Greek Slow Cooker Lemon Chicken and Potatoes image

An easy and hearty slow cooker lemon chicken and potato recipe! So tender and full of bright flavors. Perfect for busy weekdays. For one more veggie add in some fresh asparagus near the last 20 - 30 minutes of cooking.

2 lbs yellow potatoes, (cut into large chunks (about 2-inches))
1/2 medium yellow onion, (cut into chunks)
5 cloves garlic, (minced)
2 1/2 tsp dried oregano
1 tsp dried basil
1 tsp dried rosemary, (crushed)
Salt and freshly ground black pepper
3 lbs. bone-in, skin-on chicken thighs, (trimmed of excess skin)
1 1/2 Tbsp olive oil
1/2 cup chicken broth
3 1/2 Tbsp fresh lemon juice
2 tsp lemon zest, (divided)
3 Tbsp fresh parsley

Steps:

  • Place potatoes and onions in an even layer in a 6-quart slow cooker. Pour in chicken broth. Sprinkle with half the garlic, half the oregano, half the basil and half the rosemary then season with salt and pepper.
  • Heat oil in a large heavy bottomed pot over medium-high heat. Working in two batches, dab skin side of half the chicken thighs dry with paper towels, season with salt and pepper then sear in pot, skin side down, until golden brown, about 4 minutes. Transfer chicken to slow cooker over potato layer. Repeat with remaining thighs.
  • Slowly and evenly pour lemon juice over chicken thighs, then sprinkle in remaining half the garlic, oregano, rosemary and basil over chicken. Sprinkle 1 tsp lemon zest over chicken (reserve remaining 1 tsp in a container in refrigerator until ready to serve).
  • Cover and cook on low heat 5 1/2 - 7 hours. Serve warm spooning some of the slow cooker juices over each serving, sprinkle with fresh parsley and remaining 1 tsp lemon zest.

Sometimes, when I'm busy preparing rest, I even ask Vishal to put everything in slow cooker. It is THAT simple! You know what I mean? ;) Lemon Potatoes and Preserved Lemons (Two in One Recipe!)There is one more delicious (secret) benefit of making Greek Lemon Potatoes because this recipe is two-in-one! When potatoes are roasting in slow cooker, thick cut lemon slices cook with them... slowly concentrating in flavor... almost like Preserved Seasoned Lemons! 2 lbs Potatoes, baby rainbow potatoes
1.5 tbsp Olive Oil
1 tsp Oregano
1/2 tsp Salt and Black Pepper, adjust per taste
1/2 tsp Garlic Powder
3-4 Sprigs Thyme, or fresh oregano
4-5 tbsp Parsley, fresh, fine chopped
3 Lemon, or Meyer lemons
1 tbsp Unsalted Butter

Steps:

  • Clean and scrub potatoes under running water until clean and dirt free. Slice 2 and half lemons in thick round slices, remove seeds, and set aside. Also, zest 1 remaining lemon to yield 1 tsp lemon zest. Cut this lemon in half to use the juice.
  • In a 4-6 quart slow cooker, add olive oil and use a brush to coat all sides so that potatoes does not stick while cooking. Arrange half of lemon slices at the bottom, add potatoes and remaining lemon slices. Drizzle juice of one lemon. Sprinkle dried oregano, reserved lemon zest, fresh thyme sprigs, salt, black pepper, and garlic powder on top. Cover and cook on slow for 6 hours or on high for 2.5 hours or until potatoes are knife tender.
  • Just before serving, fish out thyme sprigs and discard. Add in butter and chopped parsley, then mix everything together. Transfer lemon slices in a separate bowl. Transfer potatoes on a large platter and serve!

2 lb boneless, skinless half turkey breast (not those stuffed turkey breast rolls.)
1.5 lbs potatoes
1/2 tsp. garlic powder
1/2 tsp. paprika
Salt and pepper
1/4 cup butter, melted
3 tbsp. freshly squeezed lemon juice
2 tsp. lemon zest
1 tbsp. freshly chopped dill + more for garnish

Steps:

  • Place potatoes onto a microwave safe plate and prick them a few times so they don't explode. Microwave for 5 minutes.
  • Combine all sauce ingredients and mix until blended.
  • Place turkey breast into a 6-quart slow cooker.
  • Pour sauce over potatoes and stir until coated. Dump potatoes over turkey, pushing them off to the side to expose the meat.
  • Combine garlic powder, paprika, salt, and pepper. Sprinkle over turkey and potatoes.
  • Cover and cook on low for 3-4 hours, or until internal temperature reaches 160F.
  • Remove turkey, cover, and allow to rest for 10 minutes. Slice and serve with additional dill if desired!

  • Turn your stove to medium high heat and heat a pan for a few minutes. While it’s heating up pat your chicken dry with some paper towels. Add in 1 Tbsp of olive oil. Place each piece of chicken into the bottom of the pan. Let the chicken sit there and brown for 5 minutes. Using tongs turn the chicken over and brown for 5 minutes on the other side.
