On my endless quest to find ways to use up our abundance of zucchini, I came up with this one today. I add 5-6 cups of yellow crookneck squash. But you can also use yellow summer squash or zucchini. Stokely's was the brand of sloppy joe sauce that I used.

1 lb ground beef or 1 lb ground turkey
1 large summer squash or 1 large crookneck yellow squash, chopped
1 medium onion, chopped
3 garlic cloves, minced
1 (15 1/2 ounce) can sloppy joe sandwich sauce
salt and pepper, to taste
8 hamburger buns

Steps:

  • In a big non-stick skillet, add ground beef. onion and garlic and brown.
  • Cook over medium-high heat for 10-12 minutes or until the beef is browned and the zucchini is tender.
  • Change heat to medium-low; add in the sloppy joe sauce; stir and cook 4-5 minutes or until heated.
  • Season with salt and pepper to taste.
  • Spoon mixture over buns and serve immediately.

I made this recipe up tonight (August 17, 2007) as an alternative to the regular sloppy joes that we all love... This was so good.... not a bite left over... We will be making these often!

2 1/2 lb ground beef
2 large onions (chopped)
2 large (about 5 to 6 pounds total) zucchini (peeled and grated)
1 Tbsp honey mustard
3 Tbsp ketchup
4 Tbsp open pit bar-b-que sauce (or favorite sauce)
1 tsp each: ground black pepper, garlic powder (or to taste)

Steps:

  • 1. Brown and crumble the ground beef in a large skillet.
  • 2. Add the chopped onion and grated zucchini. Cook until tender and well blended with the meat.
  • 3. Stir in all remaining ingredients and simmer for 5 minutes to thicken and blend flavors.
  • 4. Serve on favorite buns or rolls.

2 pounds ground beef
1 cup chopped green pepper
2/3 cup chopped onion
2 cups ketchup
2 envelopes sloppy joe mix
2 tablespoons brown sugar
1 teaspoon prepared mustard
12 hamburger buns, split

Steps:

  • In a large skillet, cook the beef, pepper and onion over medium heat until meat is no longer pink; drain. Stir in the ketchup, sloppy joe mix, brown sugar and mustard., Transfer to a 3-qt. slow cooker. Cover and cook on low for 4-5 hours or until flavors are blended. Spoon 1/2 cup onto each bun.

Add the ground round, crushed tomatoes, and Worcestershire, stir to combine, and cook for another five to six minutes. Cover the pan, lower the heat to medium- low, and cook for 20 minutes, until reduced, thick, and darker brown.
  • Preheat the oven to 425°F.Spoon the sloppy joe mixture generously into the zucchini boats, piling the mixture above the edges. Top with the vegan cheese shreds and sprinkle the breadcrumbs evenly on top of each. Bake for 35 minutes, until the zucchini is tender and the cheese is melted. Broil for three to five minutes to crisp up the top, if necessary.
