8 corn tortillas
2 tablespoons extra virgin olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon onion powder
2 tablespoons extra virgin olive oil
1 lb Italian sausage (bulk, hot)
1/4 teaspoon black pepper
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1 onion (small, chopped)
1 tablespoon garlic (chopped)
1 (24 ounce) jar Ragú® Pasta Sauce (chunky garden combination pasta sauce)
1/2 teaspoon cumin
1/4 teaspoon cinnamon
1/4 teaspoon cocoa
1/2 teaspoon soy sauce
2 avocados (medium cut into  1/4 inch cubes)
2 limes (cut into quarters)
1/2 cup cilantro (chopped)
1/2 cup queso fresco (crumbled)

Steps:

  • Seasoned Tostadas:.
  • Preheat oven to 400 degrees. Lightly brush Corn Tortillas on each side with Olive Oil and place on two baking sheets (4 on each). Season with Salt, Pepper, and Onion Powder. Bake in oven for 5 minutes, then flip the tortillas, season other side, and bake for another 5 minutes (until crispy and golden brown). Remove from oven and set aside.
  • Sloppy Jose Topping:.
  • Preheat a large frying pan. Add 1 tablespoon Olive Oil and heat for another minute. Add the Sausage, pepper, onion powder, and garlic powder and cook until nicely browned. Remove sausage from pan with a slotted spoon and set aside to drain on a paper towel.
  • Add 1 tablespoon of Olive Oil to the pan and heat. When pan is heated, add chopped onion, set heat on medium, cover and cook for 10 minutes, stirring occasionally until onions are translucent. Add chopped garlic and cook for 1 minute, stirring frequently. Return sausage to pan and mix with onion mixture. Stir in 1 24 oz jar of Ragu Garden Combination sauce. Add Cumin, Cinnamon, Cocoa, and Soy Sauce and bring to a simmer. Simmer for 15 minutes stirring occasionally.
  • To assemble: place 2 tostadas on each of 4 plates. Divide contents of pan evenly onto each tostada. Divide avocado evenly and arrange on top of meat, squeeze ¼ of lime over each each, top with crumbled queso fresco, and chopped cilantro. Serve immediately.

1 pound ground beef
1 envelope sloppy joe mix
1 cup water
1 can (8 ounces) tomato sauce
1 can (6 ounces) tomato paste
1 package (7 ounces) small shell pasta, cooked and drained
1 cup 4% cottage cheese
1/2 cup shredded cheddar cheese

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink, breaking it into crumbles; drain. Stir in the sloppy joe mix, water, tomato sauce and tomato paste; heat through. Remove from the heat; stir in pasta. , Spoon half the mixture into a greased 2-1/2-qt. baking dish. Top with cottage cheese and remaining pasta mixture. Sprinkle with cheddar cheese. , Bake, uncovered, at 350° for 30-35 minutes or until bubbly and cheese is melted.

1 pound bulk Italian sausage
1 medium sweet red pepper, chopped
1 medium onion, chopped
1-1/2 pounds lean ground beef (90% lean)
2 cans (8 ounces each ) no-salt-added tomato sauce
1 can (6 ounces) tomato paste
1 teaspoon garlic powder
1 teaspoon liquid smoke, optional
16 slices smoked mozzarella cheese (about 3/4 pound)
8 hoagie buns, split and toasted
Pickled hot cherry peppers, optional

Steps:

  • In a large skillet, cook and crumble sausage with red pepper and onion over medium-high heat until no longer pink, 5-7 minutes. Transfer to a 3- or 4-qt. slow cooker., In same pan, cook and crumble beef over medium-high heat until no longer pink, 5-7 minutes. Using a slotted spoon, add beef to slow cooker. Stir in tomato sauce, tomato paste, garlic powder and, if desired, liquid smoke. Cook, covered, on low until flavors are blended, 4-5 hours., To serve, place cheese on bun bottoms; top with meat mixture and, if desired, peppers. Close sandwiches. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.
