PRESSURE-COOKED MESQUITE RIBS

- Combine water, vinegar and soy sauce in a 6-qt. electric pressure cooker. Rub ribs with mesquite seasoning; add to pressure cooker. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 35 minutes. Let pressure naturally release for 10 minutes, then quick-release any remaining pressure., Remove ribs to a foil-lined baking sheet. Preheat broiler. Brush ribs with half the barbecue sauce. Broil 4-6 in. from heat until glazed. Brush with remaining barbecue sauce.

SMOKED PORK RIBS
Smoked pork ribs are the pinnacle of great barbecue. The best ribs are tender and juicy with a nice crisp bark on the outside, have a deep smoke flavor that compliments a flavorful dry rub and uses a little barbecue sauce to highlight the pork's natural flavors.

- Start by removing the silver skin from the back of the ribs by sliding your fingers or a sharp knife underneath it to get a hold of an edge and pull it off.
- Mix the spices together and generously coat the ribs on both sides, rubbing the spice mixture into the pork like you mean it.
- Smoke the ribs at 225℉ for 6 to 8 hours. The lower and slower you go the better the ribs will be.
- The ribs are done when the meat easily pulls away from the bone.
- To finish the ribs use the flip, fire, and paint method to sear the sauce onto the outside of the ribs without burning it or drying them out.
- Place the ribs on a medium-high grill, using a grill brush lightly paint the BBQ sauce across the ribs. Once the sauce is on, flip the ribs over and paint the other side, cooking them for 2 to 3 minutes a side before flipping them over and repeating the process three times for each side.
- Take the ribs off the grill and let them rest for a few minutes before slicing.
- To serve the ribs, slice them in ones or twos along the bone, and serve with a good barbecue sauce.

LOW & SLOW OVEN BAKED RIBS - SUPER SIMPLE!
This is truly the ONLY rib recipe you will ever need. Ribs simply don't get any better than this! You'll need a fork and knife to eat these, as they will FALL OFF THE BONE. . .tastier than you can imagine. And they couldn't be easier, just throw them in the oven and you are good to go. . .just make sure you have some of your favorite BBQ sauce on hand!

- Preheat oven to 225 degrees.
- Season your ribs with Dale's marinade, your favorite rib rub, grill seasoning, or simply salt and pepper.
- Place ribs, meat side down, in baking dishes.
- Cover the baking dishes with aluminum foil and place in the oven.
- If you are using small baby back ribs, take out after 3.5 hours. If you are using regular baby back or St. Louis style ribs, then take out after 4 hours.
- Drain off the drippings. Flip the ribs over using two spatulas (and an extra set of hands if you have them) so the meat side is up. Be careful, as they may be so tender they fall apart.
- Put a layer of BBQ sauce on the ribs and return to the oven uncovered for an additional 20-30 minutes.
- Remove from oven and serve them up with a side of potato salad and some baked beans.
SLOW COOKER BABY BACK RIBS
These are the best I've had, short of the actual grilling method of course! This is a very simple recipe that I came up with a few years ago. It's not rocket science, just ribs cooked in the slow cooker and finished in the oven. This is what I do when I want ribs during the week and have to work all day. I'm eating them within a half-hour of getting home, and they turn out perfect every time!

Steps:
- Season ribs with salt and pepper.
- Pour water into slow cooker. Layer the ribs into the slow cooker. Top the ribs with onion and garlic.
- Cook on High for 4 hours (or Low for 8 hours).
- Preheat oven to 375 degrees F (190 degrees C).
- Transfer ribs to a baking sheet. Discard onion and garlic. Coat ribs with barbeque sauce.
- Bake in preheated oven until the sauce caramelizes and sticks to the meat, 10 to 15 minutes.
