1 tablespoon oil
1 lb beef stewing meat
1 small onion (finely diced)
2 teaspoons minced garlic
1 teaspoon salt
1 teaspoon Italian seasoning
1/4 teaspoon black pepper
3 large carrots (peeled and chopped)
2 ribs celery (chopped)
1/2 cup pearl or pot barley (rinsed)
2 tablespoons tomato paste
2 bay leaves
4 cups low sodium beef broth
fresh parsley for serving

Steps:

  • Heat a large pan over medium-high heat. Add oil and let heat 1 minute.
  • Brown meat in batches (allowing space around each piece) medium-high heat. Remove from pan and place in a 4-6 quart slow cooker.
  • Add onions to the saute pan and cook over medium heat until translucent -- they will pick up all the brown bits left by the meat! Stir in garlic, salt, Italian seasoning and pepper and cook 1 minute.
  • Add the onions to the slow cooker on top of the beef, along with the carrots, celery, barley, tomato paste and bay leaves. Stir well, and then stir in the beef broth.
  • Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until vegetables and barley are tender.
  • Stir in fresh parsley as desired and season to taste. Serve.

1 onion
½ cup pearl barley
14 ½ ounce canned diced tomatoes (with juice)
1 large potato (cubed or sweet potato)
1 carrot (chopped)
2 ribs celery (chopped)
1 cup frozen corn (defrosted)
1 green bell pepper (chopped)
1 teaspoon garlic powder
1 teaspoon Italian seasoning
½ teaspoon smoked paprika
1 bay leaf
2 tablespoons balsamic vinegar
1 tablespoon Worcestershire sauce
8 cups beef broth (or vegetable broth)
2 tablespoons fresh parsley (chopped)

Steps:

  • Heat butter in a medium pan and cook onion until it is slightly tender, 2-3 minutes.

2 pounds boneless beef chuck roast, cut into 1" cubes
kosher salt
freshly ground black pepper
8 ounces mushrooms, cut into thin slices
8 large carrots, peeled and sliced diagonally into 1/2" pieces
6 large cloves garlic, minced
4 medium-large yellow potatoes, peeled and cut into 1" cubes
1 large yellow onion, chopped
6 cup low sodium beef broth
1 cup dry red wine
1/4 cup tomato paste
1 tablespoon Dijon mustard
1 teaspoon dried thyme
3/4 cup pearl barley
1 bay leaf
chopped fresh parsley

Steps:

  • Sprinkle beef fairly generously with kosher salt and pepper. If you own this awesome slow cooker, where you can brown meat right in the slow cooker - add the oil to the slow cooker and then brown the beef right in the slow cooker, searing beef on all sides. Otherwise use a large skillet over medium-high heat to heat the oil and then brown the beef. Drain off fat. If using a skillet, transfer beef to slow cooker. You will need a large slow cooker for this recipe, as it makes a big quantity (ours is a 7-qt. size).
  • Add mushrooms, carrots, garlic, potatoes, onion, beef broth, wine, tomato paste, mustard, and thyme, and stir well to incorporate. Then stir in barley and add the bay leaf. Cover and cook on high for 4 hours. Then turn heat to low and cook for 2 hours more, or until beef is tender. Serve hot, with fresh parsley sprinkled over the top. A good, crusty bread for dipping is always welcome.

½ cup barley
1 bay leaf
2 tablespoons oil

1 medium yellow or sweet onion, peeled and diced
2 ribs celery, sliced in half lengthwise, then cut into 1/2-1 inch pieces

2 Tbsp tomato paste
2 Tbsp better than bouillon beef base ((optional but recommended))
2 tsp Worcestershire sauce
1/2 tsp kosher salt

What a treat to come home from work and have this savory soup ready to eat. It's a nice traditional beef soup with old-fashioned goodness.

1 pound beef top round steak, cut into 1/2-inch cubes
1 can (14-1/2 ounces) no-salt-added whole tomatoes, undrained
3 cups water
2 medium potatoes, peeled and cubed
2 medium onions, diced
3 celery ribs, sliced
2 carrots, sliced
3 reduced-sodium beef bouillon cubes
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon salt-free seasoning blend
1/4 teaspoon pepper
1-1/2 cups frozen mixed vegetables

Steps:

  • In a 5-qt. slow cooker, combine the first 12 ingredients. Cover and cook on high for 6 hours. Add vegetables; cover and cook on high 2 hours longer or until the meat and vegetables are tender.

This hearty beef and barley soup can be made stove top or slow cooker! It has a rich meaty flavor and takes only a few minutes to get into the pot!

1 tablespoon olive oil
1 1/2 pounds cubed stew meat - I used chuck roast
1 cup onion - diced
1 cup carrots - diced
1 cup mushrooms - sliced
3 cloves garlic - minced
1/3 cup tomato paste
6 cups beef broth
1 tablespoon Worcestershire sauce
2/3 cup uncooked pearl barley
salt and pepper to taste

Steps:

  • In large skillet over medium heat, heat the olive oil until shimmery but not smoking. About a minute.
  • Sprinkle beef pieces with salt and pepper. Add to hot skillet leaving undisturbed for 2-3 minutes until a brown crust forms. Turn beef over and sear the other side. (you may have to do this in two batches depending on the size of your pan).
  • Add seared beef to slow cooker. (or large dutch oven or soup pot if cooking stove top).
  • Chop carrots, onions, mushrooms and garlic. Add to pot with beef.
  • Add tomato paste, barley and beef broth and Worcestershire sauce to beef and veggie mixture. Top with a sprinkle of salt and pepper. (You can finish with seasoning when soup is done.)
  • Cook in slow cooker for 4-5 hours on low or 2-3 hours on high. If using stove top method, simmer 2-3 hours, or until beef is tender and veggies are cooked.
  • Taste for seasoning and serve!

2/3 cup frozen whole kernel corn (from 1-pound bag)
1 1/2 pounds beef stew meat
1/2 cup chopped bell pepper
1 large onion, chopped (1 cup)
2/3 cup uncooked barley
1 1/2 cups water
1 teaspoon salt
1 teaspoon chopped fresh or 1/2 teaspoon dried thyme leaves
1/4 teaspoon pepper
1 carton (32 ounces) Progresso™ beef flavored broth
2 cans (14.5 ounces each) diced tomatoes with roasted garlic, undrained
1 can (8 ounces) tomato sauce

Steps:

  • Spray 5- to 6-quart slow cooker with cooking spray. Rinse green beans and corn with cold water to separate and partially thaw. Mix green beans, corn and remaining ingredients in cooker.
  • Cover and cook on Low heat setting 8 to 9 hours.
