1 smoked ham hock
1 quart chicken stock
1 quart beef broth
1 bay leaf
1 tsp. dried thyme
1/2 tsp. black pepper
1/4 tsp. cayenne (or to taste)
1 cup diced carrots
2 cups diced onions
1 cup diced celery
2 cups dry lentils
Salt (to taste)
Garnish: ​ fresh parsley

Steps:

  • Add the beef broth, chicken stock , dried thyme, black pepper, bay leaf , cayenne, and ham hock into a soup pot and bring to a simmer. Cover and simmer on low for 1 1/2 hours. Add the onions, celery, and carrots and simmer covered for another 30 minutes.
  • Add the lentils and simmer covered for another 30 minutes. Remove cover and skim off any excess fat from the surface. Continue to simmer another 15 to 20 minutes uncovered, until the lentils are tender and the pork is falling off the bone. Taste for salt, adjust seasoning, and serve with chopped fresh parsley.

This hearty and delicious ham and lentil soup can be made on the stove top or in a slow cooker or instant pot!

2 tablespoons olive oil
2 onions (, diced)
5 carrots (, sliced)
2 cloves garlic (, minced)
1 meaty ham bone or ham hock
1 lb lentils ((453 grams))
32 oz can tomato sauce ((907 grams))
6 cups vegetable broth or water ((1.25-1.5 liters))
2 bay leaves
2 teaspoons coarse salt (, plus more to taste)
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 teaspoon paprika
Approximately 2 cups cooked ham pieces

Steps:

  • In a large pot over medium low heat, add oil, onions and carrots. Cook till veggies are softened, about 5 minutes. Add garlic and cook 1 minute more.
  • Add ham bone, lentils, tomato sauce, vegetable broth or water, bay leaves, salt, pepper, cumin, and paprika.
  • Bring to a boil and simmer on the stove for 2-3 hours, stirring occasionally, until lentils are softened.
  • Remove ham bone and cut off any meaty pieces and add them back in. Add additional cooked ham as desired. Taste and add more seasonings as needed.
  • In a skillet set over medium low heat, add oil, onions and carrots. Cook till veggies are softened, about 5 minutes. Add garlic and cook 1 minute more.
  • To a 6-quart or larger slow cooker, add onion mixture, ham bone, lentils, tomato sauce, and enough vegetable broth or water to fill slow cooker. Add bay leaves, salt, pepper, cumin, and paprika.
  • Cover with lid and cook on high for 4-5 hours or low for 6-8 hours.
  • Remove ham bone and cut off any meaty pieces and add them back in. Add additional cooked ham as desired. Taste and add more seasonings as needed.
  • In a 6-quart or larger pressure cooker, turn Sauté function to medium. Add oil, onions and carrots. Cook till veggies are softened, about 5 minutes. Add garlic and cook 1 minute more.
  • Add ham bone, lentils, tomato sauce, enough vegetable broth or water to reach "Fill" line, bay leaves, salt, pepper, cumin, and paprika.
  • Cook at high pressure for 35 minutes. Use natural release or quick release (I've done both).
  • Remove ham bone and cut off any meaty pieces and add them back in. Add additional cooked ham as desired. Taste and add more seasonings as needed.

2 onions (diced)
3 stalks celery (diced)
3 carrots (sliced)
2 tablespoons minced garlic
8 cups water
1 meaty ham bone
1 pound red lentils
2 tablespoons fresh thyme
2 bay leaves
1 tablespoon tomato paste
1 ½ teaspoons black pepper (adjust to taste)
¼ teaspoon cayenne
Salt (to taste)
Pepper (to taste)

Steps:

  • Press the sauté button on the Instant Pot, and add the oil, onions, celery, carrots and garlic to the pot. Stir-fry for 5 minutes. (This is an optional step. You can dump everything in at once if you want).
  • Add the remaining ingredients to the pot.
  • Secure the lid, close the pressure valve and cook for 35 minutes at high pressure.
  • Allow the pressure to release naturally.
  • Remove the ham bone from the pot. Once cool enough to handle, remove the meat from the bone and put it back in the pot.
  • Serve the soup with fried pieces of chopped ham (make sure you do this! It takes the soup to another level!).
  • Add everything to the slow cooker and cook on low for 8 hours.

1 medium potato (about 150g)
1 small neep/swede (about 350g)
1 large carrot (about 230g)
1 leek (about 200g)
1 onion (about 200g)
1.5 litres of ham stock *see notes
30g butter or alternative (2 tbsp)
Salt and pepper
1 ham hock/gammon *optional see notes

Steps:

  • Finely chop the onion and leek and set aside, then chop the carrot, potato, and neep into small cubes, size dependent on how chunky you'd like the soup.
  • Heat the pot and add the butter or butter alternative. Add the onions and leek and cook for about 5 minutes. Don't allow the onion to brown.
  • Rinse the red lentils in cold water. There is no need to soak them.
  • Add the rest of the vegetables and cook for a couple of minutes, then add the stock and lentils.
  • Bring to a boil then turn down to simmer for 40 minutes. You may need to top up with a little extra water if the soup gets too thick.
  • Serve with bannocks, crusty bread, or oatcakes.

6 sprigs of fresh thyme
2 quarts chicken stock
3 to 4 smoked ham hocks
1 pound orange lentils
2 tablespoons chopped parsley

Steps:

  • In a large saucepan, over medium heat, add the oil. When the oil is hot, add the onions, celery, and carrots. Season with salt and pepper. Saute for 4 minutes. Add the garlic, bay leaves and thyme. Saute for 1 minute. Add the ham hocks and stock. Bring the liquid to a boil, reduce the heat to medium-low and cook about 1 hour, or until the hocks are tender. Add the lentils and continue cook for 25 to 30 minutes or until the lentils are tender. Remove from the heat and stir in the parsley. Reseason with salt and pepper if needed. Remove the ham hocks and remove the meat. Add the ham back into the soup. Ladle the soup into individual serving bowls and serve with crusty bread.
