Slow Cooker Acorn Squash Stuffed With Sausage And Apples image

1 pound sausage meat
1 small onion, finely chopped
2 apples, cored and chopped
1/2 teaspoon oregano
salt, to taste
2 acorn squash, halved, seeds removed
1/4 cup water

Steps:

  • Brown sausage meat well and break into small pieces. Drain well. Combine meat with onion, apples, oregano, and salt. Generously fill each squash half with the mixture and arrange halves in the slow cooker in staggered layers. Pour about 1/4 cup water into the bottom of a slow cooker. Cover and cook on low for 3-4 hours, until squash is tender. Serve at once with hot buttered rice.

2 medium acorn squash
1 cup vegetable or chicken stock
2 tablespoons apple cider vinegar
2 tablespoons olive oil
2 teaspoons fresh thyme leaves, plus 4 sprigs
Kosher salt and freshly ground black pepper
4 tablespoons (1/2 stick) butter

Steps:

  • Cut each acorn squash into 6 slices and remove seeds.
  • Pour the stock and cider vinegar into a 6-quart slow cooker. Add the squash slices, drizzle with the olive oil, and sprinkle with the thyme leaves and some salt and pepper.
  • Cover and cook on high for 3 to 4 hours.
  • When the squash is fork-tender, heat a small saute pan over medium-high heat and add the butter. When hot but not smoking, add the thyme sprigs--they should sizzle--and fry for about 30 seconds, until darkened but not browned. Remove the sprigs to a paper towel-lined plate and let cool slightly before shaving off the leaves. Let the brown butter in the pan cool slightly, then drizzle it over the squash. Garnish with the fried thyme leaves.

1 medium acorn squash
4 tablespoons butter
4 tablespoons honey
1 teaspoon cinnamon
1/2 cup water

Steps:

  • Cut the acorn squash in half lengthwise. Then remove the seeds and cut them in half again or even in thirds.
  • Melt the butter and mix in the honey and cinnamon. Place the wedges in your slow cooker and brush the top with the butter/honey mixture.
  • Add in the 1/2 cup water to the bottom and close the lid. Turn on high for 2 hours. Check after 2 hours to make sure it is tender. If it isn't, leave it on for another half hour. Make sure that you are checking it is just tender, not mushy!
  • I like a little caramelization on mine, so I placed it on a baking sheet and broiled it for just a few minutes. This is optional, but makes the squash so pretty!
  • That is it, you are done!! Now, sit back and enjoy. You deserve it!
