incredible flavor and fall-off-the-bone tenderness in this otherwise tough cut of meat.

2 TB extra virgin olive oil
3 lbs bone-in beef short ribs (6-8 short ribs, depending on size)
1 yellow onion (sliced )
7 carrots (halved (just cut the whole carrots in half so they easily fit in the pot))
6 garlic cloves
2 TB flour (such as: all-purpose or einkorn flour)
1 cup red wine (any red wine works here)
1 cup chicken broth (or beef broth/stock)
2-3 fresh rosemary sprigs
1/2-1 tsp salt
black pepper

Steps:

  • Preheat the oven to 325F. Sprinkle the short ribs with salt (all sides).
  • Heat a 3.5 or 5 quart Dutch oven or braiser pot over high heat. Add the olive oil. (I use this Dutch oven.)
  • Once hot, add the short ribs (fat side down) and brown on two sides for 4-5 minutes (on each side). Depending on your Dutch oven size, you may need to work in two batches. Once the short ribs have browned, set aside on a plate.
  • Drain the excess fat from the Dutch oven, leaving behind about 1 tablespoon of fat.
  • Over medium-high heat, add the onions and carrots and sprinkle with a pinch of salt. Cook the veggies for 5 minutes, stirring frequently.
  • Sprinkle the flour over the veggies, stirring to coat.
  • Add the red wine and broth/stock. Stir to dissolve the flour in the liquid and allow the liquid to reach a lively simmer.
  • Add the short ribs to the veggies and liquid (they shouldn't be submerged, just nestled in). And tuck the rosemary sprigs in the liquid, around the short ribs and veggie. Add the 1/2 teaspoon of salt and a few turns of fresh pepper.
  • Once the ingredients reach a slight boil/lively simmer, place the lid on the Dutch oven. Place the pot in the oven and braise the short ribs and veggies, covered, for 2 1/2 hours.
  • After 2 1/2 hours, remove the short ribs from the oven. The meat should easily fall off the bone and be fork tender.
  • Serve the braised short ribs (and onions and carrots and juice) over mashed potatoes or polenta, or with a side of roasted sweet potatoes.
