BARBECUE PINEAPPLE PULLED PORK - SLOW COOKER STYLE
I found this at mamalovesfood.com. This is what she says about it... This recipe is so simple you're going to think I'm lying. But I'm not, I swear! It's pure delicious. Sure, I still love my stand-by pulled pork recipe for something mild and easily incorporated into other dishes, but if you're looking for sweet barbecue goodness? This is the ticket!

Steps:
- - Rub pork shoulder all over with all purpose seasoning and place in slow cooker.
- - Dump can of pineapples (undrained) over pork.
- - Pour bottle of barbecue sauce over pork.
- - Lift pork a little to let the sauce get underneath.
- - Cook on high for six (6) hours or low for ten (10) hours.
- - Shred in the pot and mix with the juice.
- - Strain & serve!

- Place pork roast into a slow cooker. Combine crushed pineapple, garlic, cumin, salt, red pepper flakes, and pepper in a bowl. Pour over pork roast. Cover slow cooker.
- Cook on Low until pork roast is cooked through, about 8 hours. Remove pork roast from slow cooker, cut off any fat, and shred the meat using 2 forks. Return meat to the slow cooker and mix with the juices.

SLOW COOCKER BBQ PINEAPPLE PORK
Recently a friend gave me her 3qt slow cooker (apparently she never used it - I don't know why since I've become a bit obsessed LOL) and I've been experimenting with a bunch of different ideas. This one turned out particularly well. A nice sweet and (a little) spicy dish that's easy to prepare the night before to pop in the slow cooker on the way out in the morning.

- In your slow cooker mix together all of the sauce ingredients.
- On the stove brown the pork cubes to seal in the juices.
- Add pork to slow cooker and mix well with the sauce.
- Take 1/4c of the juice from your pineapple (save the rest of the juice) and mix it in a bowl with the corn starch. Pour this over the pork/sauce mixture and stir until well combined.
- Top with chunks of pineapple, peppers, onion and peanuts. I don't mix it together, just let it rest on top of the pork (this will help keep the veg from getting too soggy and breaking apart). If you would rather mix it I'm sure that would work but everything will most likely break up during cooking.
- Pour remaining pineapple juice over everything.
- Cook on low for 8-10 hours, or high for 5 hours (make sure pork is cooked to 160 degrees Fahrenheit).
- Serve over white rice.
- NOTE: You can prepare this the night before and leave it in the removable part of of your slow cooker in the fridge overnight. Just put it on in the morning to have ready for dinner.

- In a small bowl, combine the salt, pepper, onion powder, cayenne, cumin, chili powder, and garlic powder.
- Rub the spice mix all over the baby back ribs.
- Drain the juice from the can of pineapple and add to the slow cooker, along with the barbecue sauce. Stir to combine.
- Add the diced pineapple and ribs to the slow cooker and cover with the sauce.
- Cover and cook on high for 4 hours. Halfway through, flip the racks of ribs so the one that was previously on the bottom is now on top. Cover with more sauce.
- Remove the ribs from the slow cooker and cut into individual pieces. Serve with the leftover sauce and pineapple chunks.

ASIAN-INSPIRED PORK MEATBALLS WITH PINEAPPLE IN THE SLOW COOKER
I'm a fan of potstickers and this pork meatball mixture makes me think of the potsticker filling. I used a small slow cooker, so you may need to adjust the liquid ingredients if yours is larger. Serve over coconut rice (I used "Easy Coconut Jasmine Rice" from Allrecipes).

- Combine ground pork, bread crumbs, egg, ginger, soy sauce, and garlic in a large bowl for the meatballs. Knead gently with your fingers to combine. Cover bowl and refrigerate for 2 hours for flavors to meld.
- Peel pineapple and cut into 3/4-inch rings. Core rings and cut each ring into 1-inch wedges (you should have about 1 1/2 cups). Add pineapples to a slow cooker.
- Roll pork mixture into 12 to 16 balls and place into the slow cooker.
- Combine water, teriyaki sauce, and soy sauce in a small bowl and pour over the meatballs. It is okay for the liquid to not completely cover the meatballs.
- Cover slow cooker and cook on Low for 4 to 6 hours, or on High for 3 hours. Remove pineapple and pork balls with a slotted spoon to a bowl.
- Stir cornstarch into the sauce, whisking until well combined. Add pineapple and meatballs back into the slow cooker and cook until sauce has thickened, about 30 minutes more. Transfer mixture to a bowl and garnish with green onions and sesame seeds.

- Trim fat from pork and pierce all over surface with a knife. Liberally season all sides with garlic salt and pepper and place in slow cooker. Pour can of pineapple tidbits and juice on top. Cover and cook on low for 8 to 10 hours.
