CHURCH SUPPER SLOPPY JOES FOR 60

Church Supper Sloppy Joes for 60 image

Sloppy Joe Recipe For Large Crowd, Church Cookbook Recipe.

Provided by Lea Ann Brown

Categories     Main Course Beef

Number Of Ingredients 10

8 pounds ground beef (extra lean)
1/3 cup flour
2 1/2 cups celery (diced)
2 1/2 cups onion (diced, about 2 medium onions)
1/2 cup mustard (or more to taste)
1/2 cup vinegar
1/2 cup brown sugar (light brown, or dark brown)
28 ounces catsup (3 1/2 cups)
2 cups water
60 Hamburger buns (small ones, but not slider buns)

Steps:

  • In a very large fry pan, brown hamburger meat in three batches. Once the first batch is about half way browned, add 1/3 of the onion, 1/3 of the celery and 1/3 of the flour. Once the meat is browned, move the mixture to a big soup pot and repeat with two more batches.
  • Use an 8 quart soup pot. I have used a 6 quart, it works but a little tight on space.
  • Once all of the ingredients are in the big soup pot, add remainder of the ingredients and simmer for at least 30 minutes. If the mixture seems dry, or needs a little punch of flavor, I add a little bit of your favorite bottled bbq sauce.
  • Adjust seasonings to taste and serve on hamburger buns.

SLOPPY JOES

Sloppy Joes image

Recipe video above. Everybody loves Sloppy Joes - and they're easy to make from scratch! I like making it with crushed tomato and less ketchup, and skipping the flavoured canned tomato sauces. Ideal freezer food, and to scale up to make for gatherings. SWEETNESS: Sloppy Joes are typically quite sweet, this is less sweet than most. But if you want it with just a bit of sweetness, skip the brown sugar and add it in gradually towards the end, adjusting to taste.

Time 50m

Number Of Ingredients 16

1 tbsp /15g butter
2 garlic cloves (, minced)
1 onion (, finely chopped)
1 green capsicum/bell pepper (, diced)
500 g/1lb ground beef ((mince) (Note 1))
1 tbsp Dijon mustard (OR 1 tsp dry mustard)
1.5 tbsp brown sugar
1/2 cup ketchup
400 g/14oz crushed tomato (, canned)
2 tsp Worcestershire sauce
1 tbsp tomato paste
1 beef bouillon cube (, crumbled (Note 2))
1/4 tsp black pepper
5 to 6 soft rolls ((Note 3))
Cheese slices ((optional))
Other fixing options - see Note 4

Steps:

  • Melt butter in a large pot over high heat.
  • Ad garlic and onion, cook for 2 minutes until onion is almost translucent.
  • Add capsicum and cook for 2 minutes until softened.
  • Add beef and cook, breaking it up as you go, until it changes from red to brown.
  • Add remaining ingredients. Mix well, then turn heat down to medium low (or low for strong stoves).
  • Cover and cook for 30 minutes, stirring once or twice to make sure it doesn't catch on the base. (If in rush, cook 15 minutes without lid)
  • Remove lid and give it a good stir for a minute. Mixture should be thick, not runny and saucy (see video). Adjust salt to taste.
  • Toast rolls. Butter if desired (I don't).
  • Pile on lots of filling, immediately top with cheese (heat should semi melt, otherwise pop under broiler/grill). Top with lid and serve immediately!

SLOPPY JOES FOR A CROWD

My mother-in-law created this recipe in the early 1950s. She prepared it many, many times before she was happy with the end result. Our family likes these satisfying sandwiches served with pickles and potato chips. -Sharon McKee, Denton, Texas

This is a simple and easy recipe for making Sloppy Joes for 24 or more people. Yes, I know, what kind of good Sloppy Joe recipe uses Manwich®? In this case it's used as a base (like ketchup) to make a really tasty dish. I used the best ideas of several Sloppy Joe recipes on the Allrecipes website, added my own twist, and expanded it for a crowd.

CROCK POT SLOPPY JOES FOR A CROWD

Crock Pot Sloppy Joes for a Crowd image

I made these for a potluck at work and they were a definite hit! One thing I didn't put in the recipe: instead of using 1 bell pepper, I usually use 1/2 cup of tri-pepper mix. It's just red, yellow and green bell peppers, already diced. Publix sells it in their produce section. It's a real time saver!

SLOPPY JOES TO FEED A CROWD

Sloppy Joes to Feed a Crowd image

This is a sweet tomatoey tasting sloppy joe. The recipe came from the USDA's recipe book for the Child and Adult Care Food Program. I have been using it for my daycare for a while now. Sometimes I add very tiny chopped peppers and carrots. Small enough that the kids don't know they are there.

  • MEAT: Heat the butter in a large skillet over medium-high heat. Add the beef and crumble using a wooden spoon. Allow the meat to cook for 3 minutes before adding the minced bell pepper, onions, garlic, and tomato paste and cooking for another 5 minutes.
  • SIMMER: Then, add the remaining ingredients along with ½ teaspoon of salt and ½ cup of water and allow the mixture to start bubbling, then lower the heat to low, cover with a lid and cook for 20 minutes.
  • FINISH: Remove the lid and give the sloppy Joe filling a stir. Then, kick the heat up to medium and continue cooking for 5-7 minutes or until the mixture thickens to your liking. If at any point the mixture dries out too much, just add a small splash of water to thin it back out. Taste and adjust with additional salt as needed (it just depends on how salty your tomato sauce and ketchup are, you may not even need anymore)
  • SERVE: Place a big scoop of the sloppy joe mixture on buttered and toasted buns and serve with potato chips and pickles.
