An easy recipe for French Dip Sandwiches made in the slow cooker or Instant Pot. Tender beef, caramelized onions and melted cheese with au jus on the side for dipping.

Provided by Allison - Celebrating Sweets

Categories     Main dish

Time 5h25m

Number Of Ingredients 10

2-3 pound beef chuck roast or rump roast
3 cups low sodium beef broth
1/4 cup worcestershire sauce
2 tablespoons extra virgin olive oil
2 yellow onions (quartered and thinly sliced)
3 cloves of garlic (minced)
1 bay leaf
salt/pepper
4-6 rolls (nothing too soft or it will fall apart once dipped)
8-12 slices cheese (provolone, swiss, havarti or monterey jack)

Steps:

  • Liberally salt and pepper your roast.
  • In a large glass measuring cup, combine the beef broth and worcestershire sauce and set aside.
  • In a large cast iron skillet, dutch oven or in your Instant Pot in sauté mode, heat oil on medium-high heat, add the meat and sear on all sides until each side has a nice brown crust formed. Transfer meat into your slow cooker (if using) OR remove the meat from your Instant Pot and continue.
  • Reduce the heat to medium, and in the same pot you browned the meat in, add the sliced onions and cook for 5 minutes, adding more oil if necessary. Add the chopped garlic and cook for an additional minute or two. Pour a couple tablespoons of the beef broth mixture into the pot with the onions and using a wooden spoon, scrape up all the browned bits from the bottom of the pan (this will add lots of flavor).

SLOW COOKER FRENCH DIP

Slow Cooker French Dip image

Don't like sweet peppers? In their place, try a sprig of rosemary for more flavor. I've not added salt for fear some would think it too salty, but my preference is to salt lightly. The roast and juices are perfect for a New Orleans-style "roast beef on French". Great for football parties, etc. Can be made ahead, frozen and rewarmed.

SLOW COOKED FRENCH DIP

Slow Cooked French Dip image

Provided by Aaron McCargo Jr.

Time 4h15m

Yield 4 servings

Number Of Ingredients 12

1 beef chuck roast (about 2 1/2-pounds), trimmed of excess fat
Kosher salt and freshly ground black pepper
Olive oil, for searing
2 medium onions, chopped
8 cloves garlic
1 bay leaf
3 tablespoons Worcestershire sauce
2 tablespoons tomato paste
Few dashes Thai hot sauce, optional
2 cups onion or beef broth
French bread, sliced lengthwise, for serving
Soft herb-flavored cheese, for serving (recommended: Boursin)

Steps:

  • Special equipment: stoneware slow cooker
  • Cook's Note: If you do not have a stoneware slow cooker that doubles as both a saute pan and Dutch oven, saute everything in a pan, then place into the slow cooker to cook.
  • Sprinkle the beef with salt and pepper. Heat the oil in the sleeve to the slow cooker on the stove over medium-high heat. Add the beef and sear until brown on all sides. Add the onions, garlic, bay leaf, Worcestershire sauce, tomato paste, Thai hot sauce and broth. Place the sleeve in the slow cooker and turn the slow cooker to its lowest setting. Cover and cook on low for 4 hours, until the meat begins to fall apart with the pull of a fork.
  • Remove the meat from the slow cooker and slice the beef into 1/4- inch slices or shred it, depending on your preference. Ladle off the fat from the top of the jus and discard. Reserve the jus from the pot. Slather both sides of the French bread with the cheese and top with some of the beef and the onions from the pot. Serve with a side bowl of the jus.

EASY SLOW COOKER FRENCH DIP

Easy Slow Cooker French Dip image

French Dip cooked in your slow cooker for the perfect savory roast beef!**This recipe will give you about 6-8 sandwiches, depending on how much meat you put in each sandwich.

Provided by Beth, The Butcher's Wife

Categories     Main Course

Number Of Ingredients 8

2 lbs. thin sliced Roast Beef (see notes)
2 (1 ounce each) packets Brown Gravy Mix (*I prefer McCormick Brand - IGNORE THE PACKET INSTRUCTIONS)
2 (1 ounce each) packets Au Jus Sauce Mix (*I prefer McCormick Brand - IGNORE THE PACKET INSTRUCTIONS)
5 cups cold water
1 large yellow onion, cut in half, and sliced thin (OPTIONAL) (see notes)
6 to 8 Hoagie or Submarine Rolls/Buns
Provolone or Swiss Cheese, sliced (*or any cheese of your choice)
butter, for spreading on the buns for serving (optional)

Steps:

  • In a large bowl, or in your slow cooker, add your cold water and gravy packets and whisk it together so there are no lumps. Pour the sauce into your slow cooker if you did not mix in your slow cooker.**Ignore the packet instructions for adding water!!! Follow this recipe! There will be extra sauce/liquid after cooking, you can use this extra au jus for dipping!
  • Add your roast beef to the slow cooker. Separate each slice of roast beef as you add it to the slow cooker so it will cook and heat evenly.**If you have a smaller slow cooker, it will look super full of meat. After adding all of the roast beef, press the meat in to the gravy mixture so it is mostly covered. The meat shrinks a bit and settles in the sauce as it cooks!
  • Add your sliced onion to the meat and gravy/sauce if you are adding onions. If adding peppers add them as well.**If you are adding mushrooms, wait and add them to the slow cooker the last 5 minutes of cooking time.
  • The meat just needs heated through and given time to soak up the savory flavor of the gravy and au jus. Cook the roast beef on low for 4-6 hours. (Mine never needs 6 hours and is always done after 4 hours or less). Or on high for 2-3 hours. Using tongs, gently stir the meat half way through cooking if you can. (Not super important but if you can, do it!)
  • When you are ready to eat, set your oven to BROIL at 450°. Slice your rolls in half. Spread some butter on each half of the roll and top with your cheese ( I always use at least 2 slices). Let the rolls broil for a few minutes until the cheese is melted to your liking. Watch them closely so they don't burn!**This is optional. You do not have to broil your buns in the oven to melt the cheese! You can just slice your buns, add the cheese and top it with the roast beef!
  • Once the cheese is melted, add the meat and onions (optional) to each sandwich. Get a small dish of the au jus sauce for dipping if desired!
  • This French Dip can be stored in an airtight container in your fridge for about 3 days and can be reheated in your microwave!

  • In a small bowl, stir together the olive oil, brown sugar, salt, cumin, paprika, pepper, and garlic until a paste forms. Rub the paste onto both sides of the steak, using all the mixture. Place the onion slices in a 5- to 6-quart slow cooker and top with the steak. It’ll probably be necessary to cut the steak into chunks to fit the slow cooker. Pour in the beer and soy sauce and add the bay leaf and thyme. Cover and cook on LOW until the steak is tender, 7 to 8 hours. The steak steak will be more sliceable around 7 hours and more falling apart around 8 hours.
  • Transfer the steak and onions to a platter, reserving the cooking liquid in the slow cooker. Cover the steak and onions with aluminum foil to keep warm.
  • Strain the reserved cooking liquid into a large liquid measuring cup, discarding the solids. Note how much cooking liquid you have. Transfer it to a medium saucepan over medium heat and bring to a simmer. If you have less than 2 cups liquid, immediately remove the pan from the heat. If you have more than 2 cups of liquid, simmer until the liquid reduces to about 2 cups and then remove from the heat.
