Steps:
- In a very large fry pan, brown hamburger meat in three batches. Once the first batch is about half way browned, add 1/3 of the onion, 1/3 of the celery and 1/3 of the flour. Once the meat is browned, move the mixture to a big soup pot and repeat with two more batches.
- Use an 8 quart soup pot. I have used a 6 quart, it works but a little tight on space.
- Once all of the ingredients are in the big soup pot, add remainder of the ingredients and simmer for at least 30 minutes. If the mixture seems dry, or needs a little punch of flavor, I add a little bit of your favorite bottled bbq sauce.
- Adjust seasonings to taste and serve on hamburger buns.

Recipe video above. Everybody loves Sloppy Joes - and they're easy to make from scratch! I like making it with crushed tomato and less ketchup, and skipping the flavoured canned tomato sauces. Ideal freezer food, and to scale up to make for gatherings. SWEETNESS: Sloppy Joes are typically quite sweet, this is less sweet than most. But if you want it with just a bit of sweetness, skip the brown sugar and add it in gradually towards the end, adjusting to taste.

Steps:
- Melt butter in a large pot over high heat.
- Ad garlic and onion, cook for 2 minutes until onion is almost translucent.
- Add capsicum and cook for 2 minutes until softened.
- Add beef and cook, breaking it up as you go, until it changes from red to brown.
- Add remaining ingredients. Mix well, then turn heat down to medium low (or low for strong stoves).
- Cover and cook for 30 minutes, stirring once or twice to make sure it doesn't catch on the base. (If in rush, cook 15 minutes without lid)
- Remove lid and give it a good stir for a minute. Mixture should be thick, not runny and saucy (see video). Adjust salt to taste.
- Toast rolls. Butter if desired (I don't).
- Pile on lots of filling, immediately top with cheese (heat should semi melt, otherwise pop under broiler/grill). Top with lid and serve immediately!

- In a Dutch oven, cook beef and green pepper over medium heat until meat is no longer pink; drain. Stir in the tomatoes, tomato sauce, tomato paste and seasonings. Bring to a boil. Reduce heat; cover and cook over low heat for 30 minutes., Cook, uncovered, 30-40 minutes longer or until thickened. Discard bay leaves. Serve 1/2 cup of meat mixture on each bun.

- Heat 1 tablespoon oil in a large skillet over medium-high heat. Add 1/3 of the beef, 1/2 cup onion, and 1 clove garlic. Season with salt and pepper. Cook until browned and crumbly, 5 to 7 minutes. Transfer to a slow cooker. Repeat twice more with remaining oil, beef, onion, garlic, salt, and pepper.
- Add Sloppy Joe sauce, celery, green pepper, brown sugar, cider vinegar, and cloves to the slow cooker. Cook on Low for at least 4 hours, adjusting seasoning to taste.

I made these for a potluck at work and they were a definite hit! One thing I didn't put in the recipe: instead of using 1 bell pepper, I usually use 1/2 cup of tri-pepper mix. It's just red, yellow and green bell peppers, already diced. Publix sells it in their produce section. It's a real time saver!

- Drain well (I just leave mine in the colander draining while I prepare the sauce).

- Brown ground beef. Drain off fat.
- Add onions and garlic powder. Cook for 5 minutes. Add tomato paste, ketchup, water, vinegar, dry mustard, pepper, and brown sugar. Mix well and simmer for 25 to 30 minutes.
- Scoop 1/3 cup onto each hamburger bun.

CROCK POT SLOPPY JOES
Steps:
- In a medium size bowl, mash together torn bread and milk. Mix in with ground beef.
- Heat oil in a large skillet over medium high heat. Add in onions and cook until softened. Add in garlic and chili powder and cook for 2 minutes. Add in ground beef mixture and cook until browned. Break up any large chunks of meat with a wooden spoon or potato masher.
- Transfer meat mixture to slow cooker. Add in tomato sauce, brown sugar, ketchup, salt and pepper. Stir to combine. Cover with lid. Cook on low for 6-7 hours or 3-5 on high.
- When done, skim off any fat that's collected with a large spoon and discard. Adjust seasoning. Serve on warm buns.
- ***This recipe can be frozen for up to 3 months.

- FINISH: Remove the lid and give the sloppy Joe filling a stir. Then, kick the heat up to medium and continue cooking for 5-7 minutes or until the mixture thickens to your liking. If at any point the mixture dries out too much, just add a small splash of water to thin it back out. Taste and adjust with additional salt as needed (it just depends on how salty your tomato sauce and ketchup are, you may not even need anymore)
- SERVE: Place a big scoop of the sloppy joe mixture on buttered and toasted buns and serve with potato chips and pickles.
